BROCCOLI-CHEDDAR STUFFED CHICKEN BREASTS



Broccoli-Cheddar Stuffed Chicken Breasts image

I've taken the classic flavors of broccoli Cheddar soup and transformed them into a filling for baked chicken breasts. But feel free to grab whatever cheese, herbs and spices you've got and use those instead. This recipe would also work great with cauliflower and/or any type of cheese that has a decent melt factor. Firmer cheeses like Parmesan and Gruyère would be welcome additions, but I'd steer clear of anything that's extra-soft (think Brie or mascarpone) because we want the filling to stay intact.

3 cups broccoli florets (see Cook's Note)
1 1/2 cups shredded Cheddar cheese
2 ounces cream cheese, at room temperature
1 tablespoon chopped fresh chives or other fresh herbs
Kosher salt and freshly ground black pepper
4 large boneless, skinless chicken breasts (see Cook's Note)
Garlic powder, ground cumin or other spices
4 tablespoons olive oil

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 400 degrees F.
  • Place the broccoli in a microwave-safe bowl then add 2 tablespoons water. Cover the bowl (a large plate works best) then microwave for 2 minutes. Remove the broccoli to paper towels, drain very well and let cool slightly.
  • Chop the broccoli into small, pea-sized pieces then return it to the bowl. Add the Cheddar, cream cheese, chives, 1/4 teaspoon salt and 1/4 teaspoon pepper. Stir until well combined.
  • Arrange the chicken breasts on a cutting board, and using a sharp knife, cut a deep pocket horizontally into each chicken breast without cutting all the way through to the other side.
  • Divide the broccoli mixture among the chicken breasts, pressing it firmly into each pocket.
  • Season the outsides of the chicken breasts on both sides with garlic powder, salt, pepper and any other preferred spices.
  • Divide the olive oil among two ovenproof skillets set over medium heat. Once the oil is hot, add 2 of the chicken breasts to each skillet. Cook the chicken until seared on one side, about 3 minutes, then flip it once and cook until seared on the other side, 2 to 3 minutes.
  • Transfer the skillets to the oven and continue cooking the chicken breasts until the thickest part of each breast reaches 165 degrees F, 10 to 15 minutes.
  • Remove the chicken breasts from the oven and serve.

4 tablespoons olive oil (divided)
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

2 cups chopped broccoli (smaller pieces)
1/2 cup shredded cheddar cheese
6 ounces cream cheese (softened)
1 clove garlic (minced)

Steps:

  • Preheat the oven to 375 degrees.
  • Combine the salt, pepper, onion powder, garlic powder, and paprika in a small dish. Drizzle the olive oil over the chicken breasts. Rub the seasoning mixture on the chicken and coat entirely.
  • Combine the filling ingredients in a bowl. Set aside.
  • Cut out a wide pocket in each chicken breast, being careful not to cut all the way through.
  • Stuff each chicken breast with the filling.
  • Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Once heated, sear the stuffed chicken breasts on each side, but don't cook through. You may need to do this in two batches depending on the size of your chicken breasts. Place all 4 breasts in the skillet and transfer the skillet to the oven.

1 tbs Vegetable Oil
1 Onion, diced
1/3 c All Purpose Flour
3 c Milk

8 oz Cheddar Cheese, grated
1 Sleeve of Butter Crackers (like Ritz)

Steps:

  • Preheat oven to 350°F.
  • Heat a large skillet over medium heat.
  • Add two tablespoons of butter and the vegetable oil to the skillet, then add the broccoli and onion. Saute for ten minutes. Stir occasionally.
  • Transfer the cooked vegetables to a rectangle baking dish.
  • Return the skillet to the burner to make the cheese sauce.
  • Make a roux by adding ½ a stick of butter to the skillet then mix in the flour. Cook the flour mixture for about 3 minutes.

For the longest time, my mum would make this amazing broccoli casserole. It is more like a crustless quiche, but has converted many broccoli haters into broccoli lovers! I have not ever tweaked this recipe - not even to add minced garlic, sauteed onion, pimento, etc; it's too simple and delicious on its own to need tweaking. This can be made ahead and refrigerated before cooking. It freezes well and can be thawed prior to cooking.

2 tablespoons olive oil
1 small yellow onion (, diced)

2 cups broccoli florets
1/4- cup skim milk
1 cup shredded sharp cheddar cheese
1 cup shredded white cheddar cheese

1/2 tablespoon dried parsley

Steps:

  • Preheat oven to 375.
  • Place halved bell peppers in a lightly greased baking dish and set aside.
  • Prepare the rice according to the directions on the package. You will need about 2 cups prepared rice.
  • In the meantime, heat olive oil in a skillet over medium-heat.
  • Add onions and cook for 1 minute.
  • Stir in chopped peppers and season with salt and ground pepper; continue to cook for 3 minutes or until peppers are tender.

Black pepper
Garlic powder 1½ tsp
Ground paprika ¼ tsp
Broccoli florets 1 cup
Red bell pepper ½ cup
Cheddar cheese 1 cup
Mayonnaise 1 tbsp

Steps:

  • Preheat the oven to 425 °F.
  • Generously and evenly, season the chicken on both sides with some salt and pepper, ¼ teaspoon of paprika and ½ teaspoon of garlic powder.
  • Use a sharp knife to slice through the middle of 3 chicken breasts taking care to not cut all the way through and just creating a pocket to stuff and fill.

  • In a large ovenproof skillet over medium heat, heat 2 tablespoons of olive oil and add the stuffed chicken breasts. Cook for about 3-4 minutes on each side, to sear.
  • Cover the skillet with silver aluminum foil and bake in the preheated oven for about 15-17 minutes until the center of the chicken reads 165 °F on a thermometer.
  • Allow to rest for about 5 minutes before serving.

  • Arrange the racks in your oven so that one is in the top half and one is in the bottom half. Preheat the oven to 350 degrees and line a sheet pan with aluminum foil. Use a fork to poke holes around the surface of your potatoes, about 6-8 times each. Sprinkle with salt, to taste. Place the sheet pan on the bottom rack and position the potatoes directly on the rack above it (this way if there are any drippings they will fall on the lined sheet pan and not your oven). Bake for an hour or until cooked through. Remove from the oven and set aside.
  • When the potatoes are done (or almost done), place the butter in a small saucepan and bring over medium-low heat until melted. Add the flour, salt and pepper and whisk to combine. Add the milk a little at a time and whisk the flour mixture into the milk each time until smooth. Add the shredded cheese and whisk into the milk mixture. Cook, whisking on and off, for 1-3 minutes until thickened and remove from heat.
