EASY LOW-CARB CAULIFLOWER FRITTERS
These easy low-carb cauliflower fritters have just 2 grams of net carbs and over 5 grams of fat and protein per serving. This quick recipe is not only delicious, but it will also keep you within your daily carb count.

Steps:
- Pulse the cauliflower florets in a food processor until riced.
- Transfer the cauliflower rice to a large mixing bowl and add the salt. Mix and set aside for 10 minutes.
- Add the almond flour, cheddar, parmesan, and eggs to the bowl and mix until well-combined.
- Add the avocado oil (or olive oil) to a frying pan, over low-medium heat.
- Using a ¼ cup measuring cup, scoop the cauliflower mixture from the bowl and form into balls. Place the cauliflower ball onto a spatula and gently press down to form a patty.
- Carefully slide the cauliflower patties from the spatula to the hot pan.
- Cook for 3-4 minutes per side until golden brown, being careful to not flip too early.
- Set cauliflower fritters on some paper towels to remove excess moisture.
- Enjoy warm with a dollop of sour cream and chopped scallions or chives.
- Store in refrigerator. To reheat, bake for 10 minutes at 350°F.

- Grate the cauliflower and put it into a colander, sprinkle the salt on top and mix thoroughly with your hands. Let the cauliflower sit for 10 minutes.
- Meanwhile, chop the onions and place them into a medium bowl. With clean hands, squeeze the water out of the cauliflower and put the cauliflower into the medium bowl with the onions. Add the almond flour, cheese, baking powder and seasoning. Mix thoroughly. Add the three eggs and mix until incorporated.
- Skillet Method: Place a frying pan or skillet over medium heat. When hot, add 1 tablespoon of oil. Using a 1/4 cup measuring cup, scoop out the cauliflower fritter batter and place into the hot skillet. Push down gently with a spatula to make a flattened pancake. Cook 3 minutes per side. Drain on paper towels. Don't flip the fritter until the bottom is well cooked. (I PREFER THIS METHOD HANDS DOWN.)
- Oven Method: Preheat oven to 400 degrees F. Line two cookie sheets with parchment. Measure 1/4 cup of batter per fritter and flatten out into a circle. Bake for 10-12 minutes, flip and bake for 10-12 minutes more.

- In a mixing bowl, beat the eggs together with a fork. Add the riced cauliflower, almond flour, cheeses, garlic powder, salt, and pepper. Mix everything together very well, making sure the egg is completely mixed through the mixture. Set the mixture aside for 10 minutes.
- While the mixture is sitting, heat a large non-stick pan over medium-high heat. Once hot, add the olive oil. Scoop out a 1/4 cup of the cauliflower fritter mixture and place it into the pan. Use the back of a spatula or bottom of the 1/4 cup measurement to flatten out the fritter mixture until it is about 1/2 an inch thick. You can fit around 2 - 3 fritters into the pan at once.
- Fry on each side for about 5 - 7 minutes before flipping. Be very careful not to flip too early as the fritters are quite fragile while cooking in the beginning.
