SPECIAL CRANBERRY NUT MUFFINS



Special Cranberry Nut Muffins image

This special holiday bread recipe combines two of my favorites- tangy dried cranberries and spicy cardamom.

Provided by Taste of Home

Time 35m

Yield 14 muffins (about 3/4 cup butter).

Number Of Ingredients 14

2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon ground cardamom
1 teaspoon ground cloves
1 cup buttermilk
1 egg
1/2 cup butter, melted
1/2 cup dried cranberries
1/2 cup chopped walnuts
CARDAMOM BUTTER:
1/2 cup butter, softened
1/4 cup confectioners' sugar
1 teaspoon ground cardamom

Steps:

  • In a bowl, combine the dry ingredients. Stir in the buttermilk, egg, butter, cranberries and nuts just until moistened. Fill greased or paper-lined muffin cups three-fourths full. , Bake at 400° for 20-25 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing to wire racks. Combine cardamom butter ingredients; serve with muffins.

1 egg, beaten
1 1/2 cups fresh cranberries or 1 1/2 cups frozen cranberries, halved
1/2 cup chopped pecans
2 tablespoons orange zest

Steps:

  • In a mixing bowl, combine the flour, sugar, baking powder and salt.
  • In another bowl, combine the orange juice, milk, butter and egg; stir into dry ingredients just until moistened.
  • Fold in cranberries, pecans and orange peel.
  • Fill greased or paper-lined muffin cups three-fourths full.
  • Bake at 400 degrees for 18 to 20 minutes or until a toothpick comes out clean.
  • Cool for 5 minutes before removing from pans to wire racks.

1 teaspoon vanilla
1 teaspoon orange zest
3/4 cup dried cranberries
1/2 cup chopped walnuts or 1/2 cup pecans

Steps:

  • Preheat oven to 400º. Butter twelve muffin cups and edges surrounding the cups.
  • In a large bowl, stir together flour, brown sugar, baking powder, baking soda, and salt. In another bowl, stir together buttermilk, oil, egg, vanilla, and orange peel. Make a well in the center of dry ingredients; add milk mixture and stir just to combine. Stir in cranberries and nuts.
  • Spoon batter into prepared muffin cups. Bake for 15 to 20 minutes or until a toothpick inserted in center of one muffin comes out clean.
  • Remove muffin pan to wire rack. Cool for 5 minutes before carefully removing muffins from cups; finish cooling on rack. Serve warm or cool completely and store in airtight container at room temperature.

6 tablespoons all-purpose flour
¼ cup brown sugar
2 tablespoons butter
½ cup margarine, softened
1 cup white sugar
1 egg
1 ½ teaspoons vanilla extract
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup grated zucchini
1 cup cranberries
½ cup walnut pieces

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Prepare 12 muffin cups with liners.
  • Mix 6 tablespoons flour and brown sugar together in a bowl for topping; cut butter into the flour mixture until you have pea-sized crumbs. Set aside.
  • Beat margarine and white sugar with an electric mixer in a large bowl until light and fluffy. Beat egg and vanilla into the butter mixture.
  • Mix 1 1/2 cups flour, baking powder, baking soda, and salt together in a separate bowl; gradually beat into the butter mixture. Fold zucchini, cranberries, and walnuts into the mixture; spoon into prepared muffin cups, filling nearly to the top. Sprinkle reserved topping mixture onto the batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 minutes.

1 cup all-purpose flour
2/3 cup old-fashioned oats
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup 2% milk
1/2 cup mashed ripe banana
2 tablespoons canola oil
1/2 cup dried cranberries
1/4 cup chopped pecans

Steps:

  • In a large bowl, combine the first six ingredients. In a small bowl, beat the egg, milk, banana and oil. Stir into dry ingredients just until moistened. Stir in cranberries and pecans. , Coat muffin cups with cooking spray; fill two-thirds full with batter. Bake at 400° for 14-16 minutes or until a toothpick comes out clean. 1 ½ cups brown rice flour
1 cup white rice flour
½ cup ground flax seeds
4 tablespoons baking powder
1 teaspoon xanthan gum
1 teaspoon ground cinnamon
½ teaspoon salt
1 cup dried cranberries
½ cup chopped walnuts

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray 18 muffin cups with cooking spray or line with paper liners.
  • Place milk and vinegar in a small bowl; stir and set soured milk aside.
  • Beat brown sugar, white sugar, and butter together in a bowl using an electric hand mixer or stand mixer until creamy and smooth. Add soured milk, eggs, egg yolk, and vanilla extract; beat until smooth, scraping down the sides of the bowl as needed.
  • Mix brown rice flour, white rice flour, flax seeds, baking powder, xanthan gum, cinnamon, and salt together in another bowl. Stir slowly into creamed butter mixture until just mixed. Stir in cranberries and walnuts.
  • Spoon batter into the prepared muffin cups, filling each about 3/4 full.
