SIMPLE AMERICAN CHOP SUEY
My grandmother always made this for big family gatherings. When I was a kid I always picked out the hamburger, but it's the best part now! This is a pretty quick and easy recipe with no frills, but tastes great.

Steps:
- Boil elbow macaroni until just under cooked or al dente and drain.
- Chop onion and green pepper.
- Brown ground beef in a skillet with chopped onion and green pepper. Do not drain all of the grease. It brings out a lot of flavor.
- Combine macaroni, beef mixture, tomato soup, tomato sauce, and diced tomatoes in large pot.
- Simmer on very low heat and add salt, pepper, and other spices to taste. I add a little bit of garlic powder and italian seasoning for more flavor.
- Serve immediately or store for later.

Add the garlic and cook, stirring, for about 1 minute. Then add the ground beef and continue to cook, stirring and breaking up the chunks of meat with a spoon. Cook until the meat is no longer pink, about 7 minutes. Sprinkle the herbs and pepper over the meat, add salt to taste, and mix in well.
- 2. Add the canned tomatoes with their juices, the tomato sauce, paste, and juice. Add sugar to taste. Simmer while you cook the pasta.
- 3. Bring a large pot of salted water to a boil over high heat. Add the macaroni and cook, stirring occasionally, until al dente. Drain. Mix the macaroni into the chop suey. Serve hot.

MOM'S AMERICAN CHOP SUEY (1950'S BASIC)
A school lunchtime classic. Quick and easy to make. Very bland but has remarkable taste. My sister has tried it and say it's just as she remembers Mom's. All you need to finish this recipe is some Kraft shaker cheese to complete the memory. Mom probably got the recipe from a 1950 vintage Betty Crocker cookbook. Quantities are approximate. Mom seldom measured anything. We usually make a double batch. Enjoy. If you add a bit of garlic powder, chili powder and a can of kidney beans you would create Mom's Chili Mac Recipe.

- Fill a large pot with water, salt the water and bring to a boil. Cook the pasta according to package directions. *You can either finish cooking the pasta and leave it in a colander and use the same pot for the sauce or you can start making the rest of the recipe in a separate pot while the pasta is cooking.
- In a separate pot or the one from the pasta (see note above), add the butter and onion to the pot and saute, stirring frequently, until the onions are translucent, about 4 minutes.
- Add ground beef and cook until browned, you can cook this in a separate pan if you'd like less fat and add it to the onions after cooking.
