DRUNKEN SWEET POTATOES
A splash of Jack Daniel's is all this recipe needs to give it that extra something-something. The kids can keep their marshmallow topped sweet potatoes. This one is for the grownups.

Steps:
- Preheat oven to 325 degrees F. Grease a 2-quart casserole dish and set aside. Place the peeled sweet potatoes in a pan of water and bring to a boil over medium-high heat. Boil for 35 minutes or until tender. Drain the potatoes well and let cool slightly. Place the potatoes in a large mixing bowl with the butter and beat on medium speed with the mixer. Add the sugar, salt, and whiskey and mix well. Spread half the sweet potato mixture in the prepared pan. Sprinkle the sweet potatoes with half of the chopped nuts. Spread the remaining sweet potato mixture on top, then top with the remaining nuts. Place the casserole in the oven and bake at 325 degrees F for 35 minutes or until bubbly in the center. Remove from the oven and serve hot.

DRUNKEN SWEET POTATO CASSEROLE
Thanksgiving wouldn't be Thanksgiving without this dish. I've no idea where the recipe came from originally--my grandmother has been making it since long before I was born.

- Boil the potatoes until done.
- Skin and mash potatoes while still warm. Add butter and salt to taste. Add milk until the consistency is like creamy mashed potatoes.
- Put potatoes in a 2 quart casserole dish. Scoop a hollow in the center of the potatoes and create a rim of potatoes around the edge of the pan. Set aside.
- In a double boiler, cook 1/4 lb butter, brown sugar, egg, and bourbon, stirring constantly, until thickened (1/2-3/4 hour--in my experience it never really thickens).
- Poor this syrup into the center hollow of the casserole and over the whole top.
- Line the edges of the casserole with the mini marshmallows.
- Bake at 350F for 45 minutes or until the sauce is a very dark brown.
DRUNKEN POTATOES
This is a really interesting sounding recipe from Janet Reeves' "One Potato Two Potato" cookbook. It says that you can assemble them ahead and then pop them in the oven before serving. Would be a different way to eat potatoes!

Steps:
- Peel and slice the potatoes thinly.
- Preheat the oven to 375 degrees.
- Put the potato slices in a pie plate you've sprayed with cooking spray (or greased).
- Overlap the slices.
- Pour the vermouth over the potatoes.
- Sprinkle with salt and pepper.
- Dot with butter.
- Bake them, uncovered, for 30 to 40 minutes or until they are tender.

- Preheat oven to 350 degrees F (175 degrees C).
- Place sweet potatoes in a microwave-safe dish and cook in the microwave for 5 minutes. Add apples to the sweet potatoes and cook in the microwave until sweet potatoes and apples are tender, about 3 minutes more.
- Arrange sweet potatoes in a 9x13-inch baking dish and slice each sweet potato down the middle. Place butter cubes into each sweet potato.
- Mix rum, pecans, maple syrup, raisins, cranberries, stevia, and coconut oil together in a bowl. Stuff sweet potatoes with rum mixture and apples.

These Borracho beans ("Drunken" beans) are simmered in dark bear to create a bold and flavorful broth with pinto beans, bacon, chilis and spices.

- Pour beans into a colander and rinse them off, removing any unwanted pieces. Add to a large pot with 6 cups of water (or enough to cover them by about 2 inches), a small chunk of onion, bay leaf and 1/2 teaspoon of salt.
- Bring to a boil, then reduce heat to a simmer and cook for 1 to 2 hours, until the beans are tender, but not bursting. (Mine usually take about 1 hour but depends on how dry/old your beans are). Check them a few times during cooking to make sure they are covered in water and add a little more water if needed.
- Once the beans are tender, drain them, reserving 1/4 cup of the liquid. Set aside.
- Add the bacon to a large pot and cook for about 5 minutes or until cooked. Remove some of the grease. Add onion and garlic and cook until onion is translucent. Add ham (or sausages), diced tomatoes, peppers, cilantro, oregano, paprika, cumin, black pepper and cook for 5 additional minutes.
- Add the cooked beans, reserved broth, and beer. Simmer for 15 minutes.
- Taste and season with salt and pepper, or additional spices if needed.
- Serve garnished with cilantro, as a meal with warm tortillas, or as a side dish.

MY FAMOUS DRUNKEN TURKEY RECIPE
Steps:
- In a large sauce pan melt one stick of butter and then add in half of the bottle of wine, 1 tsp crushed garlic, 1.5 tsp onion powder, 2 cups chicken or turkey stock, 1 apple.
- Mix over low heat until combined.
- On the bottom of the roasting pan, place the carrots, celery, parsnips, turnips, onions, and garlic cloves.
- Rest the wire rack on top of the vegetables.
- With the breast side up, bend the wing tips underneath the bird.
- If you are stuffing the bird with homemade stuffing do so now. If not, insert these ingredients into the cavity: Apple, half an onion, 1 garlic clove, a carrot, and a celery stalk.
- Flip the bird over and tie the legs with cotton twine to the tail. Make sure it is tight, but tie it with a bow tie so it's easy to release later.
- Place the turkey on the wire rack inside the roaster.
- Rub soft butter on the skin all over the turkey. Even rub the butter underneath the skin on the turkey breast.
- Affix the neck skin to the breast using a toothpick.
- Cut the cheesecloth in half. Wrap the bottom of the turkey with one half of the cheesecloth and then wrap the top half with the other part of the cheesecloth. This makes it so much easier to remove later, trust me.
- Once the turkey is wrapped, place the turkey breast side up, pour the basting mixture over the bird with a large spoon or a baster.
- Flip the bird so that the breast is facing down in the roaster and baste the bottom side of the turkey.
- Bake at 450 degrees for 30 minutes, then turn your oven down to 350 degrees for the remainder the of time.
- Baste every 30 minutes or at least once an hour - set a timer! Don't forget your turkey or it will be a sad.
- Use a huge spoon or a baster to get the basting mixture all over the turkey. You will need to remake the basting solution a few times, especially when you have a large turkey and basting every 30 minutes. An extra bottle of wine, butter, and stock are not a bad idea to have on hand just in case. Don't worry, you will use all of these drippings from the turkey to make the most amazing gravy that you have ever had!
- Halfway through the cooking time, turn the turkey over so it is breast side up using turkey lifters. At this time, you will want to melt another stick of butter and add the remaining wine to the basting mixture, if you haven't done so already.
- Bake the turkey until it has an internal temperature of 180 degrees. During the last hour, you might have to put aluminum foil over the legs so that they do not burn.
- Remove the turkey from the oven. Gently remove the cheesecloth so as not to remove the skin. The turkey should be a nice golden brown.
- Let the turkey rest for 20-30 minutes before you begin carving.
- Take all the drippings off the bottom of the roaster and use an immersion blender to mix it all together - you don't need to add anything else. Delicious!
DRUNKEN SWEET POTATOES
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Place sweet potatoes in a large bowl. Beat with an electric mixer until light and fluffy. Mix in the butter, cinnamon, orange juice, eggs, salt, and liqueur. Transfer to a 2 quart casserole dish. Mix the pecans and brown sugar in a small bowl, and sprinkle evenly over the sweet potato mixture. Bake 30 to 40 minutes in the preheated oven, or until center is firm and edges are lightly browned. If desired the last 10 minutes of cook time, cook uncovered with marshmallows sprinkled on top (until marshmallows are just slightly browned and crispy!)

- In a cast-iron skillet or smokeproof baking dish, melt the butter. Stir in the sweet potatoes and then pat the potatoes down into a thick, even layer. Sprinkle the brown sugar and the salt over the potatoes.
