HEALTHY MOZZARELLA STICKS
A fun crispy, oozy appetizer for the whole family-and one that has calcium goodness. The pizza flavor profile makes them extra tasty for kids' palates.

- Pulse the melba toasts in a food processor to make semi-coarse crumbs; transfer to a medium bowl or dish. Mix in the breadcrumbs, oregano, 1/4 teaspoon each salt and pepper and the cayenne if using.
- Whisk together the egg whites, whole egg, garlic and 1/4 teaspoon each salt and pepper in another bowl.
- Put the flour and 1/4 teaspoon salt in a resealable plastic bag. Add the cheese pieces to the bag, close and shake to coat. Dip one piece of the cheese at a time in the egg mixture first, and then roll firmly in the breadcrumb mixture; then dip the same piece again in the egg mixture followed by the breadcrumb mixture. (Note: Use one hand with the dry mixture and the other with the wet mixture.) Place on a parchment paper-lined plate or baking sheet. Freeze for 15 minutes, or up to overnight.
- Preheat the oven to 475 degrees F. Transfer the frozen cheese sticks to another baking sheet. Fully coat the cheese sticks with the olive oil cooking spray. Bake until golden, about 12 minutes. Sprinkle with additional salt and pepper to taste.
- Serve immediately with the warm marinara sauce.

LIGHT AND BAKED MOZZARELLA STICKS

- Preheat a toaster oven on broil setting, or set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Spray a small baking sheet with cooking spray.
- Insert toothpick vertically into each cheese stick half to mid-way point. Beat egg in a small bowl. Place bread crumbs in a separate small bowl.
- Dip each cheese stick into egg, then press into bread crumbs. Repeat dipping in egg and breadcrumbs for a double-thick coating. Place cheese sticks on prepared baking sheet and spray with additional cooking spray for uniform browning.
- Broil in preheated oven until golden brown, 4 to 5 minutes. Allow cheese sticks to set before serving, about 1 minute.

- Cut mozzarella lengthwise into 1/2-inch-thick slices, then cut again into 4-by-1/2-inch sticks. Place flour in a shallow dish; season with salt and pepper. Whisk eggs with 1 tablespoon water in a separate dish; season with salt and pepper. Stir together breadcrumbs, Parmigiano-Reggiano, and herbs in a third shallow dish; season with salt and pepper.
- Dredge mozzarella sticks in flour, tapping off excess. Dip in egg wash, allowing excess to drip off, and coat with breadcrumbs, patting to adhere. Transfer mozzarella sticks to a parchment-lined baking sheet. Freeze until firm, at least 1 hour. (Mozzarella sticks can be covered and frozen at this point up to 2 months.)
- Pour enough oil into a heavy pot (preferably cast iron) to come 2 inches up sides. Heat over medium-high until a deep-fry thermometer reads 350 degrees. Working in batches, add mozzarella sticks; cook, turning occasionally, until golden and crisp, 2 to 3 minutes (adjust heat as necessary to maintain oil temperature.) Transfer to a wire rack set over a rimmed baking sheet to drain. Season with salt; serve immediately, with marinara sauce.

- Whisk eggs and milk together.
- Coat each piece of cheese with flour, then dip in egg and then roll in bread crumbs.

- Beat the eggs in a mixing bowl. Whisk in the milk, then set aside. Place the bread crumbs into a plastic bag, and set aside.
- Separate and place an egg roll wrapper onto your work surface with one of the tips pointed towards you. Moisten the two far edges of the wrapper with water. Place a string cheese stick onto the corner nearest you, and roll it in 1/3 of the way, fold over the right and left corners, then continue rolling to the end, pressing to seal. Repeat with the remaining string cheese sticks and egg roll wrappers.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Dip the mozzarella sticks into the egg wash, then toss in the bread crumbs. Cook in batches in the hot oil until crisp and golden brown, 3 to 4 minutes.

DOUBLE RANCH MOZZARELLA STICKS
This is a dream recipe for ranch-dressing superfans (you probably know one, or maybe you are one). Creamy, peppery ranch dressing became hugely popular in the 1990s, and now it often shows up on chicken wings, burgers, tacos, pizza and even mozzarella sticks. In this recipe, the bread-crumb coating is spiked with ranch seasoning, and then the crunchy nuggets of melted cheese get dipped into cooling ranch. Or you could go back to the classic dip for these: marinara sauce.

- Cut the mozzarella into sticks about 3 inches long and 3/4 inch thick.
- Line a rimmed baking sheet with parchment paper. Place three shallow bowls on a work surface. Place the flour in one bowl. In another bowl, whisk eggs and buttermilk together. In a third bowl, combine the ranch seasoning with panko, parsley, dill and oregano.
- Working one at a time, dredge a piece of mozzarella in flour. Dip in the egg mixture, let any extra drip off and then roll in panko mixture, pressing gently to coat well. Place on the baking sheet and repeat with remaining ingredients. Freeze at least 2 hours and up to 1 week. To store, transfer frozen sticks to bags or containers.
- When ready to serve, heat 2 inches oil to 350 degrees in a large pot over medium heat. Working in batches to avoid crowding the pan, fry the frozen sticks until golden brown all over, turning occasionally, 2 to 3 minutes. Transfer to a paper towel-lined plate and immediately sprinkle lightly with salt.
- Serve with thick ranch dressing, for dipping.

- Combine 1/4 cup water and rennet in a small bowl; mix well.
- Combine remaining 1/2 cup water and citric acid in another small bowl; mix until dissolved.
- Pour milk into a large pot set over medium heat. Stir in water-citric acid mixture. Heat milk, stirring occasionally, until it registers 90 degrees F (32 degrees C) on an instant-read thermometer, about 5 minutes.
- Remove milk from heat and stir in rennet mixture in a figure-8 motion for 30 seconds. Stir counterclockwise for 30 seconds to still the milk. Let stand, covered, until milk sets into curd, 5 to 10 minutes. Press edge of the curd gently with a palette knife or the back of a spoon to check for firmness.
- Slice vertically into the pot to cut curd into 3/4-inch cubes with a palette knife. Stir curds gently, but leave cubes mostly intact.
- Return pot to the heat; cook over medium heat, stirring curds gently, until temperature reaches 109 degrees F (43 degrees C), about 5 minutes. Remove from heat.
- Ladle curds into a colander set over a large bowl using a slotted spoon. Press curds gently to extract liquid whey. Pour drained whey back into the pot.
- Heat whey to 185 degrees F (85 degrees C), about 5 minutes. Wearing gloves, tear off a piece of curd and place on a slotted spoon. Dip curd into hot whey for 5 to 10 seconds. Stretch, fold, and knead the curd. Repeat until mozzarella is smooth and elastic. Knead in salt and form curd into a ball. Repeat dipping and kneading process with remaining curd.
- Allow mozzarella to cool. Wrap tightly in plastic wrap and transfer to the refrigerator.

- Cut the mozzarella into 'chips'. Tip the flour into a bowl and season well. Whisk the eggs in a second bowl and tip the breadcrumbs, paprika and oregano into a third. Coat the mozzarella sticks in the flour, then the egg, then the breadcrumbs. Transfer to a parchment-lined tray and freeze for at least 2 hrs.
- Heat enough oil to come 2-3cm up the side of a saucepan. When hot, drop in a test chip - it should sizzle straight away and brown within a minute or two. The secret is to cook them long enough to crisp up the outside without letting the mozzarella ooze out - it may take you a few practice chips to get it right. Cook the chips in batches and drain on kitchen paper. Serve hot with your favourite dip.
