1 package frozen spinach (cooked, drained, and chopped) or 2 cups of fresh spinach
1 cup bread crumbs
1 ½ cups shredded cheddar cheese
3 eggs

Steps:

  • Heat your oven to 350F Coat a baking sheet with olive oil. Combine all ingredients and mix well. You can add garlic powder, pepper and basil if you wish. Shape the mixture into nuggets and place on the baking tray. Bake for 25 minutes (turn nuggets over after the first 15 minutes).

1 (10 ounce) package frozen chopped spinach, thawed and drained
2 cups dry bread stuffing mix
3 eggs, beaten
¼ cup grated Parmesan cheese
½ onion, chopped
2 tablespoons melted butter
¼ cup shredded Cheddar cheese

Steps:

  • In a large bowl, mix together chopped spinach, dry bread stuffing mix, eggs, Parmesan cheese, onion, butter and Cheddar cheese. Cover and chill in the refrigerator approximately 30 minutes.
  • Drop the mixture by rounded spoonfuls onto a lightly greased large baking sheet. Place baking sheet in the freezer approximately 1 hour.
  • When ready to bake, allow the balls to partially thaw, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking sheet.
  • Bake the balls in the preheated oven 20 to 25 minutes, or until lightly browned.

2 tablespoons water
1 egg
½ teaspoon salt
1 ¼ cups all-purpose flour

Steps:

  • Combine spinach and water in a saucepan. Cover, and cook till spinach is very tender. Cool slightly.
  • Place spinach and liquid in blender container. Add egg and salt. Cover, and blend till smooth. Transfer to a bowl. Add enough flour to make a stiff dough.
  • Turn dough out onto a lightly floured surface. Knead for 1 minute. Roll very thin on a floured surface. Let rest 20 minutes. Roll up loosely. Slice 1/4 inch wide. Unroll. Cut into desired lengths. Spread out on a rack to dry for 2 hours.

3 skinless, boneless chicken breasts, cut into large chunks
¼ cup ranch dressing
⅔ cup panko bread crumbs
⅔ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried parsley flakes

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Cover a baking sheet with aluminum foil; place a wire cooling rack on top and spray with cooking spray.
  • Put chicken into a gallon-size resealable plastic bag. Add ranch dressing; seal and shake bag to coat chicken evenly.
  • Mix panko, Parmesan cheese, garlic powder, and parsley together in a bowl; pour into bag with chicken. Seal and shake bag to coat thoroughly. Remove from bag; place on rack in a single layer.

1 cup seasoned bread crumbs (3/4 cup breadcrumbs and 1/4 cup wheat germ or flax meal is a healthy substitution!)
1 1/2 cups shredded cheddar cheese
3 large eggs or 5 egg yolks

Steps:

  • Heat oven to 375F.
  • 1. Lightly coat a baking sheet with olive oil and set aside.
  • 2. Combine all remaining ingredients and mix well. *Add seasonings if you like - garlic powder, pepper, extra basil & oregano for example. Add a fruit or veggie puree to substitute for the eggs if desired.
  • 3. Shape mixture into nuggets or fun shapes such as squares or squigglies etc.and place on baking tray. Bake for 20 to 25 minutes, turn nuggets over after 15 minutes. Serve warm

3/4 cup seasoned bread crumbs
1/4 cup flax seed meal (if you don't have these things add 1/4 cup more bread crumbs) or 1/4 cup wheat germ (if you don't have these things add 1/4 cup more bread crumbs)
1 1/2 cups shredded cheddar cheese (you could also try cheddar flavored with sundried tomatoes and basil)
3 eggs

Steps:

  • Heat oven to 375.
  • Lightly coat baking sheet with oil or use a non-stick mini muffin pan.
