5 medium apples, peeled, cored, and cubed (see recipe notes for types of apples to use)
1/4 cup sugar (optional, leave out if you prefer unsweetened)
1 teaspoon ground cinnamon (optional)
1 cup water, plus more if necessary

Steps:

  • Peel, core, and cut the apples into small cubes.
  • Combine the cubed apples, sugar, cinnamon, and water in a large skillet. Mix well and bring to a boil, before reducing heat to medium and covering the skillet.
  • Let the apples cook for approximately 20 minutes, until they are soft and translucent and can easily be mashed with a fork or a slotted spoon.
  • Transfer the apples to a high-speed blender or food processor and blend until smooth (skip this step if you prefer a chunkier applesauce).

6 large Gala apples ((also 12 small galas work) )
1-1/2 tsp. ground cinnamon
1/4 cup water
3 tbsp. brown sugar

Steps:

  • Using an apple slicer, cut apple into 8 pieces. Then peel off skins and continue to slice down apples into thinner slices. See article for image. Place all thin apple slices into sauce pan.
  • Add 1/4th cup water and ground cinnamon and mix well.
  • Heat sauce pan on medium low until mixture begins to boil, which takes just a few minutes so do not walk away from the pan.
  • Cover apples with lid and reduce heat to simmer.
  • Cook apples for about 20 minutes or until apples are mushy. Depending on how large your apples are, this could take up to 30 minutes or so.
  • Stir in brown sugar and mash with a potato masher to make a chunky apple sauce or vitamix blender or food processor if you would like it to be creamier
  • Makes 2 cups.

4 granny smith apples
1/2 teaspoon cinnamon (optional)
1 pinch nutmeg (optional or to taste)
1/4 cup water or 1/4 cup apple juice
3 -6 tablespoons sugar (or to taste add in more if you prefer sweeter, can use brown sugar if desired)

Steps:

  • Peel, core and slice the apples.
  • Place apples in a large microwave-safe bowl.
  • Add in 1/4 cup water, cinnamon (start with 1/2 teaspoon) and nutmeg, if using; stir to combine.
  • Cover with heavy microwave-safe plastic wrap (leave a little side opened to allow steam to escape).
  • Microwave on HIGH power for 10 minutes.
  • Remove the bowl and stir the apples, then contine to microwave uncovered until apples are very tender (about 5-6 minutes longer).
  • Using a large fork (I use a potato masher for this) coarsley mash apples to desired texture.
  • Add in sugar to taste while the apples are still hot; mix well to combine.
  • Bring to room temperature and then refrigerate for up to two days, or freeze in plastic freezer containers.

1 1/2 cups Water (divided)

Steps:

  • Peel, core and chop the apples. (I love the corer slicer combo. Makes it so much easier. (affiliate link))
  • Place peels in medium pot with 1/2 cup water.
  • Place apples in large pot with 1 cup water.
  • Cover and cook each on medium high for 10 - 15 minutes, stirring ever few minutes, until it is the mushy-ness you want.
  • Use a potato masher (pictured above) and mash the apples.
  • Use a blender or food processor to blend up the peels.
  • Mix the two parts together. The peel give extra flavor and sweetness to your applesauce. So yummy!

3 tablespoons unsalted butter, cut into ¼-inch chunks
¼ cup plus 2 tablespoons light or dark brown sugar, packed
Ground cinnamon, for serving (optional)

Steps:

  • Preheat the oven to 400°F.
  • Place the apples in a 9x13-inch baking dish. Scatter the brown sugar and chunks of butter evenly over top. Cover tightly with aluminum foil and bake for 45 to 50 minutes, tossing once halfway through, until the apples are very tender.
  • Mash the apples with a potato masher or fork. Taste; if the applesauce is too tart, add more brown sugar little by little until the flavors are balanced. (Note that no two batches will ever be the same; the flavor will depend on the tartness of the apples you use.)

10 lbs apples (very ripe (any variety))
1 1/2 cups water
2 Tbsp granulated sugar ((optional), or add to taste)
cinnamon ((optional), to serve)

Steps:

  • Peel, core and slice all of the apples.
  • Into a large stockpot, add 1 1/2 cups water and 2 Tbsp sugar. Place over medium heat and bring to a boil to dissolve sugar. Add all of the sliced apples, reduce heat to low then cover with lid and cook for 1 hour, stirring occasionally.
  • Mash apples to desired consistency, using either a potato masher, an immersion blender, or an electric hand mixer.
  • Once applesauce is at room temperature, serve with cinnamon if desired. Refrigerate, freeze, or can for longer storage.
  • Wash and sterilize 8 pint-sized jars and lids. Use a ladle and funnel to pour hot applesauce into sterilized jars. Wipe the jar rims clean with a paper towel.
  • Fill a large canning pot 1/3 full with water and bring to a boil. Place applesauce jars into the hot water, making sure they are covered by 1-2 inches of water. Return to a boil and process for 20 minutes.
  • Carefully remove from the water using a jar lifter and place them right side up until they reach room temperature and lid suctions in and seals. The lids should not pop when sealed correctly. If any jars do not form the seal, refrigerate and enjoy within 2 weeks.
