OLD FASHIONED CHESS PIE RECIPE
A Southern classic, this recipe for homemade chess pie is a sweet, simple treat that will please a crowd!

- Preheat the oven to 325 degrees F.
- In a large bowl, add in the butter, sugar and vanilla together.
- Mix the ingredients until well combined.
- Add in the eggs, cornmeal, milk, and vinegar.
- Mix the ingredients until well combined.
- Place the pie crust in the 9 inch pie pan.
- Pour in the pie filling.
- Bake for 1 hour and 10 minutes.
- Let cool for about 45 minutes.
- Serve & enjoy.

- Preheat oven to 350 degrees. Combine sugar and cornmeal. Add beaten eggs and milk, and mix well. Stir in vinegar and vanilla. Mix until well blended. Pour into the pie crust and bake at 350 degrees for 10 minutes. Turn oven temperature down to 325 and bake for additional 40 to 45 minutes or until center of pie is set. Turn oven off and let the pie cool in the oven.
DEEP DISH CHEESE PIE
This recipe was inspired by a pie at my favorite bakery in Brooklyn, Four and Twenty Blackbirds. While mine will never live up to their version, I think it's getting pretty close. I was really pleased with the addition of cardamom in the filling!

- For the crust: Place the flour, sugar, salt and butter in a food processor and pulse until the butter is evenly distributed but still visible in chunks. While pulsing, add the ice water 1 tablespoon at a time until the dough is just wet enough to hold together when pinched between your fingers.
- Turn the dough out onto a piece of plastic wrap, form into a disk and refrigerate for at least 30 minutes.
- Preheat the oven to 350 degrees F. Roll the dough out into a circle about 1/8-inch thick, and then fit into a 9-inch pie dish. Dock the crust all over using a fork. Cover the crust with plastic wrap and refrigerate for at least 30 minutes.
- Line the crust with foil and fill with dried beans or baking marbles. Bake for 10 to 12 minutes, and then remove the foil and beans and bake until the crust just begins to brown, another 15 minutes.
- For the filling: While the crust is baking, combine the farmer cheese, sugar and cardamom in a stand mixer with a paddle attachment and whip together until well incorporated. Add 1 egg at a time on medium speed, waiting until fully incorporated and smooth before each new addition. Stir in the heavy cream.
- Fill the crust with the cheese filling and bake until the top is browned and the filling is just slightly jiggly, 45 minutes. Let cool, and then eat the pie. Serve with orange marmalade.
COLONIAL CHESS PIE
I'm a guy that does almost no cooking, but I can bake this. Turns out good every time. Not for someone on a diet, or with sugar problems. A big hit, with the young and old alike!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a saucepan, combine white sugar, brown sugar, flour and salt. Pour in milk and add margarine. Heat, stirring constantly, until sugar dissolves and margarine is melted. Remove from heat and set aside to cool.
- In a large bowl, whisk egg yolk, egg and vanilla until smooth. Whisk in cooled sugar mixture. Pour into pie crust.
- Bake for 25 minutes in the preheated oven, then reduce the temperature to 250 degrees F (120 degrees C) and bake for an additional 25 minutes, or until top is puffed and edges are golden brown. Allow to cool before slicing.

I obtained this recipe 40-years ago from the cook at the Highway Cafe in Scappoose, Oregon. I have never found its equal. Whenever I serve it, I am always asked for the recipe.

- Preheat the oven to 325 degrees F (165 degrees C). Soak raisins in boiling water for 10 minutes. Drain, and chop.
- In a medium bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, mixing well after each one. Stir in the vanilla, sour cream, walnuts and chopped raisins. Pour into the baked pie shell.
- Bake for 30 minutes in the preheated oven, or until firm in the center. Allow to cool completely before slicing.

- For the pie: Preheat the oven to 350 degrees F. Place the blind-baked pie shell on a rimmed sheet pan.
- In a large bowl, whisk together the granulated sugar and eggs until combined. Add the butter, milk, flour, cornmeal, vinegar, vanilla and salt. Whisk until well blended.

GRANDMOTHER'S CHESS PIE
My grandmother was a school cafeteria manager for years. She made the BEST Chess Pie, but the recipe makes 2 at a time. I always take one to work and have the other at home for family.

Not sure exactly where this recipe originated from, my mother, raised is the Mississippi Delta, passed it down to me - It has been a long standing tradition for Holidays, Pot Lucks and just about anytime a dessert was needed. You can make it in 2 large Pies or 22 individual pie shells - (These are a little harder to find these days)
