These make a fantastic Christmas cookie, or if you're like me and love these chocolate-orange flavors, it's good all year long. If you bring these bad boys to a potluck, prepare to be very popular!

¾ cup white sugar
¾ cup light brown sugar
½ cup butter
½ cup butter-flavored shortening
2 teaspoons Mexican vanilla extract
1 orange, zested and juiced
2 eggs
2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups dark chocolate chips (such as Hershey's®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Very lightly grease a baking sheet.
  • Beat white sugar, brown sugar, butter, shortening, vanilla extract, and orange juice together using an electric mixer in a mixing bowl until creamy. Add eggs 1 at a time, beating well after each addition.
  • Combine flour, baking soda, salt, and orange zest in another bowl. Stir into butter mixture. Fold in chocolate chips lightly. Chill dough in the refrigerator for 20 minutes.
  • Drop dough by rounded teaspoonfuls onto the prepared baking sheet.
  • Bake in the preheated oven until light golden brown and still soft, but set in the middle, 8 to 10 minutes. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a cooling rack.

Frozen Grand Marnier Torte with Dark Chocolate Crust and Spiced Cranberries image

Crust
1 9-ounce package chocolate wafer cookies
1/2 cup semisweet chocolate chips
3 tablespoons sugar
7 tablespoons unsalted butter, melted
Filling
8 large egg yolks
1 cup sugar
1/4 cup water
1/2 teaspoon ground nutmeg
1/8 teaspoon ground allspice
2 cups chilled heavy whipping cream
1/2 cup chilled sour cream
5 tablespoons Grand Marnier or other orange liqueur
3 tablespoons frozen orange juice concentrate, thawed
1 tablespoon grated orange peel
Topping
1/2 cup ruby Port
1 tablespoon cornstarch
1 cup sugar
1/4 cup honey
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1/2 teaspoon ground cinnamon
5 cups fresh cranberries or frozen, partially thawed, divided
White chocolate curls (optional)

Steps:

  • For crust:
  • Finely grind cookies, chips, and sugar in processor. Add melted butter; blend until wet crumbs form. Set aside 1/2 cup crumb mixture. Press remaining crumb mixture onto bottom and 2 inches up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides.
  • For filling:
  • Whisk first 3 ingredients in medium metal bowl. Set over saucepan of simmering water and whisk vigorously until candy thermometer registers 175°F, about 8 minutes. Remove bowl from over water. Add spices. Using mixer, beat until thick and cool, about 5 minutes.
  • Using electric mixer, beat whipping cream, sour cream, Grand Marnier, orange juice concentrate, and grated orange peel in large bowl until peaks form. Add egg yolk mixture and fold together. Pour 2/3 of filling into crust. Sprinkle with reserved 1/2 cup crumb mixture. Gently spoon remaining filling over. Cover; freeze overnight or up to 3 days.
  • For topping:
  • Whisk Port and cornstarch in large skillet to blend. Add sugar, honey, and spices. Bring mixture to boil over high heat, stirring often. Add 3 cups cranberries; cook until mixture boils and cranberries begin to pop but still hold shape, about 5 minutes. Mix in remaining 2 cups cranberries. Chill topping at least 6 hours or overnight.
  • Release pan sides from torte. Transfer torte to platter. Spoon topping over filling. If desired, garnish torte with white chocolate curls.

CHOCOLATE ORANGE & GRAND MARNIER TRUFFLE CAKE

This naughty pudding is the perfect way to use up all those Christmas Chocolate Oranges. A definite winner

1 orange
5 tbsp Grand Marnier
50g caster sugar
2 dark Terry's chocolate oranges, seperated into segments
85g unsalted butter , softened
3 eggs , separated
284ml pot double cream
140g rich tea finger biscuit
142ml pot double cream , lightly whipped
grated dark chocolate or chocolate curls

Steps:

  • Line the base and sides of a 1kg loaf tin with cling film. Squeeze the juice from the orange and mix with 3 tbsp of the Grand Marnier. Cut away the bitter white pith from inside the orange shell, then cut the peel into fine strips and boil it in a covered pan with 300ml water for 20 mins until soft. Add the sugar, then simmer uncovered for a bit longer until you have a soft, sticky peel.
  • Melt the chocolate over a pan of water, then take from the heat and beat in the butter and egg yolks, followed by the rest of the Grand Marnier.
  • Whisk the egg whites until they hold their shape, then whip the cream until softly stiff. Fold both of them into the chocolate mixture.
  • Spoon 5 large tbsp of the chocolate mixture into the tin, then dip the finger biscuits in the orange and Grand Marnier mixture one by one and arrange over the chocolate layer - don't soak them too much or they will fall apart. Scatter over some of the sticky peel, then spoon on another 5 tbsp of the chocolate mixture.
  • Carry on layering up the biscuits and chocolate mixture until you have 4 layers of biscuit, finishing with a chocolate layer. You should only need to use half the peel. Lightly cover with cling film and freeze until ready to serve. Freeze the remaining peel separately.
  • To serve, take the cake and orange peel out of the freezer no more than 1 hr before serving and strip off the cling film. Top with whipped cream and the remaining peel, and scatter with the grated chocolate. Keep chilled until ready to eat.

1 cup margarine, softened
3/4 cup brown sugar, firmly packed
1/2 cup granulated sugar
1 teaspoon vanilla
4 tablespoons Grand Marnier
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1 cup quick oats (3 min variety)
2 cups semi-sweet chocolate chips

Steps:

  • Cream margarine, sugars, vanilla and Grand Marnier in a large mixing bowl.
  • Add eggs, beating well after each addition.
  • Add baking soda and flour and stir until blended.
  • Stir in oats, then chocolate chips.
  • Drop by the tablespoonfuls 5 cm apart onto ungreased cookie sheets.
  • Bake at 300°F for 5-10 minutes or until done. Allow to cool somewhat before removing from cookie sheet.

2 cups plus 2 tablespoons all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup sugar
1/2 cup (1 stick) unsalted butter, room temperature
2 large eggs
2 tablespoons Grand Marnier or other orange liqueur
1 tablespoon grated orange peel
1 cup pecans, lightly toasted, coarsely chopped
6 ounces bittersweet (not unsweetened) chocolate, chopped

Steps:

  • Line large baking sheet with parchment paper. Whisk flour, baking powder, and salt in medium bowl to blend. Using electric mixer, beat sugar and butter in large bowl to blend. Beat in eggs 1 at a time, then Grand Marnier and orange peel. Add flour mixture and beat until blended. Stir in pecans and chocolate. Gather dough together; divide in half. Wrap in plastic and freeze 20 minutes to firm.
  • Position rack in center of oven; preheat to 350°F. Using floured hands, form each dough piece into 14-inch-long, 2 1/2-inch-wide log. Transfer logs to prepared baking sheet, spacing 2 inches apart. Bake until light golden, about 30 minutes. Transfer parchment with logs to rack. Cool 20 minutes. Reduce oven temperature to 300°F.
  • Place 1 log on cutting board. Using serrated knife, cut log on diagonal into 1/2-inch-thick slices. Stand slices upright on baking sheet. Repeat with remaining log.
  • Bake biscotti until dry to touch and pale golden, about 30 minutes. Cool completely on rack. (Can be made 1 week ahead. Store in airtight container.)
