CRUNCHY CHEERIOS®-COATED CARROT-CHEESE BALLS
Cheerios cereal takes a turn as an appetizer, with this cheese-and-veggie rich snack.

Steps:
- In medium bowl, place cheeses; let stand at room temperature about 20 minutes or until softened. Beat milk, 1 tablespoon at a time, into cheeses with electric mixer on low speed until well blended. Stir in carrots.
- Roll cheese mixture into 20 (1-inch) balls. Place on plate; cover and refrigerate at least 8 hours but no longer than 24 hours.
- Just before serving, roll cheese balls in cereal. If desired, serve on baked whole-wheat crackers.

My children loved this crunchy, sweet snack when they were growing up. I think the recipe originally came off the back of a Cheerios box, but I'm not positive.

Steps:
- Grease one 15x10" or two 9x13" pans.
- Put cereal, nuts, and raisins in a greased 4 quart bowl.
- Heat first 4 ingredients in 2 quart saucepan until it begins to bubble; cook 2 minutes longer.
- Stir in soda until foamy and pour over cereal, nuts, and raisins.
- Stir until well coated.
- Spread in prepared pans.
- Bake at 250 degrees for 15 minutes.
- Stir and let stand for 10 minutes to cool.
- Loosen from pan and cool another 30 minutes.
- Break into pieces.

- In large microwavable bowl, microwave butter and marshmallows uncovered on High about 2 minutes, stirring after each minute, until mixture is smooth. Remove from microwave.
- Immediately stir in cereal until evenly coated. Let stand about 5 minutes or until cool enough to handle.
- Meanwhile, pour sanding sugars or sprinkles into small bowls.
- Lightly spray hands with cooking spray (to prevent sticking). Using about 1/4 cupful cereal mixture for each, firmly press into 18 (about 2-inch) balls; roll each ball in sanding sugars or sprinkles. Place balls on waxed paper.
- With cookie icing, attach 3 eyeballs to each cereal ball.

- Combine cream cheese, butter, salt, pepper, cayenne, roasted red peppers, corn, and blue cheese in a mixing bowl. Stir together until evenly and thoroughly combined. Cover with plastic wrap and refrigerate until completely chilled, about 1 hour.
- Use a sorbet scoop or spoon to form tablespoon-sized balls of cheese mixture; place on a lined sheet pan. Cover and refrigerate until firm, about 1 hour. A perfect shape doesn't matter at this point since these will be rolled in the coatings to complete the process.
- Transfer chilled cheese balls into the coatings of your choice, such as almonds, chives, and bacon, and roll around to cover. Once coated, roll each briefly in your hands to achieve the final ball shape. Transfer to a plate or pan and keep chilled in the refrigerator until ready to serve.
