Simple to make, this one pot cabbage soup is full of the good stuff. Warming and hearty and full of natural and healthy ingredients, this delicious vegetable soup is a must have.

1 tablespoon oil
4 cups chopped green cabbage (about 1/2 large head)
3 large carrots (peeled and chopped)
2 ribs celery (finely chopped)
1 medium onion finely chopped
2 garlic cloves (minced)
15 oz can diced tomatoes
4 cups low sodium chicken or vegetable stock
½ teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon pepper
Freshly chopped parsley for garnish

Steps:

  • In a large pot, heat oil over medium heat. Add chopped cabbage, carrots, celery, onion, and minced garlic, and cook, stirring often, until onion is translucent, about 5 minutes.
  • Add diced tomatoes, chicken stock, thyme, salt, and pepper. Bring to a simmer, cover, and reduce heat to low.
  • Simmer, stirring occasionally, until all vegetables are tender (40-50 minutes, depending on your preferred consistency).
  • Taste and adjust seasoning if necessary. Serve warm.

Very few ingredients, quick to make, and tastes great!! I found this recipe somewhere on the internet as part of The Cabbage Soup Diet. I didn't use the hot sauce in my version, but it does sound good to try.

6 large green onions, chopped
2 green peppers, chopped
1 large green cabbage head, chopped (med. to small pieces)
1 bunch celery (chopped)
2 (16 ounce) cans canned stewed tomatoes, diced, do not drain
1 (8 ounce) package Lipton Onion Soup Mix
1 large chicken bouillon cube
parsley or hot sauce

Steps:

  • Cut vegetables in small pieces.
  • In a large pot, add vegetables, soup mix, bouillon cube and cover with water. Season as desired. Boil rapidly for ten minutes.
  • Lower heat and simmer until vegetables are tender.

This is my grandmother's recipe that my Mom taught me how to make. It's insanely easy to make and perfect for a fall or winter day. Hearty, HEALTHY, and delicious - even if you don't like cabbage, this will be one of your favorites!

1 tablespoon olive oil
1 small onion
2 stalks celery
1 garlic clove (optional)
4 (58 ounce) cans beef broth
4 (58 ounce) cans water
14 1/2 ounces diced tomatoes
0.5 (3 ounce) can tomato paste
1 lb lean ground beef
1 small head of cabbage
1/4 teaspoon fresh ground pepper
1/2 teaspoon garlic salt
1/2 teaspoon onion salt

Steps:

  • Mince garlic, onion, and celery.
  • In a large stock pot, sauté minced garlic, onion and celery in olive oil.
  • Add beef broth, water, diced tomatoess, and tomato paste to the pot.
  • Break up ground beef (uncooked) and add to the pot.
  • Chop up cabbage into 1-2 inch squares and add to the pot.
  • Season with ground pepper, garlic salt, and onion salt to taste.

1 medium head cabbage, chopped
1 cup chopped celery
1 cup chopped onion
8 cups water
1 teaspoon beef bouillon granules
1 tablespoon salt
2 teaspoons pepper
1-1/2 pounds ground beef, browned and drained
2 cans (15 ounces each) tomato sauce
1 tablespoon brown sugar
1/4 cup ketchup

Steps:

  • In a stockpot, cook the cabbage, celery and onion in water until tender. Add bouillon, salt, pepper, beef and tomato sauce. Bring to a boil; reduce heat and simmer 10 minutes. Stir in brown sugar and ketchup; simmer another 10 minutes to allow flavors to blend.
