SPICY HORSERADISH MUSTARD WITH KIELBASA

Spicy Horseradish Mustard with Kielbasa image

Here's a fabulous appetizer for friends! Crackers spread with spicy brown mustard seasoned with caraway seeds and zesty horseradish, then topped with slices of kielbasa and a bit of pickle relish.

Provided by Food Network Kitchen

Time 50m

Yield 24 crackers

Number Of Ingredients 8

1 teaspoon caraway seeds
1/4 cup spicy brown mustard
2 tablespoons mayonnaise
2 tablespoons prepared horseradish
8 ounces kielbasa, cut into 1/2-inch-thick slices
1 tablespoon vegetable oil
24 Keebler® Town House® Flipsides® Original crackers
1/4 cup sweet pickle relish

Steps:

  • 1. In large nonstick skillet heat caraway seeds over medium heat for 2 to 3 minutes or until fragrant, stirring frequently. In small bowl combine caraway seeds, mustard, mayonnaise and horseradish. Set aside.
  • 2. In same skillet cook kielbasa slices in hot oil about 8 minutes or until no longer pink, turning once halfway through cooking. Drain on paper towels. Cut each slice in half.
  • 3. Spread mustard mixture on pretzel side of KEEBLER TOWN HOUSE FLIPSIDES Original crackers. Top with kielbasa piece and relish. Serve warm.
  • Entwine Pairing: Cabernet Sauvignon (the wine has a mouth feel galore to stand up to smoky kielbasa; mustard makes the wine's blackberry and smoke notes shine)

Beer and Horseradish Mustard image

Provided by Bruce Aidells

Categories     Sauce     Beer     Vegetarian     Low Cal     Horseradish     Oktoberfest     Low Cholesterol     Bon Appétit

Yield Makes about 1 cup

Number Of Ingredients 10

1 cup lager beer, divided
2/3 cup malt vinegar or red wine vinegar
1/3 cup whole brown mustard seeds* (about 2.2 ounces)
2 tablespoons dry mustard (such as Colman's)
1/4 cup prepared white horseradish
1 teaspoon coarse kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon honey
1/4 teaspoon caraway seeds, finely ground in mortar with pestle or in spice mill
2 teaspoons cornstarch mixed with 1 tablespoon water

Steps:

  • Whisk 1/2 cup beer, malt vinegar, mustard seeds, and dry mustard to blend in small bowl. Let mixture stand at room temperature 3 hours.
  • Transfer beer-and-mustard-seed mixture to blender; add remaining 1/2 cup beer, horseradish, 1 teaspoon coarse salt, 1 teaspoon pepper, honey, and ground caraway seeds; blend until coarse puree forms. Transfer mixture to medium metal bowl. Set bowl over saucepan of simmering water and whisk often until mixture thickens slightly, about 15 minutes (mixture will be thinner and more sauce-like than store-bought mustard). Transfer mustard to small saucepan and add cornstarch mixed with 1 tablespoon water; whisk over medium-high heat until mustard thickens and boils, about 2 minutes. Transfer mustard to airtight container. Cover and chill until cold. DO AHEAD: Can be made 1 week ahead. Keep chilled.
  • Sold at specialty foods stores, Indian and Asian markets, and online at thespicehouse.com. If unavailable, use yellow mustard seeds instead.

HOMEMADE PREPARED HOT HORSERADISH

Homemade Prepared Hot Horseradish image

Homemade horseradish is really quite easy if you have a food processor--and are careful. While this looks like something from the grocery store, the flavor is incomparable. Intensely hot and aromatic, this is the real deal.

Provided by Chef John

Categories     Side Dish     Sauces and Condiments Recipes

Time 30m

Yield 48

Number Of Ingredients 4

1 pound horseradish root - peeled, ends trimmed, cut into 1/4-inch dice
¾ cup water, or as needed - divided
⅓ cup distilled white vinegar
1 ½ teaspoons kosher salt

Steps:

  • Place diced horseradish in a food processor; add a splash of cold water. Pulse on and off until mixture begins to blend. Scrape down sides of food processor container (the fumes are very strong, so keep your face away from the bowl and the room well ventilated).
  • Continue blending, adding a bit more water if mixture seems too dry. Process until horseradish is finely ground. Wait 2 minutes before adding the vinegar and salt; supposedly this makes the horseradish hotter. After 2 or 3 minutes, add vinegar and salt. Continue processing until mixture is smooth and creamy or to your desired consistency, adding more water if necessary. Transfer to airtight storage containers. Refrigerate.

Number Of Ingredients 10

1/2 cup Coleman's dry mustard
1/2 cup hot tap water
1/2 cup white wine vinegar or 1/2 cup rice vinegar
2 teaspoons kosher salt
1 tablespoon bottled horseradish
1 clove garlic, peeled and sliced

  • Cook, stirring constantly, for about 5 minutes, or until the mustard has thickened (it will thicken more while cooling).

HOLLANDAISE WITH MUSTARD AND HORSERADISH

Hollandaise with Mustard and Horseradish image

The addition of spicy mustard and horseradish make this hollandaise from chef Michel Roux's "Sauces" cookbook a perfect compliment to broiled fish dishes. Also Try:Classic Hollandaise Sauce, Maltaise Sauce

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Number Of Ingredients 9

17 tablespoons (2 sticks plus 1 tablespoon) unsalted butter
1 tablespoon white wine vinegar
1 teaspoon white peppercorns, crushed
4 large egg yolks
Coarse salt
Juice of 1/2 lemon
1 tablespoon English mustard powder
1 tablespoon cold water
1 tablespoon freshly grated horseradish

Steps:

  • Melt butter in a small saucepan over medium heat; slowly bring to a boil, skimming froth from surface. Carefully pour melted butter into a small bowl, holding back the milky sediment in the bottom of the pan. The clarified butter should be the color of light olive oil; let cool to room temperature.
  • In a medium heavy-bottomed saucepan, mix vinegar together with 1/4 cup cold water and crushed peppercorns. Place over medium-high heat until liquid is reduced by one-third; remove from heat and let cool completely. Add egg yolks to cooled reduction and whisk to combine.
  • Place saucepan on a heat diffuser over very low heat; whisk, making sure the whisk comes in contact with the bottom of the pan. Gradually increase heat whisking, so the sauce emulsifies progressively and becomes smooth and creamy, 8 to 10 minutes; do not let the temperature of the sauce rise above 150 degrees.
  • Remove saucepan from heat and whisk in clarified butter in a slow, steady stream; season with salt. Stir in lemon. Line a chinois or fine mesh strainer with cheesecloth; strain mixture and discard solids. Mix together mustard powder and water; stir into hollandaise sauce along with horseradish. Use sauce immediately.
