EASY BOSTON BAKED BEANS WITH POTATO CAKES



Easy Boston baked beans with potato cakes image

1 tbsp olive oil
150g/5oz cubed pancetta
1 onion, finely chopped
2 cloves garlic, crushed
½ tsp hot paprika
1 tbsp English mustard
1 tsp treacle
splash Worcestershire sauce
300g/10oz canned cherry tomatoes
1 tsp brown sugar
1 tsp tomato purée
1 x 400g/14oz can haricot beans, drained, rinsed
1 tbsp chopped fresh flatleaf parsley, to garnish
2 good quality pork sausages
1 tbsp olive oil
350g/12oz Desirée potatoes, peeled
2 spring onions, finely sliced
1 heaped teaspoon plain flour
1 large knob of butter
2 tbsp olive oil

Steps:

  • For the beans, heat the olive oil in a wide heavy-based pan over a medium-high heat. Add the pancetta and fry for 1-2 minutes, or until starting to crisp at the edges, then stir in the onion and garlic.
  • Fry for 2-3 minutes, until the onion is translucent, then stir in the paprika, mustard, treacle, Worcestershire sauce, to taste, tomatoes, sugar, tomato purée and haricot beans. Bring to a boil and cook for ten minutes, or until the liquid has reduced to a thick consistency. Season with sea salt and freshly ground black pepper
  • Meanwhile, for the meatballs, remove the casing from the sausages and roll the sausage meat into golf ball sized pieces. Heat the olive oil in a frying pan over a medium heat and fry for ten minutes, turning regularly, or until golden-brown and cooked through.
  • For the potato cakes, boil the whole potatoes for five minutes or until just tender. Drain and, when cool enough to handle, coarsely grate into a mixing bowl. Add the spring onions, flour and half the butter. Season with salt and freshly ground black pepper and mix well. Divide into four equal balls and pat into flat rounds.
  • Heat the oil and remaining butter in a large non-stick frying pan over a medium heat and gently fry the potato cakes for 2-3 minutes on each side, or until golden-brown and cooked through.
  • To serve, spoon the beans over the potato cakes and meatballs and garnish with the parsley.

Easy Boston Baked Beans with a rich, sweet sauce.

3 (15.5 ounce) cans white navy beans
10 strips bacon
1 onion (diced)
6 Tablespoons molasses
4 teaspoons salt
1 teaspoon pepper
1/2 teaspoon dry mustard
1 cup ketchup
1 cup brown sugar
2 Tablespoons Worcestershire sauce

Steps:

  • Preheat oven to 325 degrees F.
  • Spray a 9x13-inch baking pan with nonstick cooking spray.
  • Rinse and drain beans, then spread in the bottom of prepared pan.
  • Lay bacon slices on top of beans in the pan.
  • Sprinkle diced onion over bacon.
  • In a saucepan over medium heat, whisk together molasses, salt, pepper, dry mustard, ketchup, brown sugar and Worcestershire sauce.
  • Bring to a boil, remove from heat, then pour over beans in the pan. Use a spoon to spread evenly over the top.
  • Cover dish with foil and bake for 3 hours, or until beans are tender and heated through.

6 cups canned navy beans
1 medium onion, diced
1/4 lb bacon, diced
3/4 cup maple syrup
1/4 cup molasses
1 tablespoon dried mustard
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Combine all ingredients in baking dish or casserole.
  • Add just enough water to cover beans.
  • Cover with lid or foil, and bake at 250 degrees for 5 hours.
  • Remove lid or foil and bake for 1 hour more.

Once hot, add the thick bacon/pancetta, a little pepper, and the chill and fry until cooked through but not crisping. Add the garlic and cook for 2 minutes, then add the onion and cook over low heat until completely tender, about 5 minutes. Stir in half the sugar, then add the vinegar. Boil for 1 minute, then add Worcestershire sauce to taste.
  • Stir in the tomato sauce and season with a good pinch of salt and pepper, the remaining sugar, and a couple of shakes of Worcestershire sauce. Bring to a simmer and cook for 4–5 minutes. Add the beans and cook for a further 5–10 minutes, until the sauce has reduced and thickened and the beans are really soft and tender.
  • Meanwhile, make the potato cakes. Mash the boiled potatoes until smooth (or use a potato ricer), add the butter and mix well. Add 4 tablespoons of the flour along with a pinch of salt and pepper and stir well. The aim is to form a dough, so add a little more flour if necessary.
  • Using your hands, roll pieces of the dough into balls just larger than a golf ball. Place them on a lightly floured work surface and flatten them into little cakes about 1⁄2 in thick. Chill for 20 minutes.
