CHIPOTLE SALSA

Two 15-ounce cans diced tomatoes
One 10- or 15-ounce can diced tomatoes with green chiles
1/4 cup fresh lime juice
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon ground black pepper
1 to 3 (depending on your heat tolerance) chipotle peppers in adobo (see Cook's Note)
1 bunch fresh cilantro, stems roughly removed
1 medium onion, diced

Steps:

  • Add the diced tomatoes, diced tomatoes with green chiles, lime juice, cumin, salt, sugar, black pepper, chipotle peppers, cilantro and onions to a food processor and blend until totally combined. Give it a taste to check for seasoning.
  • Make the salsa several hours before serving, as it will give the flavors a chance to dance! Keeps in the fridge, covered, for about a week.

1 10-ounce can petite diced tomatoes with green chilies
2 large handfuls fresh cilantro (about 1/2 bunch)
2 chipotle peppers (from a can in adobo sauce)
1 tablespoon lime juice
1 teaspoon ground cumin
1 teaspoon coarse salt

Steps:

  • Pulse the onion and garlic a few times in a food processor or blender.
  • Add remaining ingredients and continue pulsing until you've reached your desired texture.
  • Adjust seasoning, if necessary.
  • Transfer salsa to mason jars, or container of choice, and store in the refrigerator for up to one week.

1 clove garlic, finely chopped
3 medium plum (Roma) tomatoes, chopped (1 cup)

1 tablespoon chopped chipotle chiles in adobo sauce (from 7-oz can)

Steps:

  • In large skillet, heat oil over medium heat. Cook onion and garlic in oil, stirring frequently, until onion is very soft. Add plum tomatoes; cook 4 to 5 minutes or until tomatoes start to break down.
  • Stir in fire roasted tomatoes and chipotle chiles. Heat to boiling; reduce heat. Simmer uncovered about 10 minutes, stirring occasionally, until thickened. Remove from heat; cool slightly.
  • In food processor or blender, place salsa and cilantro. Cover; process with on-and-off pulses until cilantro is finely chopped. Transfer to serving bowl.
  • Serve salsa with tortilla chips.

2 (14 1/2 ounce) cans diced tomatoes
1 (7 1/2 ounce) can chipotle chiles in adobo
10 garlic cloves (or more)
2 tablespoons dried oregano
1 teaspoon ground cumin
1/4 cup lemon juice, from 1 large lemon
salt and pepper, to taste

Steps:

  • Place tomatoes, with their juice, in a medium non-reactive saucepan. Finely chop or puree the chiles with their liquid and add to the tomatoes. (If a milder sauce is desired, only use half the chiles.) Bring to a boil over medium heat. Reduce heat and simmer, stirring occasionally, about 30 to 45 minutes until reduced by about one--quarter.
  • Meanwhile, thinly slice or mince the garlic cloves. Add with the remaining ingredients during the last 10 to 15 minutes of cooking time. When the salsa has reached the desired consistency, remove from the heat and let cool slightly. Adjust seasoning. and let cool to room temperature. Store in the refrigerator, tightly covered, up to one week or freeze up to 3 months.
  • NOTE: For a smoother consistency, puree all or part of the tomato-chile mixture before adding the other ingredients.
