SOUTHERN SHRIMP AND GRITS RECIPE

Southern Shrimp and Grits Recipe image

This quick Southern shrimp and grits recipe is an easy dinner for busy weeknights or a special brunch for a slow Sunday morning!

Provided by Blair Lonergan

Categories     Breakfast     Brunch     Dinner     Lunch

Time 25m

Number Of Ingredients 14

4 cups water
1 ¼ teaspoons kosher salt
1 cup quick-cooking grits ((not instant grits))
1 cup (about 4 ounces) grated sharp cheddar cheese
2 tablespoons butter, cubed
6 slices bacon, cut into small pieces
1 large clove garlic, minced or pressed
½ cup sliced green onions ((plus extra for garnish))
1 tablespoon lemon juice
1 lb. shrimp, peeled and deveined
2 teaspoons Cajun or Creole seasoning
Kosher salt and ground black pepper, to taste
Hot sauce, to taste
Optional garnish: additional sliced green onions, chopped fresh parsley, chopped fresh rosemary, or fresh thyme leaves

Steps:

  • In a small saucepan, bring water to a boil over medium-high heat. Slowly whisk in the grits and salt. Return to a boil, then reduce the heat to medium-low. Cover and cook for about 5-7 minutes (or until thick and smooth), stirring occasionally.
  • Remove from heat. Add the cheese and butter; whisk or stir until melted and smooth.
  • While you cook the grits, fry the bacon in a large skillet over medium heat until crispy. Use a slotted spoon to remove the bacon to a paper towel-lined plate, reserving the drippings in the skillet.
  • Increase the heat to medium-high. Add the garlic, green onions, lemon juice, and shrimp to the skillet. Sprinkle with Cajun seasoning. Cook just until the shrimp are pink and opaque, about 2-4 minutes.
  • Return bacon to the skillet. Taste and season the dish with salt, pepper, and hot sauce, to taste.
  • Divide the grits among serving bowls. Top with shrimp mixture, garnish with green onions or herbs, and serve immediately.

SHRIMP AND GRITS LOUISIANA STYLE

Shrimp and Grits Louisiana Style image

Probably the best shrimp and grits recipe I have made! Easy and low ingredient count!

Provided by Amber Taylor Futch

Categories     Side Dish     Grain Side Dish Recipes     Grits

Time 40m

Yield 2

Number Of Ingredients 12

1 cup water
1 pinch salt
6 tablespoons grits
2 tablespoons olive oil
½ cup diced tasso ham
2 tablespoons diced onion
2 tablespoons diced green bell pepper
20 medium shrimp, peeled and deveined
¼ cup white wine
1 cup heavy whipping cream
salt and ground black pepper to taste
1 tablespoon chopped green onion, green parts only

Steps:

  • Bring water and 1 pinch of salt to a boil in a saucepan and slowly mix in the grits, stirring constantly. Reduce heat to low and simmer grits until tender and smooth, about 20 minutes; stir often. Set aside and keep warm.
  • Heat olive oil in a large skillet over medium-high heat; cook and stir tasso ham until crisp. Stir in onion and green bell pepper and cook until onion is translucent, about 4 minutes. Lightly stir the shrimp with the vegetables and olive oil just until pink, 30 to 45 seconds; remove shrimp from pan and set aside.
  • Pour white wine into the skillet and stir, dissolving any browned bits of food in the bottom of the skillet; slowly add the cream, reduce heat to low, and simmer until thickened, about 10 minutes. Season with salt and black pepper.
  • Divide the grits onto 2 serving plates and line the edge of each plate with 10 shrimp. Pour cream sauce over grits and sprinkle each serving with chopped green onion tops.

20-MINUTE SHRIMP AND GRITS WITH PEAS AND BUTTER SAUCE

20-Minute Shrimp and Grits with Peas and Butter Sauce image

This super-easy twist on a Southern classic can be made in no time. Frozen corn instead of peas works nicely too!

Provided by Food Network Kitchen

Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 10

3/4 cup instant grits
Kosher salt and freshly ground black pepper
5 tablespoons unsalted butter
2 tablespoons grated Parmesan
1 1/4 pounds large peeled, deveined shrimp
2 tablespoons olive oil
1/2 cup dry white wine
6 ounces frozen peas (about 1 1/2 cups)
1 cup grape tomatoes, halved
4 scallions, sliced

Steps:

  • Bring 3 cups of water to a boil in a medium covered saucepan over high heat. Uncover and slowly whisk in the grits, 1 teaspoon salt and 1/2 teaspoon pepper. Reduce the heat to medium low and cook, uncovered, stirring occasionally, until thickened, about 5 minutes. Remove from the heat, stir in 1 tablespoon of the butter and the Parmesan and season with salt and pepper. Cover to keep warm.
  • Meanwhile, sprinkle the shrimp with salt and pepper. Heat the oil in a large skillet over medium-high heat. Once the oil is hot, add the shrimp in a single layer and cook until the shrimp just start to turn bright pink on the bottom, 2 to 3 minutes. Add the wine and the peas, scraping up any browned bits on the bottom of the skillet. Bring to a simmer and cook, stirring occasionally, until the shrimp are opaque and cooked through and the peas are tender, 2 to 3 minutes (if the pan gets too dry, add water 1 tablespoon at a time). Add the tomatoes and scallions and toss with the shrimp and peas. Add the remaining 4 tablespoons butter and swirl the pan until there's a thick sauce.
  • Serve the grits on a large platter and top with the shrimp, vegetables and butter sauce.

Grits:
1 c grits
1 can coconut milk
~3/4 c water
1/2 tsp salt
zest from 1/2 of a lime
Beans:
1 can Cuban style black beans, undrained (I used Trader Joe's)
Shrimp:

1 lb. shrimp
dash of ginger
dash of paprika
dash of salt
dash of oregano
lime juice from ~1 juicy lime
Garnish options:

Prepare shrimp: Heat oil in saucepan over med-low. Add onion and sauté until caramelized, about 10 min. Remove to a bowl and cover with aluminum foil. Add shrimp to pan with additional oil. Add spices, and sauté briefly, ~2 minutes, until opaque. Deglaze pan with lime juice, scraping up bits stuck to pan. CHICAGEAUX SHRIMP AND GRITS

Chicageaux Shrimp and Grits image

"This is the first recipe I developed after moving to New Orleans," Dakari Akorede says. "In my first few weeks, I tried many variations of shrimp and grits, some good and some not so good. I wanted elements of heat but also savory notes. So I spent a month researching and developing this recipe to honor my new home."

  • In a large saucepan, combine 2 cups of chicken stock and the milk. Over medium-high heat, bring the mixture to a simmer. (You don't want to bring it to a boil and scald your milk, so be sure to keep an eye on the mixture!)
  • Reduce the heat to low, then cover and cook, stirring often to reduce clumping, until the liquid is absorbed. This will take around 35 to 40 minutes.
  • Once the liquid has been completely absorbed, add the additional cup of stock, then adjust seasonings as needed.
