This easy homemade cranberry relish beats the canned version any day.

1 package (12 ounces) fresh or frozen cranberries
1 cup dried cherries
1 cup sugar
2 cups water

Steps:

  • In a large saucepan, combine cranberries (no need to thaw if frozen), cherries, sugar, and water.
  • Bring to a boil; reduce heat to medium-low. Simmer until most berries have burst and liquid is syrupy, 20 to 25 minutes. Transfer to a bowl. Cover, pressing plastic wrap directly on surface of relish; refrigerate.

8 ounces dried cherries, preferably pitted (see note)
1 cup water
1 medium onion, finely chopped
1/2 cup finely chopped sweet red pepper
2 tablespoons red wine vinegar
1/2 tablespoon sugar
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the cherries in a saucepan with the water, bring to a boil, cover and remove from heat. Set aside for one hour.
  • Drain the cherries, reserving the liquid. Chop them fine and mix them with the onion and red pepper.
  • Mix the vinegar and sugar with the reserved soaking liquid. Mix with the cherries, onion and red pepper and season with black pepper. Refrigerate until ready to serve.

1 12-ounce package fresh cranberries
1 cup dried tart cherries (about 5 ounces)
1 cup (packed) golden brown sugar
1/2 teaspoon ground cardamom

Steps:

  • Mix all ingredients in large bowl. Place half of mixture in processor. Using on/off turns, process until coarsely chopped. Transfer to medium bowl. Repeat with remaining ingredients. Chill at least 1 day and up to 2 days, stirring occasionally.

2 cups white-wine vinegar
1 cup water
1 cup sugar
1/4 cup coarse salt
1 tablespoon juniper berries
3 dried bay leaves
1 tablespoon whole black peppercorns
2 English cucumbers, peeled, seeded, and sliced 1/4-inch thick on the bias
2 1/2 cups fresh cherries, stemmed and pitted
2 small shallots, thinly sliced

Steps:

  • Place vinegar, the water, sugar, salt, juniper berries, bay leaves, and peppercorns in a small saucepan; bring to a boil. Reduce heat to medium-low, and simmer 5 minutes. Remove from heat, and let cool to room temperature.
  • Place cucumbers, cherries, and shallots in a large bowl or storage container. Add pickling liquid, and let sit about 30 minutes at room temperature. Remove bay leaves, and serve.

A very nice lowfat relish to serve along side the turkey for the holidays. Simple and quick with the tart from the cranberries and sweetness from the cherries and pears. This recipe originally came from a very popular food and health magazine and can kept in the refrigerator for up to 2 weeks.

3 cups cranberries, 1-12 oz Package fresh or frozen
2 cups sweet cherries, 1-10 oz Package frozen
2 bosc pears or 2 Anjou pears, peeled and cubed
3/4 cup brown sugar, Packed
1 pinch ground nutmeg
1 pinch ground cinnamon

Steps:

  • In a large heavy saucepan combine all the ingredients and bring to a simmer over medium-high heat. Stir often to prevent sticking.
  • When mixture is simmering, reduce heat to low. Cook mixture until fruit is tender and the relish has thickened, approximately 40-50 minutes, stirring occasionally. Let cool, serve.

1 teaspoon garlic powder
1 teaspoon each dried oregano, tarragon and rosemary, crushed
2 pork tenderloins (1 pound each), trimmed
RELISH:
1 large red onion, sliced
2 tablespoons olive oil
3 tablespoons sugar
1/2 cup dried cherries
1/4 cup red wine vinegar
1/4 teaspoon dried rosemary, crushed

Steps:

  • In a small bowl, combine garlic powder and herbs; rub over pork. Cover and refrigerate for 30 minutes., For relish, in a large saucepan, saute onion in oil until tender. Add sugar; cook and stir over medium heat for 10 minutes or until onion is browned. Add the cherries, vinegar and rosemary. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Cool to room temperature., Place pork on a rack in a shallow roasting pan lined with foil. Bake at 425° for 25-30 minutes or until a thermometer reads 160°. Let stand for 10 minutes before slicing. Serve with relish.

1 ½ cups cranberry juice cocktail
1 cup water
1 cup light brown sugar
1 cinnamon stick, broken in half
¼ teaspoon ground allspice
6 ounces dried cherries
1 (12 ounce) package fresh cranberries

Steps:

  • Stir the cranberry juice cocktail, water, brown sugar, cinnamon stick, and allspice together in a saucepan; bring to a boil. Add the cherries to the cranberry juice mixture; cook another 2 minutes. Add the cranberries; continue cooking, stirring occasionally, until the cranberries pop, about 10 minutes. Remove from heat and chill in refrigerator 8 hours to overnight. Remove and discard cinnamon stick before serving.

1/2 cup crème de cassis (black currant-flavored liqueur) or cherry-flavored brandy
1/2 cup water
1/2 cup sugar
2 cups dried tart cherries or dried Bing cherries or 1 cup of each (about 10 ounces total)
3/4 cup pecans, toasted, chopped (about 3 ounces)
2 tablespoons grated orange peel
1 6- to 8-pound spiral-cut honey-roasted ham or one 12- to 14-pound honey-roasted turkey
Small dinner rolls (optional)

Steps:

  • Stir crème de cassis, 1/2 cup water and sugar in heavy medium saucepan over medium heat until sugar dissolves. Bring to boil. Add dried cherries. Reduce heat; cover and simmer until cherries are plump, about 5 minutes. Mix in pecans and orange peel. Season relish lightly with salt. Transfer to bowl. Cool. (Can be made 1 week ahead. Cover and refrigerate.)
  • Place ham or turkey on platter. Place bowl with cherry relish alongside. Serve with dinner rolls, if desired.

  • Bring all ingredients to a boil and then lower heat to medium low.
  • Simmer about 25-40 minutes or until relish is thick and syrupy.
  • Transfer to a bowl and cover with plastic wrap, pressing it down onto the surface of the relish.
  • Refrigerate for up to two weeks.
  • Bring to room temperature before serving.

1 package (12 ounces) fresh or frozen cranberries, thawed

Steps:

  • Place cherries in a bowl and cover with warm water. Let stand for 10 minutes or until plumped. Drain cherries, discarding water. , In a large saucepan, combine the sugar, water, cranberries and cherries. Cook and stir over medium heat until the berries pop, about 15 minutes. Remove from the heat and skim foam from top of mixture. Cool to room temperature. Cover and store in the refrigerator.
