CHOCOLATE DULCE DE LECHE STUMP CAKE

Chocolate Dulce De Leche Stump Cake image

Provided by Food Network Kitchen

Categories     dessert

Time 1h30m

Yield 12 slices of cake

Number Of Ingredients 19

1/2 cup vegetable oil, plus more for the pans
2 cups all-purpose flour, plus more for the pans
3/4 cup unsweetened Dutch-process cocoa powder
1 teaspoon salt
1 teaspoon baking powder
3/4 teaspoon baking soda
1 1/2 cups buttermilk
1 teaspoon pure vanilla extract
2 cups granulated sugar
3 large eggs
2 sticks unsalted butter, at room temperature
6 ounces cream cheese, at room temperature
1 teaspoon pure vanilla extract
1/2 teaspoon salt
2 cups dulce de leche (use a thick spread, not a sauce)
1 cup confectioners' sugar
2 tablespoons unsweetened Dutch-process cocoa powder
2 tablespoons hot water
1 8-ounce block semisweet chocolate

Steps:

  • Preheat the oven to 350˚. Brush the bottom and sides of two 8-inch round cake pans with vegetable oil and dust with flour, tapping out the excess. Whisk the flour, cocoa powder, salt, baking powder and baking soda in a medium bowl. Whisk the vegetable oil, buttermilk and vanilla in a large liquid measuring cup.
  • Beat the granulated sugar and eggs in a large bowl with a mixer on medium speed until combined. Increase the speed to medium high and beat until very fluffy and light, 4 to 5 minutes. Reduce the speed to medium and beat in the flour mixture in three batches, alternating with the buttermilk mixture, until combined, stopping to scrape down the bowl occasionally. Divide the batter evenly between the prepared pans.
  • Bake until the tops of the cakes are firm and spring back when gently pressed and the sides begin to pull away from the pan, about 45 minutes. Transfer to a rack and let cool 15 minutes, then run a thin spatula around the cakes to loosen and invert onto the rack to cool completely.
  • Meanwhile, make the frosting: Beat the butter, cream cheese, vanilla and salt in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Beat in the dulce de leche until well combined. Reduce the mixer speed to low and beat in the confectioners' sugar until combined, then increase the speed to medium high and beat until the frosting is thick and fluffy, about 1 more minute. Refrigerate until the frosting is slightly firm but still spreadable, about 1 hour.
  • Trim the domed tops of the cakes with a long serrated knife to make them level, if necessary. Cut each layer in half horizontally to make 4 thin layers. Put 1 layer on a cake plate and spread with a heaping 1/2 cup frosting all the way to the edges. Repeat with 2 more cake layers, then top with the remaining cake layer. Cover the top and sides of the cake with a thin layer of frosting (this is the crumb coat-it doesn't have to be perfect). Refrigerate until set, about 1 hour. Reserve the remaining frosting.
  • Mix the cocoa powder and hot water in a small bowl until smooth. Add 1/2 cup of the remaining frosting and stir well to combine. Refrigerate the chocolate frosting and remaining dulce de leche frosting along with the cake.
  • Cover the cake with the remaining dulce de leche frosting. Using a small offset spatula, add swipes of the chocolate frosting in concentric circles over the top of the cake, plus some swipes around the sides of the cake. Use a large offset spatula to smooth the chocolate frosting into the dulce de leche frosting, slightly marbling the two. Run the tines of a fork around the top of the cake in concentric circles. Refrigerate until set, at least 30 minutes or overnight.
  • Meanwhile, make the chocolate curls: Run the palm of your hand on one side of the chocolate block to soften slightly. Working over a piece of parchment paper, scrape along the softened side with a paring knife or a wide vegetable peeler to make about 2 cups large chocolate shavings. Freeze on the parchment until set, 10 minutes.
  • Remove the cake from the refrigerator. If the frosting is too hard, let stand until softened, about 15 minutes. Gently press the chocolate shavings into the sides of the cake.

RICH CHOCOLATE CAKE WITH SALTY DULCE DE LECHE & HAZELNUT BRITTLE

Rich Chocolate Cake with Salty Dulce de Leche & Hazelnut Brittle image

Categories     Cake     Food Processor     Mixer     Chocolate     Nut     Dessert     Bake     Birthday     Hazelnut     Party     Advance Prep Required     Kidney Friendly     Vegetarian     Pescatarian     Peanut Free     Soy Free     Kosher

Yield Makes one 10-inch cake

Number Of Ingredients 16

Cake
1 cup freshly brewed hot coffee
1/2 cup Dutch-processed cocoa powder
3/4 cup packed light brown sugar
1/2 cup plain whole-milk yogurt
2 teaspoons vanilla extract
8 tablespoons (1 stick) unsalted butter, at room temperature
1 1/4 cups granulated sugar
2 eggs
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1 teaspoon table salt
Topping
Hazelnut Brittle
1/2 cup dulce de leche
1 1/2 teaspoons kosher salt

Steps:

  • 1. Preheat the oven to 350°F. Prepare a 10-inch round cake pan by greasing it with cooking spray and then lining the bottom with parchment paper.
  • 2. To make the cake, pour the hot coffee into a medium bowl and stir in the cocoa powder until it dissolves. Stir in the brown sugar, followed by the yogurt and the vanilla. Stir thoroughly to ensure that all of the ingredients are incorporated.
  • 3. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and granulated sugar on medium speed until light-yellow and fluffy, about 3 minutes. Scrape down the sides of the bowl. Add the eggs and mix for 2 minutes, scraping down the bowl as needed.
  • 4. In a medium bowl, whisk together the flour, baking soda, and salt. With the mixer running on low speed, mix in a third of the flour mixture and half of the coffee mixture. Scrape down the bowl. Add another third of the flour mixture and all the remaining coffee mixture. Remove the bowl from the mixer and, using a rubber spatula, fold in the remaining flour mixture until all of the ingredients are fully incorporated. Pour the batter into the prepared cake pan.
  • 5. Bake for 25 minutes. Rotate the pan in the oven and bake for 20 more minutes, or until a cake tester inserted in the center of the cake comes out clean. Remove the pan from the oven and let the cake cool in the pan for 20 minutes. Then turn the cake out onto a clean plate, remove the parchment, and turn the cake back over onto a wire rack. Let the cake cool completely.
  • 6. In a food processor, pulse the brittle pieces 3 to 4 times until the brittle is powdery.
  • 7. Put the cooled cake on a serving dish. In a microwave-safe dish, heat the dulce de leche on high power for 30 seconds, or until it is just liquid. Spoon the dulce de leche over the cake, and then sprinkle the kosher salt over the dulce de leche. Sprinkle about 1/2 cup of the ground brittle around the outer edge of the cake as a delicious decoration.

CHOCOLATE TRES LECHES CAKE

Chocolate Tres Leches Cake image

A chocolate version of a Mexican classic. This moist and delicious cake tastes like you spent all day in the kitchen but a boxed mix makes it so easy! For variety, you can add one tablespoon coffee-flavored liquor (such as Kahlua®) to your milk mixture or a 1/2 teaspoon of cinnamon to your cake batter.

Provided by MrsFisher0729

Categories     World Cuisine Recipes     Latin American     Mexican

Time 1h55m

Yield 18

Number Of Ingredients 12

1 (18.25 ounce) package Swiss chocolate cake mix (such as Duncan Hines®)
1 ¼ cups chocolate milk
½ cup canola oil
3 eggs
1 teaspoon instant espresso powder
1 (14 ounce) can sweetened condensed milk
¾ cup half-and-half
¾ cup evaporated milk
3 tablespoons unsweetened cocoa powder
1 cup confectioners' sugar
½ cup unsweetened cocoa powder
3 cups heavy whipping cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 9x13-inch pan with butter and flour.
  • Beat cake mix, chocolate milk, canola oil, eggs, and espresso powder together in a large bowl with an electric hand mixer on a low speed until dry ingredients are moistened. Increase speed to medium and continue beating another 2 minutes; pour into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 35 minutes. Remove cake from the oven and allow it to cool in the pan until it is no longer hot to the touch. While the cake is still warm, poke lots of holes all over the cake with a small skewer or a fork.
  • Whisk sweetened condensed milk, half-and-half, evaporated milk, and 3 tablespoons cocoa powder together in a bowl until cocoa is mostly incorporated into the liquid; slowly pour the milk mixture evenly over the cake. Allow the cake to cool completely as the liquid soaks into it.
  • Sift confectioners' sugar and cocoa powder together in a bowl.
  • Beat heavy whipping cream in a stand mixer on medium speed for about 1 minute. While continuing to mix, add sugar-and-cocoa mixture to the cream in 2 batches, allowing the first to incorporate before adding the second. Increase mixer speed to medium-high; beat until soft peaks form and the cream is thickened and spreadable. Spread chocolate whipped cream on the cake to serve.

DULCE DE LECHE CHOCOFLAN

Dulce de Leche Chocoflan image

Also known as el pastel imposible (the impossible cake), chocoflan is a baking wonder, its layers of chocolate cake batter and dulce de leche flan swapping places in the oven and coming out as a tiered two-desserts-in-one showstopper. This Mexican staple is often served at birthday parties and other celebrations, but comes together easily enough to enjoy as a sweet treat at home.

Time 2h30m

Yield 12 servings (one 10-inch cake)

Number Of Ingredients 19

1 (13-ounce/380-gram) can dulce de leche (1 1/2 cups)
1 (12-ounce/355-milliliter) can evaporated milk
4 ounces/115 grams cream cheese, at room temperature
1 1/2 teaspoons pure vanilla extract
1/8 teaspoon kosher salt
5 large eggs
1 1/3 cups/160 grams all-purpose flour
1 cup/200 grams granulated sugar
1/2 cup/50 grams unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
6 tablespoons/85 grams unsalted butter, cubed, at room temperature
1/2 cup/120 milliliters brewed coffee
1/2 cup/120 milliliters buttermilk
1 large egg
1 teaspoon pure vanilla extract
Nonstick cooking spray

Steps:

  • Heat oven to 350 degrees.
  • Make the flan: In a blender, combine the dulce de leche, evaporated milk, cream cheese, vanilla extract and salt, and blend until smooth, 20 to 30 seconds. Pour in the eggs and blend for another 10 seconds until smooth.
  • Make the chocolate cake: Sift the flour, sugar, cocoa powder, baking soda, baking powder, cinnamon and salt directly into the bowl of a stand mixer fitted with a paddle attachment. Mix on the lowest setting until just combined, then add the butter and continue mixing on low speed until the mixture resembles wet sand. Stop the mixer and scrape down the sides of the bowl if needed.
  • In a liquid measuring cup, combine the coffee, buttermilk, egg and vanilla extract, then slowly pour it into the flour-butter mixture with the mixer running on low. Scrape down the sides of the bowl and beat the mixture on high for 1 full minute.
  • Liberally coat a 10-cup Bundt pan with nonstick baking spray. Add the cake batter, smoothing the top with an offset spatula or spoon. Carefully ladle in the flan mixture so you disturb the cake batter as little as possible. Transfer the Bundt pan to a roasting pan or baking dish large enough to fit the Bundt pan. Grease a piece of foil and place it onto the Bundt pan, greased side down, folding it over the edges to loosely seal it. Transfer to the oven. Pour enough water into the roasting pan or baking dish to come up 2 to 3 inches (tap water is fine).
  • Bake until a skewer inserted in the cake part comes out with few to no crumbs, 1 1/2 to 2 hours.
  • Carefully remove the Bundt pan from the roasting pan and uncover. Transfer to a rack and let cool to room temperature. Once fully cooled, cover the top with plastic wrap and refrigerate until chilled and set, at least 2 hours.
  • Once you're ready to serve, carefully run a knife around any edges that are still sticking, then invert onto a serving platter, gently shaking it up and down if it's being difficult. (If it was greased properly, you shouldn't have any major issues.) The chocoflan can be covered and refrigerated for up to 3 days.
