STEAKS WITH CUCUMBER SAUCE
This recipe combines some of my family's favorite flavors. The tender steaks, marinated with teriyaki sauce, are accompanied by a creamy cucumber sauce seasoned with dill and chives. I've used this dish as both an appetizer and an entree. -Erika Aylward, Clinton, Michigan

- Place steaks in a shallow dish; add teriyaki sauce and turn to coat. Cover; refrigerate overnight. In a bowl, combine the cucumber, sour cream, mayonnaise, chives, dill and salt. Cover and refrigerate., Drain steaks, discarding marinade. Grill steaks, covered, over medium-hot heat for 4-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve with cucumber sauce.

- Line a fine mesh strainer with two layers of cheesecloth. Place yogurt in strainer over a bowl. Cover and refrigerate for at least four hours or overnight., Drain and discard liquid in bowl; set yogurt aside. Place cucumber in a colander over a plate; sprinkle with salt. Let stand for 15 minutes; discard liquid. , In a small bowl, whisk oil and vinegar until blended. Stir in the garlic, yogurt and cucumber.

CUCUMBER-TOMATO SAUCE
This fresh vegetable sauce can be used in place of other sauces, such as traditional spaghetti sauce. It has a sweet fresh taste to it, but is still recognizable as a tomato product. My recommended use is over pasta or with a meat product. In my opinion the sauce is relatively filling and not to be considered a light meal.

- Heat olive oil in a saucepan over medium heat. Stir in garlic, and cook for a few minutes until fragrant, then stir in the dried basil, and cook for a few seconds more. Add the tomatoes, onion powder, garlic powder, red pepper flakes, black pepper, sugar, and salt. Bring to a simmer, then stir in the red pepper and cucumber. Continue simmering and stirring occasionally until the mixture has reduced to a sauce like consistency, 10 to 15 minutes.

- Peel the cucumber with a vegetable peeler and cut it in half lengthwise. With a spoon remove the seeds. Cut the cucumber lengthwise into thin strips and then cut the strips crosswise into small dice. You should have about 1 1/4 cups.
- Combine the cucumber with the salt, sugar, pepper flakes, vinegar, oil, soy sauce, scallions and water. Set aside until time to serve the salmon patties.

CUCUMBER, YOGURT AND DILL SALAD

- Quarter the cucumber pieces and place in a mixing bowl. Add the onions and season with salt. Mix to combine as you prepare the rest of the salad. This will start to draw out moisture, which will help thin out the dressing.
- In a mixing bowl, whisk together the sour cream, vinegar, olive oil, hot sauce and garlic. Add the dill and season with salt and pepper. Pour over the cucumbers and onions and mix to combine. Let sit in the refrigerator for 2 hours. Serve!

A warm and unique cucumber side dish! If you aren't fond of dill, experiment with tarragon, parsley or any other herb of your choosing.
