Come home to a flavorful and delicious Crock Pot Chicken Curry. Throw all your ingredients into your slow cooker and enjoy a spice-filled sauce that pairs perfectly with rice!

2 - 2 1/2 pounds chicken thighs (or breasts)
3 Tablespoons curry powder
1 teaspoon turmeric powder
1/2 teaspoon ground coriander
1/2 teaspoon paprika
1/2 red pepper flakes (optional)
1 15 oz can coconut milk (lite or full fat)
1 cup chicken stock
2 cloves fresh garlic
2 Tablespoons butter (or olive oil)
4 cups white sweet potatoes (peeled and cut into 1-inch cubes)
1 medium sweet onion (cut into 1-inch pieces)
Rice (cooked)
Cilantro (chopped (optional))

Steps:

  • Place all your spices, plus coconut milk, chicken stock, and fresh garlic in your crock pot. Stir until combined.
  • Place your chicken in the crock pot as well as sweet potatoes and onions. Stir to coat with sauce. Now, add the butter.
  • Cover your slow cooker and set on low for 6-8 hours or high for 4-6 hours.
  • During the last 30 minutes of cooking, remove the chicken from the crock pot and shred it with two forks. Place chicken back into the crock pot for remaining cooking time.
  • Turn off your crock pot, mix ingredients, and let rest for about 20 minutes before serving. This will help thicken the sauce.
  • Serve over rice and a side of naan.

1 tablespoon canola oil
1 medium onion, finely chopped
4 garlic cloves, minced
3 teaspoons ground coriander
1-1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground turmeric
1/2 teaspoon cayenne pepper
2 tablespoons tomato paste
2 cans (15 ounces each) garbanzo beans or chickpeas, rinsed and drained
3 cups cubed peeled sweet potatoes (about 1 pound)
3 cups fresh cauliflower florets (about 8 ounces)
4 medium carrots, cut into 3/4-inch pieces (about 2 cups)
2 medium tomatoes, seeded and chopped
2 cups chicken broth
1 cup light coconut milk
1/2 teaspoon pepper
1/4 teaspoon salt
Minced fresh cilantro
Hot cooked brown rice
Lime wedges
Plain yogurt, optional

Steps:

  • In a large skillet, heat oil over medium heat; saute onion until soft and lightly browned, 5-7 minutes. Add garlic and spices; cook and stir 1 minute. Stir in tomato paste; cook 1 minute. Transfer to a 5- or 6-qt. slow cooker., Mash 1 can of beans until smooth; add to slow cooker. Stir in remaining beans, vegetables, broth, coconut milk, pepper and salt., Cook, covered, on low until vegetables are tender, 5-6 hours. Sprinkle with cilantro. Serve with rice, lime wedges and, if desired, yogurt.

4 cups Wheat Chex
4 cups Cheerios
3 cups pretzel sticks
1 can (12 ounces) salted peanuts
1/4 cup butter, melted
2 to 3 tablespoons grated Parmesan cheese
1 teaspoon celery salt
1/2 to 3/4 teaspoon seasoned salt

Steps:

  • In a 5-qt. slow cooker, combine cereals, pretzels and peanuts. Combine the butter, cheese, celery salt and seasoned salt; drizzle over cereal mixture and mix well. Cover and cook on low for 1 to 1-1/2 hours, stirring every 20 minutes. Serve warm or at room temperature.

This is different and the one that I made many years ago, lost the recipe and finally found it again in all places a cookbook that I have had for ever--Best Loved Slow Cooker Recipes. Great for snacking or holiday gift giving.

3 cups bite-size crispy rice cereal
2 cups o-shaped toasted oat cereal
2 cups bite size shredded whole wheat cereal
1 cup pecans
1 cup thin pretzel stick
1/2 cup butter
4 tablespoons Worcestershire sauce
1/2 teaspoon seasoning salt
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
1 dash hot pepper sauce

Steps:

  • Combine the cereals, nuts and pretzels in crock-pot.
  • Mix the melted butter with the remaining ingredients and pour over cereal mixture; tossing lightly to coat.
  • DO NOT COVER the crock-pot.
  • Cook on high for 2 hours, stirring well every 30 minutes; turn to low for 2 to 4 hours.
  • Cool completely and store in airtight container.
  • Note: I made this in my 6.5 qt Smart Pot and the 5 quart regular slow cooker, the 5 quart slow cooker cooked hot and the mix burnt. Watch this carefully while on high and adjust the time accordingly.

  • Arrange carrots in the crock pot and sprinkle with the curry powder, brown sugar, salt and pepper.
  • Pour the melted butter over the carrots and toss thoroughly to mix all ingredients.
  • Cover with lid and cook on HIGH 1 1/2 - 2 hours.

  • Place the sweet potatoes and bell peppers in the bottom of a 5-quart or larger slow cooker. Pour the water and lime juice over the top.
  • In a small bowl, combine the curry, smoked paprika, cumin, chili powder, and salt. Place the chicken thighs on a large plate or cutting board, and sprinkle both sides with about 2/3 of the spice mix. Rub to coat, then set the remain spice mixture aside.
  • Heat the olive oil in a large skillet over medium high. Once the oil is hot and shiny, add the chicken thighs and briefly pan sear on each side, just until brown— about 2 minutes for the first side and 1 minute for the second side. Place the seared chicken in the slow cooker, on top of the vegetables. Sprinkle with the remaining spice mixture. Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours, until the chicken is cooked through. It should register 165 degrees F on an instant read thermometer.
  • Remove the chicken thighs from the slow cooker and transfer to a cutting board. Once cool enough to handle, cut the chicken into bite-size pieces or shred it with two forks. Set aside.
