2 large eggs, lightly beaten
3/4 cup 2% milk
2/3 cup finely crushed saltines
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon rubbed sage
Dash pepper
1-1/2 pounds lean ground beef (90% lean)
1 cup ketchup
1/2 cup packed brown sugar
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in an ungreased 15x10x1-in. baking pan., In a small bowl, combine remaining ingredients, stirring to dissolve sugar; remove 1/2 cup for sauce. Spread remaining mixture over meat loaf., Bake 60-65 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Serve with reserved sauce.

  • Preheat oven to 350 degrees F. Coat a 9- x 5-inch loaf pan with cooking spray. In a large bowl, combine beef, pork, onion, bread crumbs, eggs, 1/4 cup ketchup, Worcestershire sauce, salt, and pepper; mix well. Press mixture into prepared pan. This is my, my husband's, and our two teens' favorite meat loaf recipe. Been making this for the last 19 years. Have tried other meat loaf recipes, but keep coming back to this one.

2 eggs, beaten
¾ cup milk
½ cup dry bread crumbs
¼ cup chopped onion
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon crumbled dried sage
1 ½ pounds ground beef
½ cup ketchup
2 tablespoons brown sugar
1 teaspoon dry mustard powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • In a bowl, lightly mix the beaten eggs, milk, bread crumbs, onion, salt, black pepper, and sage together until thoroughly combined. Gently work in the ground beef until mixed; press the meat mixture into the prepared loaf pan.
  • Bake in the preheated oven until the loaf is no longer pink inside and the juices run clear, about 50 minutes. An instant-read thermometer inserted into the center of the loaf should read at least 160 degrees F (70 degrees C).
  • While the meat loaf is baking, mix together the ketchup, brown sugar, and dry mustard powder in a bowl until the sugar has dissolved. When loaf is done, pull from the oven, and spread topping over the loaf. Return to oven, and bake until the topping is set, about 10 more minutes.

1 1/2 pounds ground beef
1 1/2 pounds ground pork
3/4 cup grated carrots
1/2 cup chopped shallots
1/2 cup grated pecorino cheese
2 cups (1/2-inch-diced) bread cubes, such as crusty sourdough
2 tablespoons fresh thyme leaves
2 large eggs
1/2 cup whole milk
2 teaspoons kosher salt
6 to 8 twists of a pepper grinder
1/2 cup packed light brown sugar
3/4 cup ketchup
1 tablespoon Dijon mustard

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large bowl, add all meatloaf ingredients and mix with your hands until combined. Do NOT overmix it! Divide the mixture between two 9 x 5-inch loaf pans and set aside.
  • For the glaze, in a medium bowl, stir together the sugar, ketchup, and mustard. Brush the top of each meatloaf with a thick coat of the glaze. Transfer to the oven and bake until an instant-read thermometer inserted in the middle registers 150 degrees F, about 45 minutes.
  • Let the meatloaves rest for 10 to 15 minutes, unmold, cut into slices, and serve.

Steps:

  • Heat oven to 350 degrees F. Combine all ingredients in large bowl, shape into meatloaf shape and put in 9 x 11 glass pan. Bake for 50 to 55 min. until medium doneness. Let stand 5 min. before slicing. Makes 6 slices / servings.

Steps:

  • Preheat Oven 350.
  • Mix all ingredients well with hands.
  • Lightly Grease Pan or Casserole Dish 8x8 or 9X13.
  • Press Mixture into your pan.
  • Bake for about 25/ 30 minute.
  • Take out and Spread Remaining H&D Pepper Relish on top.
  • Place in over once more Baking till Done about 30 more minutes.
  • I reduce heat some to prevent burning the sides.

1/2 pound pork sausage, any flavor, casings removed
1/2 cup celery, diced
1 medium onion, diced
1/4 cup bread crumbs
1 teaspoon salt
1 teaspoon black pepper
2 large eggs
1/4 cup salsa
1 teaspoon Italian seasoning

Steps:

  • Combine all ingredients in a large bowl and mix well with your hands. In a well greased 10" Dutch oven, pour the mixture and pack by pressing into the bottom of the oven. Bake at 350°F for 45 minutes, using heat only around the circumference of the bottom and top of the oven so that it will not burn. Top with mashed potatoes and cheese or B.B.Q. sauce. Serves 6 to 8

1 lb lean ground beef
1/2 lb ground lean pork
1 1/2 tablespoons butter
1/2 cup finely chopped red onion
1 (1 ounce) package dried porcini mushrooms
munich dark harpoon beer or other dark beer
1/2 cup beef stock or 1/2 cup broth
2 large eggs, lightly beaten
1/2 cup fine fresh breadcrumb
2 tablespoons finely chopped parsley
1 tablespoon finely chopped thyme
salt & freshly ground black pepper
3/4 cup ketchup
1/2 cup honey
1/4 cup whole grain mustard

Steps:

  • Heat beer and beef stock to a boil in a small pot. Take the pot off the heat and add the mushrooms. Allow mushrooms to steep for 30 minutes. Strain mushrooms and reserve mushroom/beef/beer broth. Roughly chop the mushrooms.
  • Preheat oven to 425°F Put ground beef and pork in a mixing bowl.
  • Heat butter in a small skillet and add the onions. Cook, stirring, until onions have wilted. Add the mushrooms and continue cooking for 3-4 minutes. Season with salt and pepper, cook for an additional minute and remove from heat. Let cool briefly and add the onion and mushroom mixture to the meat.
  • Add the mushroom/beef/beer broth, eggs, bread crumbs, parsley, chopped thyme, and salt and pepper. The mixture should feel very moist, if it feels dry, pour in some additional beer. Do not over-mix. Pack into a 2½ by 4½ by 8½ inch loaf pan and bake for 40 minutes.
  • While meatloaf is cooking, prepare the glaze by mixing together the ketchup, honey, and mustard until well incorporated.
  • Remove from the oven and add glaze to the top of the loaf. Return to the oven and bake an additional 5-10 minutes until glaze has browned.
  • Remove the meatloaf from the oven and allow to rest at least 20 minutes. Pour out any rendered fat from the pan, slice and enjoy with your favorite Harpoon beer.
  • Boston based Sebastians also recommends that this dish makes a great sandwich!
