HOMEMADE DROP BISCUITS
The best biscuit recipe ever. Crunchy on the outside, tender on the inside. Gramma sure knows how to butter a biscuit!

Steps:
- Preheat oven to 425º F and line a baking sheet with parchment or a silicone mat.
- In a measuring cup, or small bowl combine all the wet ingredients.
- In a large bowl, combine all the dry ingredients and give it a good mix.
- Cut the butter into small pieces. Add the COLD butter to the dry ingredients. Blend in using either 2 knives or a pastry blender. It should resemble wet sand when your are done.
- Add the wet ingredients to the dry ingredients. Using a wooden spoon, mix into a soft dough. I like to use my hands (they will get messy).
- Drop piles of dough onto your prepared baking sheet. Just break off little dough balls with your hand. You can make these as large or small as you wish.
- Bake for about 10-12 minutes until golden and crunchy on top. (Smaller biscuits will require less time).
- Remove from oven, and place biscuits on a cooling rack.

This easy drop biscuit recipe only requires 5 simple ingredients! In under 30 minutes you can have homemade drop biscuits on your table!

Steps:
- Preheat the oven to 450 F (232 C).
- In a large bowl, whisk together flour, baking powder, and salt together. If you want to add any herbs or spices you can add them here.
- Add the pieces of cold butter and cut into the dry ingredients with a pastry cutter or fork until the consistency of coarse meal. If you want to add any cheeses or other add-ins you can stir them in here before adding the milk.
- Add 3/4 cup of the milk and stir just until combined. You can use any milk you like or buttermilk if you want a tangy flavor. If the batter is very dry, add a little more milk until the consistency of a very thick batter. Do not over-mix. The batter will be quite lumpy.
- Drop large mounds (about 1/4 cup each. I use a 2 oz scoop) onto a baking sheet. You can also use a cast iron skille that has been greased with butter.
- Bake at 450 F (232 C) for 18-22 minutes until golden brown
- Brush with melted butter if desired.

- Sift dry ingredients into bowl, cut in shortening (or substitute) until it resembles coarse crumbs.

BEST EVER DROP BISCUITS (SMALL BATCH)
Drop biscuits are best the same day they are made...no comparison!!! Perfect for 4 people. When you stir slightly cooled melted butter into cold buttermilk, the butter will clump. Although this might look like a mistake, it's one of the secrets to this recipe. You can double the recipe...if needed!

- Adjust oven rack to middle position and heat oven to 475 degrees.
- Whisk flour, baking powder, baking soda, sugar, and salt in large bowl. Combine buttermilk and 1/4 cup melted butter in medium bowl, stirring until butter forms small clumps.
- Add buttermilk mixture to dry ingredients and stir with rubber spatula until just incorporated and batter pulls away from sides of bowl.
- Using greased 1/4-cup dry measure, scoop a scant amount of batter and drop onto parchment-lined rimmed baking sheet. Repeat with remaining batter, spacing biscuits about 1 1/2 inches apart.
- Bake until tops are golden brown and crisp, 8 - 12 minutes. They can be made up ahead of time and gently re-heated in a 300 oven for 10 minutes.
- Brush biscuit tops with 1 tablespoon melted butter. Transfer to wire rack and let cool 5 minutes before serving.
- Test if baking powder is fresh: Mix 2 teaspoons of the baking powder into a cup of water. If there is an immediate reaction of foaming and fizzing, the baking powder is okay to use. If the reaction is at all delayed or weak, throw it away and buy a fresh can.
