OLIEBOLLEN (DUTCH DOUGHNUTS)

Oliebollen (Dutch Doughnuts) image

Ollie-bollen, or Oliebollen, are a Dutch pastry similar to a doughnut. It's typically a deep-fried pastry filled with raisins and dusted with powdered sugar. Some modern variations serve them topped with berry filling, but this is a traditional recipe. Oliebollen are a traditional treat on New Year's.

Categories     Bread     Pastries     Doughnuts

Time 2h8m

Yield 12

Number Of Ingredients 10

1 (0.6 ounce) cake compressed fresh yeast
1 cup lukewarm milk
2 ¼ cups all-purpose flour
2 teaspoons salt
1 egg
¾ cup dried currants
¾ cup raisins
1 Granny Smith apple - peeled, cored and finely chopped
1 quart vegetable oil for deep-frying
1 cup confectioners' sugar for dusting

Steps:

  • Break up the compressed yeast, and stir into the warm milk. Let stand for a few minutes to dissolve. Sift the flour and salt into a large bowl. Stir the yeast mixture and egg into the flour and mix into a smooth batter. Stir in the currants, raisins and apple. Cover the bowl, and leave the batter in a warm place to rise until double in size. This will take about 1 hour.
  • Heat the oil in a deep-fryer, or heavy deep pan to 375 degrees F (190 degrees C). Use 2 metal spoons to shape scoops of dough into balls, and drop them carefully into the hot oil.
  • Fry the balls until golden brown, about 8 minutes. The doughnuts should be soft and not greasy. If the oil is not hot enough, the outside will be tough and the insides greasy. Drain finished doughnuts on paper towels and dust with confectioners' sugar. Serve them piled on a dish with more confectioners' sugar dusted over them. Eat them hot if possible.

  • Kue Kastengel (Dutch-Indonesian Cheese Tarts) These Dutch cheese tarts are the perfect balance of sweet and savory. If you prefer your desserts to have a touch of rich cheesiness to them, give these a try.
  • Kletskoppen: Dutch Almond Lace Cookies / Florentines. If you can’t pronounce the word ‘kletskoppen,’ don’t worry about it. Just call these Dutch almond lace cookies (or Florentines) instead.
  • Krakelingen: Sweet Dutch Pretzel Cookies. Krakelingen, or sweet Dutch pretzel cookies, might look challenging to make, but in truth, they’re probably the easiest cookies on this entire list.
  • Dutch Stroopwafels. Ah! The famous Dutch stroopwafels. Just about everyone has heard of them – even if they haven’t tried them – and for good reason.
  • Arnhemse Meisjes. I don’t know what it is about Dutch chefs and these super thin, super crunchy cookies, but they’re experts at making them. These flat, sugar-coated wafers have an excellent sweet and tangy taste that’s surprisingly complex, considering you’ll only use five ingredients to make them.
  • TaaiTaai: Traditional Dutch Holiday Chewy Honey Spice Cookie. These lovely Dutch cookies are a traditional staple of the Netherlands and German holiday celebrations.
  • Dutch Speculaas Cookies. Speculaas are another Dutch cookie many people are familiar with, primarily because cookie companies often include them in holiday cookie tins.
  • Pinda Koeken Repechage. These moist, nutty cookies have a unique look and a superb taste. They’re also relatively easy to make and require only seven ingredients.
  • Traditional Dutch Pepernoten. These traditional Dutch cookies may look a bit odd, but they’ll taste fantastic. They’re soft, chewy, and richly flavored with honey, Dutch pancake syrup, spice mix, and ground aniseed.
  • Marzipan-Stuffed Cookie or Dutch Gevulde Koeken. These tasty, filled cookies are like tiny pies stuffed with marzipan fillings. They’re simple to make and have a sweetly tart sugar and lemon flavor that’s spectacularly yummy.

  • Dutch Stroopwafel. This crunchy treat is one of the most well-loved Dutch desserts on the list. At first glance, most people think they’re waffles, but although the texture is the same, they’re much thinner than waffles.
  • Arnhemse Meisjes. You can make these thin, crackling cookies with only five ingredients – puff pastry squares, vanilla sugar, cinnamon, cardamom, and lime zest.
  • Dutch Apple Pie. Apple pie may be as “American” as baseball and pickup trucks, but the Dutch have us beat when it comes to making it. I won’t lie; this pie takes some time to pull together.
  • Dutch Speculaas Cookies. Most people call these speculaas, but to me, they’re just spice cookies. One bite of that sweet cinnamon, salt, nutmeg, cloves, ginger, and white pepper flavor, and you’ll understand why.
  • Oliebollen (Dutch Doughnuts) It’s hard to decide what to love more about these warm, deep-fried delicacies: their incredible taste or how fun it is to say their name.
  • Dutch Letters (S Cookies) Dutch letters, or ‘S’ Cookies as people sometimes call them, are popular in many places worldwide and understandably so. They’re buttery, flaky, and nutty, and they have an excellent filling of almond paste that nearly melts in your mouth.
  • Sweet Dutch Pretzels. Dutch pretzels share the same shape as the Rold Gold Mini Twists you can pick up at any grocery store. However, that’s where the similarities end.
  • Kruidnoten (Dutch Little Spiced Cookies) Kruidnotens and speculaas cookies both share very similar flavors. They’re both traditional Dutch “spice cookies” and share several ingredients – nutmeg, cinnamon, cloves, and ginger, to name a few.
  • Dutch Butter Cake with Almonds. “Butter cake” may not sound like something that’s super appetizing, but it’s actually pretty incredible. It’s soft, moist, fluffy, and tastes primarily of almonds.
  • Tompouce. This flavorful orange dessert is insanely easy to make, and you’ll only need five ingredients to prepare it! You’ll start with a layer of puff pastry.
