RAMEN SALAD

Ramen Salad image

A better, healthy version of the original Asian ramen salad with fresh ingredients. Ramen salad is a quick and easy favorite at any potluck!

Provided by Erin Clarke / Well Plated

Categories     Salad

Time 15m

Number Of Ingredients 14

1 package ramen noodles ((3 ounces))
2/3 cup sliced almonds
2 tablespoons sesame seeds
1 bag coleslaw mix ((16 ounces))
1 1/2 cups shelled frozen edamame (thawed)
1 cup shredded carrots
4 scallions (thinly sliced (both white and green parts))
1/2 cup canned mandarin orange segments in light syrup (rinsed and drained)
1/4 cup rice vinegar
3 tablespoons extra-virgin olive oil
2 tablespoons honey (substitute agave if vegan)
1 tablespoon low-sodium soy sauce
1/4 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Place a rack in the center of your oven and preheat the oven to 425 degrees F. Crumble the ramen noodles onto a baking sheet and spread them in a single layer along with the almonds. Bake for 5 minutes, remove from the oven, add the sesame seeds, and toss, then bake for 1 to 3 additional minutes until fragrant and golden. Watch closely so that the mixture does not burn. Set aside.
  • In a small bowl, briskly stir together all of the dressing ingredients: rice vinegar, olive oil, honey, soy sauce, salt, and pepper. (Alternatively, you can shake them together in a mason jar with a tight-fitting lid.)
  • In a serving bowl, toss together the coleslaw, edamame, carrots, scallions, and toasted ramen and almonds. Drizzle the dressing over the top, then toss again to combine. Sprinkle the oranges over the top, then refrigerate until ready to serve.

CRUNCHY RAMEN NOODLE SALAD

Crunchy Ramen Noodle Salad image

This delicious Crunchy Ramen Noodle Salad recipe is tossed with a simple sesame vinaigrette...and tastes absolutely delicious!

Provided by Ali

Time 10m

Number Of Ingredients 14

1 (16-ounce) bag coleslaw mix
2 (3-ounce) packages of ramen noodles*, crumbled (you will not use the seasoning packet)
1 cup shelled and cooked edamame
1 avocado, peeled, pitted and diced
1 mango, peeled, pitted, and julienned (or diced)
1/2 cup thinly-sliced almonds
1/2 cup thinly-sliced green onions (scallions)
Sesame honey vinaigrette (see ingredients below)
1/2 cup avocado oil (or vegetable oil, or any cooking oil)
1/4 cup honey (or your desired sweetener)
1/4 cup rice vinegar
2 teaspoons soy sauce
1/4 teaspoon toasted sesame oil
pinch of salt and black pepper

Steps:

  • Heat oven to 425°F. Spread the crumbled ramen noodles and sliced almonds out on a baking sheet, and stir a bit to combine. Bake for about 5 minutes, or until the almonds and noodles are slightly toasted and golden. Remove baking sheet, and give the mixture a good stir to toss. Then return it to the oven and toast for an additional 3 minutes. Keep a very close eye on the mixture so that it does not burn. Remove and set aside.
  • Add ingredients (including the vinaigrette) together in a large bowl, and toss until combined.
  • Serve immediately, or cover and refrigerate for up to 3 days. (This salad is much better eaten the first day, as the noodles lose their "crunch" the longer it sits, and the avocado may brown a bit. Still, it's perfectly edible and enjoyable even after a few days!)
  • Whisk all ingredients together until combined.

Ramen Noodle Salad image

This Ramen Noodle Salad is a family favorite side dish! Packed with flavor, this asian inspired salad is perfect as a side dish or for a potluck, picnic or party! Crunchy ramen noodles, with veggies, nuts and a yummy dressing, this salad has it all!

Provided by Janelle

Time 3h20m

Number Of Ingredients 9

1/4 cup of sliced almonds
1/2 cup olive oil
1/4 cup rice vinegar
3 Tablespoons Soy Sauce
1/2 cup sugar
1 14 ounce package prepackaged cole slaw mix
1 12 ounce package of prepackaged broccoli slaw mix (we've also done it with two broccoli slaw mixes)
2 packages of Ramen Noodles (either beef or oriental flavor, we've used both and like them equally)
1/4 cup seeded sesame seeds, sunflower seeds or raw chopped peanuts

Steps:

  • Preheat oven to 300*F.
  • Place almonds onto a prepared baking sheet and bake for 8 minutes until almonds are fragrant but not golden. Remove and set aside.
  • While almonds are baking, make dressing. Combine olive oil, vinegar, soy sauce & sugar into a medium bowl and whisk until sugar is dissolved and well mixed. Set aside.
  • In a large bowl mix together the broccoli slaw and coleslaw together.
  • Before opening the ramen noodle packages, break noodles into small pieces no bigger than 1/2 inch. Open and dump into slaw mix - reserving seasoning packets.
  • Add cooled almonds and sesame seeds to slaw mix and mix well.
  • Pour reserved seasoning packet contents into your dressing and mix again.
  • Pour entire dressing over slaw mixture and mix well.
  • Refrigerate for 3 hours or overnight. Serve chilled.

CRUNCHY RAMEN NOODLE SALAD - MAKE AHEAD

Crunchy Ramen Noodle Salad - Make Ahead image

This makes a great meatless meal, a lovely luncheon or dinner salad when topped with a grilled & sliced chicken breast. I tend to like a tangier dressing so I use less oil than vinegar. Feel free to adjust to your taste. The amount of added veggies, fruits & nuts can be increased as well. I recently discovered that by adding sugar snap peas & seedless cucumbers it has a more "Asian" flair to it. Enjoy! This can be made a day ahead and tossed with the dressing before serving. Prep time does not included grilling chicken breast or shrimp. If serving as a side salad, this will serve up 8-10+.

CRUNCHY NOODLE SALAD *AWARD WINNING*

Crunchy Noodle Salad *Award Winning* image

Asian inspired salad that EVERYONE asks me to bring, make or share. I actually had my voice on TV and won a $320 wok for this recipe! I have updated and modified it to be healthier and easier! Hope you like it! Submitted for World Tour Asian and SW catagories as it is very popular here in TX. NOTE: We never liked the 'leftover' salad as the crunchy parts got soggy except for the almonds until I got the bright idea to add the leftover salad to a tortilla and make it into a wrap. (I amaze myself sometimes! lol) I placed the tortilla/wrapper in a skillet and flipped after the first side was warmed. Laid some sliced sandwich meat -whatever you like- on the warmed side and let the new side warm. Remove from pan and add leftover salad- drain any dressing from it to get it a little drier. Roll up and serve- WOW! Try adding other stuff to it as well. We liked raisins, dried cranberries, shredded carrots, chopped celery etc... Salad recipe can also be found on: greatdayamerica.com

Time 15m

Yield 6-8 serving(s)

Number Of Ingredients 8

1 (12 ounce) coleslaw mix (or you can simply shred a head of cabbage)
2 (3 ounce) packages oriental-flavor instant ramen noodles, other flavors are good too
1 bunch green onion, chopped
4 ounces sesame seeds, toasted (optional)
4 ounces slivered almonds, toasted
1/2 cup vegetable oil (olive oil will get solid in refrigerator) or 1/2 cup sesame (olive oil will get solid in refrigerator)
1/3 cup white wine vinegar or 1/3 cup cider vinegar
1/4 cup sugar or 1/4 cup Splenda granular

Steps:

  • Place sesame and almonds on a microwave safe plate and cook until browned. About 1 minute-Watch carefully! Allow to cool.
  • Mix cabbage, sesame and almonds together in a large bowl.
  • Dressing: Mix the spice packets from the noodles with the green onions, oil, vinegar and sugar. Shake or stir until well blended.
  • Refrigerate separately until ready to serve.
  • When ready to serve:.
  • Break RAW ramen noodles into small pieces and mix into cabbage mixture. DO NOT COOK NOODLES!
  • Pour dressing over cabbage and noodles and mix well.
  • NOTE: Can be made a meal by adding some cooked shredded chicken or thawed frozen salad shrimp. Experiment!
  • Toasting the seeds and nuts brings out the flavor- You can also add the RAW noodles to the toasting step for more added flavor.
