CLASSIC HOT WINGS

Steps:
- Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
- Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
- Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.
SPICY AND TANGY HOT WINGS
This is my wing recipe that I've tweaked over the last 10 years to suit my specific tastes. If you don't like vinegar and cayenne; these wings will not be for you. I've never seen a middle ground with this recipe; they are either raved about or politely passed up. If you like a hotter wing experience, double the amounts of chili powder and cayenne powder. Enjoy with chunky blue cheese or ranch dressing.

- In a large bowl, mix together the red wine vinegar, malt vinegar, salad dressing, hot pepper sauce, 1 tablespoon chili powder, cayenne pepper, black pepper, garlic, oregano and horseradish.
- Heat the oil in a deep-fryer to 365 degrees F (185 degrees C). In a separate bowl, mix together the flour and 3 tablespoons of chili powder. Dredge the wings in the seasoned flour.
- Deep fry the wings for about 15 minutes, or until dark brown but not burnt. Drain briefly, then throw them into the bowl with the sauce. Stir to coat liberally. If you enjoy a hotter rather than tangy wing, liberally dash more hot pepper sauce onto the already sauce-coated wings.

- Cut chicken wings by the joint so there are flats and drums. Pat dry and season with salt and cayenne pepper.
- Heat oil to 350 degrees in a deep pan, or dutch oven. Put enough oil to come 1/2 to 3/4 way over chicken wings, about 1 quart.
- Once oil is hot enough add wings. Turn them every few minutes so they get nice and crispy all over. It should take about 10 minutes to cook through. The internal temperature should be 165.
- While the wings are cooking in a saucepan heat the hot sauce and butter until all the butter is melted. Alternatively you can heat the buffalo sauce and butter in a microwave safe bowl for 1 minute.
- Let the wings cool on a wire rack with paper towel underneath. Transfer the wings to a bowl and toss with the sauce.
- Serve with some blue cheese or ranch and celery. Eat and enjoy!
DAD'S GRILLED HOT WINGS
Spicy, hot wings are great for a crowd. Grilling makes them unique and delicious. Serve wings with celery sticks, blue cheese, and ranch dip.

- Cut wings into sections and discard tips. Season with poultry seasoning salt, garlic salt, and black pepper.
- Preheat grill for medium heat and lightly oil the grate.
- Cook wings on the grill, turning occasionally, until skin is golden brown, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Remove wings from grill; keep grill hot.
- Pour hot sauce into a deep, microwave-safe serving dish; add butter. Heat in a microwave oven until butter is melted, about 1 minute. Stir to combine.
- Dip grilled wings into sauce and return to the hot grill. Cook for 3 minutes. Dip wings in sauce a second time; return to grill and cook 3 to 5 minutes more. Place wings in serving dish with remaining sauce.

PAT'S FAMOUS HOT WINGS

- For the dipping sauce:
- In a small bowl, mash the blue cheese into the buttermilk and sour cream. Mix in the sugar and the apple cider vinegar, and season with salt and pepper, to taste.
- For the seasoning:
- Mix the dry rub, salt, and cayenne together in a small bowl.
- Preheat deep-fryer with peanut oil to 350 degrees F.
- For the wings:
- Add the wings to a large mixing bowl and season with the lemon-pepper seasoning and toss to coat. Allow to sit for a few minutes, so flavors can permeate into the chicken.
- Add the wings to the deep-fryer and fry until cooked through and golden and crisp, 12 to 15 minutes. You may need to do this in batches.
- Meanwhile, while wings are frying, melt butter in small saucepan over medium-low heat with the garlic. Transfer to a large bowl and whisk in the hot sauce, brown sugar, vinegar, and Worcestershire sauce until combined.
- Remove wings from fryer and drain on a paper towel lined sheet tray. Immediately sprinkle with the seasoning.
- Add fried wings to the large bowl of sauce and toss until well combined and wings are well coated. Serve immediately after tossing the wings with the sauce. Serve with the blue cheese dipping sauce and celery and carrot sticks.

NASHVILLE-STYLE HOT WINGS RECIPE BY TASTY

- Combine all master spice mix ingredients and separate into three equal portions.
- In a large bowl combine chicken wings, ⅓ master spice mix, the buttermilk. Cover and chill for as long as possible (4 hours to overnight).
- Rinse the brined wing pieces and pat dry.
- Mix the flour with another ⅓ of the master spice mix.
- Dredge the chicken wing pieces in the flour/spice mixture. Shake off any excess. Set aside.
- Heat your oil to 325˚F (170˚C).
- Fry the wings for 8-10 minutes, until the internal temperature reaches 165˚F (74˚C). The wings will splatter so its a good idea to have a lid nearby!
- Take the wings out and drain on a paper bag or paper towels.
- Place the lard in a saucepan and sprinkle over the last ⅓ of your master spice mix. Once the lard is melted and warm, stir the mixture, and take it off the heat. Immediately baste your fried wings with the lard/spice mix and serve right away!

DANNYZ'S HOT WINGS
These are Hot Wings done with a healthy twist. Skinless boneless Chicken breast is used instead of the fatty little legs and wings. I made these the first time at a Super bowl party and they flew off the table. No pun intended! :)

- Combine the Shedds Spread, Sriracha Sauce, pepper & garlic powder in a small sauce pan over low heat. Stir together and heat until the Shedds Spread is melted and mixture is well blended.
- In a small bowl mix together the flour, paprika, cayenne pepper and salt. Set aside. Prepare chicken breasts. Place on cutting board and slice in strips lengthwise, to about ¾ inch thickness. The strips should be no longer than 4 inches, so cut to length.
- Place chicken in a large nonporous bowl or dish and sprinkle flour mixture over them until evenly coated. Cover bowl or dish and refrigerate for 60 to 90 minutes.
- Spray the oven rack with "Pam" or similar method of lubricant. Place the chicken strips directly on the oven racks being sure to place a catch pan under the racks. (You can make one from foil). Bake the coated chicken strips in a pre-heated oven at 350 for 35 to 40 minutes. (If you want then crisper, remove them on the rack from the oven and spray lightly with "Pam" and place back in the oven for the last 5 to 10 minutes). Depending on how crispy you like them.
- Place the chicken in a serving bowl, add hot sauce mixture and stir to coat. Serve with Bleu Cheese dipping sauce and sliced celery sticks.
