Steps:
- Cook the macaroni noodles according to package directions, drain, then set aside.
- While the noodles are cooking, add the cream cheese and chicken broth to a separate large pot on the stove, and bring to a boil.
- Whisk consistently until the cheese has melted and the sauce is smooth.
- Reduce the heat to medium, and add the onion powder, garlic powder, salt and pepper, combine well, then add the mozzarella cheese.
- Stir continuously until the cheese has melted into the sauce, then add the chicken and bbq sauce.
- Add the cooked macaroni noodles, stir to combine, then transfer to a serving bowl and top with the cilantro.

- Preheat the oven to 350°F (180°C).
- Slice the rolls in half lengthwise. Place the bottom half in a 9 x 13-inch (23 x 33 cm) rimmed baking dish. Spread the chicken evenly over the rolls, followed by the barbecue sauce, red onion, Pepper Jack cheese, and parsley. Top with the remaining rolls.
- Brush the tops of the rolls with melted butter. Bake for 20 minutes, until the bread is golden brown. Slice into individual sliders, then serve.

- Preheat broiler. In a large saucepan, mix first 6 ingredients; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 8-10 minutes, stirring occasionally. - Cook chicken and vegetables in large nonstick skillet on medium-high heat 5 min. or until chicken is cooked through, stirring occasionally.
- Add water and Macaroni; stir. Bring to boil; cover. Simmer on medium-low heat 8 to 10 min. or until macaroni is tender.
- Stir in Cheese Sauce and barbecue sauce; cook until heated through.

CHICKEN SLIDERS WITH SPICY BBQ MAYO
Steps:
- Add canola oil to a heavy bottomed pot with a tight fitting lid and put it over medium heat. Add the onion and garlic and saute until softened, about 4 minutes. Add the chicken thighs, skin side up, fitting them in tightly. Add the thyme and rosemary sprigs, season with salt and pepper, to taste, and pour in 1/2 cup water. When it comes to a boil, lower the heat, cover and simmer for 1 hour. Remove the chicken from the pot and let it cool. When it is cool, shred the meat, discarding the skin and bones. (Reserve the meat from 2 thighs for Round 2 Recipe Chicken Tacos with Cucumber Salsa.)
- In a large bowl combine the sugar, vinegar, red pepper flakes and mix together. Shred half of the cabbage and add it to the bowl, then season with salt and pepper, to taste. (Reserve the remaining cabbage half for the Round 2 Recipe Chicken Tacos with Cucumber Salsa.) Toss to coat all of the cabbage, then cover and refrigerate until ready to use.
- In a large bowl, whisk together the mayonnaise, barbecue sauce, mustard, and hot sauce. Taste and adjust the seasoning with salt and pepper, to taste. Add the shredded chicken and toss to coat.
- Divide the shredded chicken evenly among each roll bottom. Top with some of the cabbage, cover with the roll top, and insert a toothpick to hold it all together. Arrange on a serving platter and serve.
GRILLED CHEESE SLIDERS
Buttery Hawaiian rolls with melted provolone and cheddar cheese.

- Preheat oven to 350 degrees F.
- Spray a 9x13-inch baking pan with nonstick cooking spray; set aside.
- Without pulling the rolls apart, cut them in half and lay them on a clean work surface.
- Spread 2 Tablespoons of mayonnaise on the inside of each half of the rolls.
- Place the bottom half of rolls in the the prepared baking dish.
- Top with sliced cheddar cheese and sliced provolone cheese.
- Place top half of rolls on top.
- Brush on melted butter.
- Cover baking dish with foil and bake for 10 minutes.
- Remove foil and bake for an additional 10 minutes, or until cheese is melted and rolls are golden brown.
- Cut rolls apart and serve.
