¼ onion, grated
2 tablespoons white sugar

1 teaspoon kosher salt
½ teaspoon coarse ground black pepper
¼ cup apple cider vinegar

Steps:

  • Combine cucumbers, carrots, onion, sugar, coriander, salt, and black pepper together in a bowl; add vinegar and mix well.

1 large English cucumber
1 1/2 teaspoons salt
1 tablespoon chives, chopped
1 teaspoon fresh dill, chopped
1/4 cup plain low-fat yogurt

Steps:

  • Cut the cucumbers in quarters lengthwise, remove and discard the seeds.
  • Coarsely grate the cucumber and place it in a bowl add the salt and stir well.
  • Refrigerate for 2 hours then drain and rinse in a sieve, pressing to remove excess moisture.
  • Mix the chives, dill and yogurt well and add to the cucumbers, stir to mix.

1 cup carrot, shredded (250 ml)
1/2 cup red bell pepper, diced (125 ml)
1/4 cup green onion, chopped
1/4 cup roasted salted cashews (60 ml)
2 tablespoons sesame oil
1 tablespoon honey
1 tablespoon vinegar
1 teaspoon soy sauce
1/2 tablespoon sesame seeds, toasted
2 teaspoons lemon juice
1 small garlic clove, minced

Steps:

  • In a medium bowl combine cucumber, carrots, red bell pepper, and onion.
  • In another small bowl combine the ingredients for the sesame dressing and whisk together.
  • Pour dressing over cucumber mixture and chill until chilled. Add cashews just before serving and toss.

I love to serve this dish when we cook on the grill in the summertime. It's so refreshing on hot days. This was printed in a cookbooklet that I received in one of our swaps.

2 English cucumbers
1 cup thinly sliced radish
1/2 teaspoon sea salt
2 tablespoons red onions, minced
3 tablespoons cider vinegar
2 teaspoons olive oil
1 teaspoon sugar
salt & freshly ground black pepper, to taste

Steps:

  • Peel the cucumbers, halve lengthwise and scrape out the seeds.
  • Thinly slice the cucumbers on the diagonal.
  • Combine the cucumbers and radishes in a colander; toss together with the sea salt.
  • Top the vegetables with a plate that will fit inside the colander and weight the plate with a heavy item to help the veggies drain.
  • Drain the vegetables in the sink for about 20 minutes, squeeze them between paper towels to dry, then transfer to a bowl.
  • Combine the red onion, cider vinegar, olive oil and sugar.
  • Pour over the cucumber and radishes; toss to combine.
  • Season with salt and freshly ground pepper to taste and serve immediately.

2 large cucumbers, peeled and thinly sliced
1 sweet onion, thinly sliced
1 tablespoon sea salt
1 ½ cups mayonnaise, or more to taste
2 tablespoons vinegar
1 tablespoon white sugar
1 teaspoon dried dill weed
1 teaspoon garlic powder
1 teaspoon ground black pepper

Steps:

  • Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
  • Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
  • Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
  • Cover bowl with plastic wrap and refrigerate at least 2 hours.
