1 package (12 ounces) fresh or frozen cranberries, thawed
1 medium Gala apple, peeled and finely chopped
2/3 cup sugar or sugar substitute equivalent to 2/3 cup sugar
1/3 cup honey
2 tablespoons brown sugar
2 tablespoons frozen orange juice concentrate, thawed
1 teaspoon ground cinnamon
1 teaspoon cider vinegar
Dash ground ginger

Steps:

  • In a 1-1/2-qt. slow cooker, combine all ingredients. Cook, covered, on low 3-4 hours or until cranberries pop and mixture is slightly thickened., Transfer to a small bowl; cool slightly. Refrigerate until cold.

1 shallot or 1/2 small yellow onion (diced)
3/4 cup golden raisins
2 cinnamon sticks
5 whole cloves

Steps:

  • Combine all ingredients in a 4 qt slow cooker.
  • Turn on high and cook for 3 - 4 hours until the cranberries have burst and the apples are tender.
  • Remove the lid from the slow cooker and continue simmering until the chutney has reached desired consistency.
  • Serve hot, cold, or at room temperature.
  • Store in the refrigerator for up to 2 weeks.

I cooked this for the first time last night to take to a Thanksgiving meal we had at work. I have already had to give the recipe to others. It has a wonderful tart/sweet flavor and it is just as good served over dressing as it is served over meat.

1 lb fresh cranberries
2 1/2 cups sugar
1 cup water
1/2 teaspoon salt
1/2 teaspoon ground cinnamon

1 medium onion, chopped
1 medium tart apple, peeled and cubed
1 medium pear, peeled and cubed
1 cup raisins
1/4 cup lemon juice
1/2 cup chopped walnuts

Steps:

  • In a saucepan, combine the cranberries, sugar, water, salt, cinnamon and cloves.
  • Bring to a boil; reduce heat.
  • Simmer, uncovered, for 10 minutes.
  • Add the onion, apple and pear; cook for 5 minutes.
  • Remove from the heat; stir in raisins and lemon juice.

2/3 cup Calvados, warmed
1 1/2 cups pecan halves
1 cup sugar
1 cup fresh orange juice
12 ounces fresh cranberries
Grated zest of one orange
1 Granny Smith apple, peeled, cored and coarsely chopped
1 large navel orange, peeled, sectioned and coarsely chopped
1 pear, peeled, cored and coarsely chopped
1/2 cup dried mango or papaya, coarsely chopped
1 teaspoon ground cardamom
1/4 teaspoon cracked black pepper
1 teaspoon grated fresh ginger
Salt to taste

Steps:

  • Put raisins in a bowl, add the Calvados and set aside at least 1 hour.
  • Preheat oven to 350 degrees. Spread pecans on a baking sheet and toast 10 to 15 minutes in oven. Let cool and chop coarsely.
  • In a heavy saucepan, combine the sugar and orange juice. Bring to a boil, add the cranberries and cook over medium heat about 5 minutes, until cranberrries start to soften and pop. Add the remaining ingredients, including the raisins in Calvados and the pecans.
