This is a great quick supper for busy nights, better for you than packaged hamburger meals, and I think it tastes better too! It's really easy to make and my family loves it with biscuits and butter.

1 pound ground beef
1 small onion, chopped
½ small head cabbage, cored and cut into strips
1 (8 ounce) package wide egg noodles
1 (10.75 ounce) can condensed cream of mushroom soup
salt and ground black pepper to taste

Steps:

  • Cook and stir ground beef and onion in a large skillet over medium heat until ground beef is browned and crumbly, about 10 minutes. Drain excess grease.
  • Cook and stir cabbage into ground beef mixture until cabbage is just tender, about 5 minutes.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in egg noodles and return to a boil. Cook noodles uncovered, stirring occasionally, until tender but still slightly firm, about 5 minutes. Drain well.
  • Stir noodles and cream of mushroom soup into the beef and cabbage until heated through; season with salt and black pepper.

Kosher salt and freshly ground black pepper
Olive oil
2 cups thinly sliced yellow or white onions (1/4-inch thick)
3 tablespoons unsalted butter
4 cups thinly sliced green cabbage (1/4-inch thick)
1 1/2 cups low-sodium chicken stock
8 ounces large egg noodles
1/4 cup roughly chopped or torn flat-leaf parsley
1/4 cup sour cream

Steps:

  • Bring a large pot of salted water to a boil.
  • Place a large saute pan over medium-high heat. When the pan is hot, add a film of oil along with the onions and a pinch of salt. Cook, stirring occasionally, until the onions begin to soften and caramelize, 2 to 3 minutes. Move the onions to one side of the pan, and then add the butter, cabbage and a pinch of salt. Cook until everything is caramelized and softened, 4 to 5 minutes. Add the chicken stock. Simmer this mixture until the cabbage is cooked through and the liquid has reduced, about 5 minutes.
  • In the meantime, drop your pasta. Cook at a gentle boil for 2 minutes less than the package directions. Then drain and add to the cabbage mixture. Gently fold in the parsley and sour cream and serve immediately, adding black pepper and a drizzle of oil.

  • Stir cabbage into the bacon mixture; simmer until the thickest pieces of cabbage are fork-tender and the liquid has almost evaporated, about 20 minutes. Drain.

1 lb kielbasa
1 small onion, chopped
3 garlic cloves, chopped
1 cup carrot
olive oil
1 pinch red pepper flakes
sour cream (optional)

Steps:

  • Swirl a small amount of olive oil into a large skillet.
  • Slice or dice kielbasa into bite size pieces.
  • Add kielbasa, onion, garlic and carrots to oil.
  • When kielbasa starts to brown, add cabbage to skillet.
  • When cabbage starts to caramelize, add red pepper flakes.
  • If desired, top with a dollop of sour cream.
