EASY DATE BARS



Easy Date Bars image

Yield 16 bars

Number Of Ingredients 9

1 package (8 ounces) dates, chopped
1 cup water
1 tablespoon packed brown sugar
1 teaspoon vanilla
1½ cups all-purpose flour
1½ cups oats (quick or old-fashioned)
1 cup packed brown sugar
½ teaspoon baking soda
½ cup butter, melted (I used Smart Balance)

Steps:

  • Preheat oven to 350F degrees. Spray a 9-inch square baking pan with baking spray and set aside.
  • In a sauce pan, add dates, water and sugar. Bring to a boil and cook until mixture thickens (about 5 minutes). Remove from heat and stir in vanilla.
  • Meanwhile, in a large bowl, whisk together the flour, oats, brown sugar, and baking soda. Add melted butter, and stir until combined. (Note: The mixture will be dry).
  • Press half of the flour mixture into the prepared baking pan. Pour filling over the top. Then press the remaining flour mixture over the top of the filling
  • Bake for 20 minutes, or bars start to turn golden. Let cool completely.

3 cups chopped pitted dates (1 lb)
1 1/2 cups water
1/4 cup granulated sugar
1 cup packed brown sugar
1 cup butter or margarine, softened
1 3/4 cups all-purpose* or whole wheat flour
1 1/2 cups quick-cooking oats
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.
  • Heat oven to 400°F. Grease bottom and sides of 13x9-inch pan with shortening.
  • In large bowl, stir brown sugar and butter until well mixed. Stir in flour, oats, baking soda and salt until crumbly. Press half of the crumb mixture evenly in bottom of pan. Spread with filling. Top with remaining crumb mixture; press lightly.
  • Bake 25 to 30 minutes or until light brown. Cool 5 minutes in pan on cooling rack. Cut into 6 rows by 6 rows while warm.

1 1/2 cups water
1 1/2 cups chopped pitted dates
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1 cup (packed) dark brown sugar
1 cup old-fashioned oats
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, diced, room temperature

Steps:

  • Preheat oven to 350°F. Butter 8x8-inch metal baking pan. Bring 1 1/2 cups water to simmer in medium saucepan. Add dates; simmer until very soft and thick, stirring occasionally, about 10 minutes. Cool to room temperature. Stir in vanilla.
  • Combine flour, sugar, oats, cinnamon, baking soda, and salt in large bowl; stir to blend. Add butter. Using fingertips, rub in until moist clumps form. Press half of oat mixture evenly over bottom of prepared pan. Spread date mixture over. Sprinkle with remaining oat mixture; press gently to adhere. Bake until brown at edges and golden brown and set in center, about 40 minutes. Cool completely in pan on rack. Cut into bars and serve.

1 ½ cups rolled oats
1 ½ cups sifted pastry flour
¼ teaspoon salt
¾ teaspoon baking soda
1 cup packed brown sugar
¾ cup butter, softened
¾ pound pitted dates, diced
1 cup water
⅓ cup packed brown sugar
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
  • In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
  • Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

Steps:

  • Preheat oven to 375°F.
  • Cream together butter and sugar until light and fluffy.
  • Beat in eggs one at a time.

  • Fold in the dates and nuts.

2-1/2 cups pitted dates, cut up
1/4 cup sugar
1-1/2 cups water
1/3 cup coarsely chopped walnuts, optional
1-1/4 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1-1/2 cups quick-cooking oats
1 cup packed brown sugar
1/2 cup butter, softened
1 tablespoon water

Steps:

  • In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

1 3/4 cups unsalted butter, melted

Steps:

  • In a medium saucepan, combine the chopped dates and water. Over medium low heat, bring to a simmer and cook for 5 minutes. Add the sugar and lemon juice and stir until the sugar has dissolved. Bring back up to a boil and cook for 1 minute. Remove from the heat and allow to cool to room temperature.
  • Thoroughly butter a 9 x 13 inch baking pan with 2 inch sides and line the base of it with parchment paper.
  • Preheat the oven to 350 degrees. In a large mixing bowl, combine the oats, flour, brown sugar, cinnamon, baking soda, and salt. Mix together well with a wooden spoon, then drizzle in the melted butter and stir to moisten evenly. Spread 1/2 of this crumb mixture in the base of the pan, then cover with an even layer of the cooled date mixture. Top the date layer with another layer of the crumb mixture and bake for 30 to 35 minutes, or until the top is golden and bubbly, and the edges have begun to caramelize. Cool on a rack, to room temperature. Run a knife around the inside edge of the pan to release, and cut into 12 squares.

1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup pitted dates, chopped (Dromedary brand preferred)
1 cup coconut, shredded (or 1/2 cup chopped nuts)
2 eggs
1 cup brown sugar

Steps:

  • Preheat oven to 350F and grease a 13 x 9 cake pan very well.
  • Sift the dry ingredients together into a large mixing bowl.
  • Mix in the dates and coconut or nuts.
  • In a separate bowl, beat the eggs until foamy and gradually add the brown sugar.
  • Add wet mixture to the dry ingredients.
  • Spread batter in prepared pan to a depth of about 1/2 inch.
  • Bake for 30 to 40 minutes.
  • When done, cut into 4" x 1" bars.
  • Remove from pan while still warm.
