Ivy Mix, an owner of Leyenda, a Brooklyn bar with a focus on Latin spirits, thinks this drink requires an earthy lowland tequila (that is, grown in the valley section of Jalisco), such at the Partida reposado, which is aged slightly, and has toasty, nutty flavors. For its tonic match, she reaches for Canada Dry or Schweppes, which have "more quinine kick" in her opinion. For a switch, try this recipe with mezcal. But, since that smoky spirit is typically more pungent in flavor, use only an ounce and a half.

2 ounces tequila, preferably Partida reposado
4 ounces tonic water, preferably Canada Dry or Schweppes

Steps:

  • Fill a highball glass with ice. Squeeze the lime over the ice and drop into glass. Add tequila and top with tonic. Stir briefly.

1/4 cup tequila
1 1/2 tablespoon triple Sec
1 1/2 tablespoon lime juice
1 1/2 tablespoons crème de cassis
Ginger beer
Garnish: lemon wedge

Steps:

  • Combine lots of ice, the tequila, triple sec and lime juice in a mixing glass and shake. Add 1 1/2 tablespoons crème de cassis. Shake and strain into a glass with ice and top with ginger beer. Garnish: lemon wedge.

1 lime
2 cups white tequila
2 to 3 jalapeños, halved lengthwise seeded
6 cups (1 1/2 quarts) tonic water

Steps:

  • Using peeler, remove peel from lime (green part only) in strips. Combine peel, tequila and jalapeños in glass jar with tight-fitting lid. Chill overnight.
  • Fill 8 tall glasses with ice cubes. Pour 3 tablespoons tequila and 3/4 cup tonic water into each.

50ml tequila blanco (we used El Jimador)
15ml lime juice
15ml sugar syrup
125-150ml ginger beer
1-2 tsp crème de cassis to finish
1 tsp pomegranate seeds

Steps:

  • Half-fill a tall glass with ice then add the tequila, lime and sugar syrup. Stir gently to combine then top up with ginger beer then stir once more.
  • Slowly pour the crème de cassis and garnish with a few pomegranate seeds dropped into the glass.

Coarse salt for coating the rim of the glass
2 jiggers (3 ounces) tequila
Chilled tonic water
2 thin lime slices

Steps:

  • Rub the rim of a highball glass with the 1/4 lime and dip it into a bowl of coarse salt to coat it lightly. Fill glass with ice and squeeze remaining juice from lime into it. Add tequila and stir. Fill with tonic and add lime slices.

1 lime, juiced
8 ounces tequila
3 cups tonic water
Lime wedges, for serving

Steps:

  • Spread coarse salt onto a flat plate. Put lime juice into a shallow bowl. Dip rims of 8 glasses into lime juice, then into salt to coat. Fill glasses with ice. Divide tequila and tonic water evenly among glasses. Squeeze 1 to 2 lime wedges into each drink. Gently stir to combine. Serve immediately.
