This recipe for daikon fettucine with tomato-basil sauce is from "The New Art of Japanese Cooking," by chef Masaharu Morimoto.

1 pound daikon
1 can (14 1/2 ounces) plum tomatoes
3 tablespoons extra-virgin olive oil
1/2 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon chopped fresh basil
Salt and freshly ground black pepper
Freshly grated Parmigiano-Reggiano cheese, for serving (optional)

Steps:

  • Using a swivel-blade vegetable peeler, remove outer skin of the daikon and discard. Continue peeling down the length of the daikon, creating long ribbons that look like fettucine noodles. Place daikon noodles in a large bowl and cover with salted water; let soak 15 to 20 minutes.
  • Meanwhile, drain tomatoes, reserving half the juice in a medium bowl. Squeeze tomatoes with your hands into the bowl of reserved juice; mash to combine. You should have about 2 cups.
  • In a medium heavy-bottomed saucepan, heat oil over medium-high heat. Add onions and garlic; cook until softened, about 3 minutes. Add tomatoes and salt. Bring to a boil and cook, stirring often, until sauce is thick, 10 to 15 minutes. Season with salt and pepper.
  • Drain daikon noodles and dry them using a kitchen towel. Gently add noodles to sauce; reduce heat to medium. Cook until noodles are just heated through, about 1 minute. Divide among 3 or 4 serving plates; serve immediately, with cheese, if desired.

300 grams Fettuccine Pasta , (Tagliatelle or any other long strand pasta)
2 tablespoons Extra Virgin Olive Oil
4 cloves Garlic , finely chopped
500 grams Tomatoes , chopped
50 grams Basil leaves , roughly torn

1/4 cup Parmigiano reggiano cheese , grated

Steps:

  • To begin making the Fettuccine Pasta Recipe In Tomato Basil Sauce, cook the fettuccine in a pot of hot boiling salted water until al-dente (just cooked). This will take about 10 - 15 minutes to get done.
  • Once cooked, drain the pasta over running water in order to stop the cooking process. Drizzle some olive oil over the pasta and toss it well.
  • In another pan, boil the tomatoes in hot water until you notice the skin is cracking. Once it done, remove from the hot water. Peel the skin of the tomatoes and puree it in a mixer grinder.
  • Heat oil in a saucepan over medium heat. Add garlic and saute for a few seconds.
  • Stir in the pureed tomatoes, chopped basil, salt and pepper to taste.
  • Bring the sauce to a roaring boil on high heat, then turn the heat to low, and simmer the sauce for about 20 minutes or until you notice the tomatoes and the basil have combined to make a thick sauce.
  • Toss the cooked fettuccine pasta with the sauce and turn the heat to high and toss well until the pasta is well coated. Check the salt and pepper and adjust to suit your taste.

By now, you've probably figured out I am very fond of visual puns. Here ribbons of Daikon, the mild oversized white Japanese radish, pose as pasta. They are tossed with a quick tomato sauce spiked with a generous amount of fresh basil. The dish is light and is best served as a first course.

1 pound daikon
Salt
1 (14 1/2-ounce) can plum tomatoes
3 tablespoons extra-virgin olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 1/2 to 2 teaspoons sugar
1 tablespoon chopped fresh basil leaves
Freshly ground black pepper

Steps:

  • With a swivel-blade vegetable peeler, remove the outer skin of the daikon. Discard the skin. Continue to peel down the length of the vegetable, removing the daikon in long, narrow ribbons, which look like noodles. Soak the "fettuccine" in a bowl of cold salted water for 15 to 20 minutes.

Stir in the basil and season with salt and pepper, to taste.
  • Drain the "noodles" and dry them on a kitchen towel. Add to the sauce and toss gently over medium heat, taking care not to break the "Daikon Fettuccine". Cook just until heated through, about 1 minute.
  • Divide among individual plates, teasing the fettuccine into mounds. Serve immediately.

3 pounds fresh plum tomatoes, blanched, peeled, seeded and quartered
3 ounces olive oil
Salt and freshly ground pepper to taste
1 pinch crushed red-pepper flakes
1 pound dry spaghetti
2 ounces extra-virgin olive oil
1 tablespoon butter
6 leaves fresh basil, shredded
2 tablespoons freshly grated Parmigiano-Reggiano cheese

Steps:

  • Blanch the tomatoes and remove the skins. Cut in half lengthwise and scoop out the seeds. Cut the tomatoes crosswise. Set aside in a bowl.
  • Heat 3 ounces olive oil in a large, deep skillet over medium-high heat until it smokes slightly. Add tomatoes, salt, pepper and crushed red pepper. Since the tomatoes will reduce and the salt will be concentrated, it is better to season initially with a lighter hand.
  • Chop the tomatoes with a potato masher until they are in fine chunks and all their liquid is released. Be sure they are chopped and crushed fine, for a semichunky sauce. Simmer for 25 minutes over medium heat.
  • While the sauce simmers, heat the water for the pasta. Cook the spaghetti in salted water about half of the way cooked. Drain, reserving some of the water.
  • Taste the sauce and adjust the seasoning if necessary. Add the pasta to the sauce and cook over medium-high heat until all the liquid is absorbed and the pasta is al dente. If the sauce is over-reduced, use the pasta cooking liquid to adjust it.
  • At the last moment, remove the pan from the heat; add the extra-virgin olive oil, butter, basil and cheese. Mix thoroughly until the pasta is an orangy color. Taste again and adjust the salt if necessary. Remove to a platter. Serve.
