ROAST PORK LOIN WITH DIJON MUSTARD AND THYME RECIPE
Roast pork is juicy, succulent, and delicious. However, sometimes it can seem intimidating to create a tasty pork roast in your own kitchen. Yet, it is not impossible. If you are looking for a surefire recipe for Roasted Pork Loin, this one is definitely one to keep on hand.

Steps:
- Remove the pork loin from its wrappings, rinse it lightly, and pat it dry with paper towels.
- In a small bowl, stir together the garlic, balsamic vinegar, Dijon mustard, olive oil, salt, pepper, thyme, and basil.
- Put the pork loin in a medium-sized bowl and pour the sauce over it. Turn the meat so that it is covered all over in the sauce. Cover the bowl lightly with plastic wrap and let the meat sit out on the counter for about half an hour. Not only does this allow the meat to absorb the flavors, it will also allow the meat to come to room temperature which will help it cook more evenly.
- After about 20 minutes, turn your oven on to preheat to 350 degrees.
- Ten minutes later, prepare a baking pan by lightly spraying it with cooking spray. Add the meat, pouring any additional sauce over the meat in the pan.
- Place the baking pan into the oven and bake it for about 45 to 60 minutes.
- At 45 minutes, you should use a meat thermometer to check the internal temperature. You are aiming for 145 degrees. If it isn't done, return it to the oven for another 15 minutes.
- When the meat is done, cover it lightly with aluminum foil. Place it on the stovetop and let it rest for about 15 minutes.
- Slice the meat and serve it warm.
ROSEMARY DIJON PORK LOIN
Steps:
- Preheat oven to 350 degrees F.
- Trim any excess fat from the pork loin, leaving a thin-layer of fat over the top.
- Evenly rub the entire pork loin with the Dijon mustard followed by the onion, salt, pepper, and garlic. Make sure to really rub in the spices, and then sprinkle the
- rosemary evenly all over the top.
- Place the pork in roasting pan lined with a rack and roast for 20 minutes.
- Reduce the temperature to 300 degrees F, and continue roasting until a meat thermometer inserted in the thickest part reads 145 degrees F, about 1 hour more. Transfer the pork to a cutting board, cover loosely with foil, and let rest for 10 minutes. Slice and pork and arrange on a platter garnished with rosemary sprigs.
DIJON THYME PORK
Steps:
- Cut pork diagonally in to about 8 pieces Chop thyme Combine thyme, mustard and garlic in a medium bowl; coat pork slices Preheat skillet on medium for 2-3 minutes. Place butter in pan and then add pork; cook 5-6 minutes on each side or until browned Combine wine, milk and flour in skillet and add pork back. Cook and stir 2-3 minutes until sauce thickens. HERB ROASTED PORK WITH HONEY DIJON MUSTARD
Steps:
- Preheat oven to 400 degrees F.
- Line a baking sheet with foil and spray with olive oil cooking spray; set aside. Rinse tenderloin under cold water and pat dry with paper towels. Cut into 4 servings. Use a pastry brush to brush 1/4 cup mustard on pork loin. Sprinkle tenderloin pieces with 2 tablespoons of the herbs. Place on prepared baking sheet. Roast in preheated oven for 18 to 20 minutes. In a small saucepan over medium heat, combine chicken broth and pearl onions. Reduce liquid by half and add remaining 1/4 cup mustard and 1 tablespoon fines herbs. Heat thoroughly. Serve roasted tenderloins hot with onions and sauce.
DIJON ENCRUSTED PORK TENDERLOIN
This is SO easy and quick. Each tenderloin should serve 2 people; simply double or triple for more people. This is a favorite at our house and the leftovers (if there are any) make a great sandwich to take to work or school the next day.

- Adjust oven rack to lowest position and heat oven to 450 degrees F (230 degrees C). Line a lipped cookie sheet with foil; spray with vegetable cooking spray. Split each pork tenderloin lengthwise almost but not all the way through with a sharp knife. Open up each pork tenderloin and pound lightly with fist to flatten. Combine eggs, mustard, thyme, salt and pepper in a shallow pan. Mix breadcrumbs and olive oil in a separate shallow baking pan. Working one at a time, coat tenderloin completely in egg mixture then dredge in breadcrumbs, pressing to adhere. Set on prepared baking sheet. This dish can be prepared and refrigerated for 60 minutes prior to cooking.
- Bake until golden brown and cooked through (150 to 160 degrees F on a meat thermometer ), about 20 minutes. Let rest 5 minutes. While tenderloin is resting heat a skillet, add the apple cider and reduce by half. Slice tenderloin, spoon the sauce over and serve.

- Preheat the oven to 375°F (190˚C).
- In a small bowl, stir together the mustard, thyme, rosemary, salt, and pepper.
- Dry the pork tenderloin thoroughly with paper towels, then season with salt and pepper.
- Heat 2 tablespoons of olive oil in a square pan over medium-high heat. Add the tenderloin and cook, rotating 90˚ every 3-4 minutes, until golden brown all over (the tenderloin will not be cooked through at this point), about 12 minutes total. Remove the pan from the heat and use tongs to transfer the tenderloin to a cutting board.
- Brush the mustard mixture evenly over the top and sides of the tenderloin.
- Add the broccolini to the pan, and toss with the oil until coated evenly. Push the broccolini to the sides of the pan, just enough to make room for the tenderloin, then return the pork to the pan.
- Transfer the pan to the oven and roast, tossing the broccolini halfway through cooking, until an instant-read thermometer inserted in the thickest part of the pork reads 160°F (70˚C) and the broccolini is tender, 23-25 minutes.
- While the pork cooks, heat the remaining tablespoon of olive oil in a medium skillet over medium-high heat. Add the carrots, season with salt and pepper, and cook, tossing, until barely tender, about 6 minutes.
- Drizzle with the honey and continue cooking, tossing often, until the honey is reduced to a thick glaze and the carrots are tender, 2 to 4 minutes more. Remove the skillet from the heat.
- Transfer the square pan to a rack and let the pork and broccolini rest for 10 minutes. Place the tenderloin on a cutting board and cut into ½-inch (1-cm) thick slices.
- Divide the pork and vegetables among 4 serving plates. Serve each with a lemon wedge and sprinkle with parsley.
