2 pounds Atlantic salmon fillet (whole or 4 individual pieces)
1 tablespoon olive oil
1/2 cup mayonnaise
1/3 cup grated parmesan cheese
2 teaspoons Italian seasoning
1/2 teaspoon cayenne pepper (or more)
1 teaspoon old bay seasoning
1 teaspoon lemon pepper seasoning
1/2 teaspoon smoked paprika (plus more for dusting)
1/2 teaspoon salt
1 cup Italian style croutons
fresh parsley for garnish (optional)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Rinse salmon with cold water and pat dry with paper towels. Place skin side down in a baking pan greased with olive oil.
  • In a small bowl combine the mayo, parmesan, Italian seasoning, cayenne pepper, old bay seasoning, lemon pepper, smoked paprika, and salt. Spread evenly over the salmon.
  • Crush croutons leaving some bigger pieces for the texture. This is done easily by placing croutons in a Ziploc bag and hitting it a few times with a meat mallet or use a rolling pin. Sprinkle the croutons evenly over the mayo mixture. Dust with more smoked paprika.
  • Bake for 15-20 minutes or until bread crumbs get toasty and salmon easily flakes with a fork. Garnish with parsley if desired.

1 1/2 lbs salmon (1 large fillet or 4 single serving fillets)
3 tablespoons butter, melted
1/4 teaspoon coarse salt
3/4 cup fresh white breadcrumbs (potato bread is wonderful)
1/4 cup grated parmesan-romano cheese mix
3 green onions, thinly sliced (including tops)
2 teaspoons lemon zest
1/4 teaspoon dried thyme leaves

Steps:

  • Heat oven to 375º.
  • Spray shallow baking pan with cooking spray.
  • Rinse and pat salmon dry with paper towel.
  • Place salmon in pan, brush both sides with 2 tablespoon butter.
  • Sprinkle with salt.
  • Mix bread crumbs, cheese, onions, lemon peel and thyme in small bowl with 1 tablespoon butter.
  • Press bread crumb mixture evenly on salmon top.
  • Flip and repeat ending with skin side down in pan.
  • Bake uncovered 18 minutes.

2/3 cup panko (Japanese dried bread flakes)
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
Kosher salt and freshly ground black pepper
2 tablespoons good olive oil
Four 6- to 8-ounce salmon fillets, skin on
2 tablespoons Dijon mustard
2 tablespoons vegetable oil
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees.
  • In a small bowl, mix together the panko, parsley, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Drizzle with the olive oil and stir until the crumbs are evenly coated. Set aside.
  • Place the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere.
  • Heat the vegetable oil over medium-high heat in a 12-inch cast-iron skillet or large heavy, ovenproof pan. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3 to 4 minutes, without turning, to brown the skin.
  • Transfer the pan to the hot oven for 5 to 7 minutes until the salmon is almost cooked and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5 to 10 minutes. Serve the salmon hot or at room temperature with lemon wedges.

1 cup fresh bread crumbs
Kosher salt and freshly cracked black pepper
1 tablespoon roughly chopped fresh dill
3 to 4 tablespoons butter, melted, plus 1 tablespoon
4 to 6 (6-ounce) center-cut salmon fillets

  • Preheat the oven to 400 degrees F.

cooked broccoli or spring greens , to serve

1 clove garlic, finely minced

1 side of salmon (about 1kg), skinned
lemon wedges, to serve
800g loaf of sliced white bread, crusts removed
1 garlic clove
50g wild garlic leaves
250g butter , melted
50g wild garlic leaves
8 salted anchovies
70ml extra virgin olive oil
1 lemon , zested and juiced
1 shallot , sliced
1 tsp small capers

Steps:

  • To make the crust, put the bread and garlic in a food processor and blend until you have a fine crumb, then add the wild garlic and blitz for 1 min. Once the leaves have broken down, pour in the melted butter and blend to a fine green dough. Lay one large sheet of baking parchment on your work surface, then tip the dough on top. Lay a second sheet on top and, using a rolling pin, roll the dough to the thickness of a £1 coin. Put in the fridge to firm up for about 1 hr.
  • Heat oven to 180C/160C fan/gas 3. Sprinkle the salmon with some salt and transfer to a baking sheet lined with baking parchment. Remove the crust from the fridge and cut to the same size as the salmon. Remove the parchment from either side of the crust and place on top of the fish. Roast for 20 mins or until the fish is just cooked through.
  • To make the salsa, put all the ingredients in a food processor and blend to a fine purée. Once the fish is cooked, remove from the oven and place on a board in the middle of the table, along with the salsa and a few lemon wedges.
