½ cup finely chopped onion
3 green chile peppers, sliced
2 large eggs

Steps:

  • Heat oil in a skillet over medium heat; add garam masala, turmeric, coriander, and salt. Cook and stir onion and green chile peppers in the seasoned oil until onion is slightly tender, about 5 minutes.
  • Crack eggs into the skillet and season with salt; cook and stir until eggs are set and scrambled, about 5 minutes.

4 Eggs
2 tablespoon Oil
1 teaspoon Cumin seeds (Jeera)
1 Green Chili Pepper
1 Onion (large, 1.5 cups)
1 Tomato ( 0.75 cup)
Cilantro (to garnish)
1/4 teaspoon Ground Turmeric (Haldi powder)
1 teaspoon Coriander powder (Dhaniya powder)
1/2 teaspoon Ground Cumin (Jeera powder)
1/2 Kashmiri red chili powder
1/2 teaspoon Salt (adjust to taste)

Steps:

  • Break the eggs and add to a bowl. Whisk the eggs well and set aside.
  • Heat a pan over medium heat and once it's hot, add oil and cumin seeds. Saute for about 30 seconds until the cumin seeds change color.
  • Add onion and green chili pepper. Saute onions for about 5-7 minutes until they become golden brown in color.
  • Add tomatoes, spices and mix well. Cover with lid so that the tomatoes soften, for about 2-3 minutes.
  • Add the egg mixture and cook for 1-2 minutes, scrambling the eggs until cooked. Keep stirring continuously until cooked. Switch off heat.
  • Garnish with cilantro and serve with pav, roti or paratha.

Egg bhurji is a simple scrambled eggs dish made with spices, eggs & herbs. Serve it with rice, roti or bread.

2 to 3 eggs ((2 large or 3 medium))
¼ teaspoon salt ((more to adjust))
2 tablespoons oil
½ teaspoon cumin seeds ((jeera))
½ to ¾ cup onion (finely chopped)
1 green chili ( slit or chopped)
¾ to 1 teaspoon ginger garlic paste ((or ½ inch ginger & 2 garlic cloves minced finely))
¾ to 1 teaspoon garam masala ( or pav bhaji masala (adjust to taste))
½ to ¾ teaspoon red chili powder ((adjust to taste))
⅛ teaspoon turmeric ((haldi))
2 tablespoons coriander leaves (or 1 sprig curry leaves or 8 mint leaves)
1 small tomato (chopped finely (optional))
¼ cup bell pepper ((capsicum) (optional, can use upto ¾ cup))

Steps:

  • Chop onions & tomatoes finely. Slit green chilli & cube bell peppers (optional).
  • Rinse a bowl and break the eggs to the bowl. This way egg doesn't stick to the bowl.
  • Check for shells. Add salt and turmeric. Beat the eggs until frothy & Set aside.
  • Heat oil in a pan. Add cumin & curry leaves (optional).
  • When they begin to splutters add onions, chilies and fry until golden.
  • Add ginger garlic paste and fry till you get a nice aroma.
  • If using tomatoes, add them to the pan. Fry until they turn soft and oil begins to separate.
  • If using bell peppers, add them now and fry till they are partially soft for 2 to 3 minutes.
  • You can also add garam masala and red chilli powder at this stage.
  • Fry until the masala smells good. I prefer to add the spice powders later after cooking the eggs.
  • Pour the eggs and scramble lightly. Keep cooking, stirring and scramble once more.
  • When the eggs are almost cooked, add garam masala powder & red chili powder. Stir well & fry just for a minute or 2.
  • Taste test and add more salt and red chilli powder if needed.
  • When the eggs are fully cooked, turn off the stove.
  • Garnish egg bhurji with coriander. You can also squeeze little lemon juice.
  • Serve egg bhurji with rice or bread/ pav or chapathi.

6 eggs
¼ cup milk (or water )
1 tablespoon cooking oil
1 large yellow onion (finely diced )
1½ teaspoons kosher salt
2 teaspoons ginger (grated)
2 teaspoons garlic (minced )
¼ teaspoon ground turmeric
2 teaspoons Indian green chilies (minced **)
1 tomato (diced )
3 scallions
1 teaspoon garam masala
½ cup cilantro (finely chopped )
1 tablespoon ghee
4 bread slices

Steps:

  • Chop the scallions and keep the whites and greens seperate.
  • Heat oil in a heavy bottomed pan. Add chopped onions along with half of the salt. Sauté the onions on medium heat until they are translucent and golden brown.
  • Add ginger, garlic, chili and the white scallions to the onions. Cook for 2 minutes, mixing well.
  • Add tomatoes and turmeric to the pan and cook for 2 minutes. Whisk the eggs with milk and remaining salt.
  • Slowly pour the whisked eggs to the pan and keep mixing with a spatula for 5-6 minutes or until the eggs are cooked. Add the garam masala and garnish with chopped cilantro and remaining scallions. Mix well.

2 tablespoons (30ml) vegetable oil
1 medium onion, finely chopped
2 medium tomatoes, finely chopped
3 green chile peppers, slit lengthwise
2 teaspoons ginger-garlic paste (see note)
1 teaspoon red chile powder
1/2 teaspoon turmeric powder
4 large eggs, lightly beaten
Salt
2 teaspoons unsalted butter, divided
1/4 cup chopped cilantro leaves, divided

Steps:

  • In a 10-inch nonstick skillet, heat oil over medium-high heat until shimmering. Add onions and stir until softened, about 5-6 minutes. Add tomatoes, mix well, and cook until most of the excess moisture has evaporated, about 1 minute.
  • Add green chiles and ginger-garlic paste, and stir until fragrant, about 30 seconds. Add red chile powder and turmeric powder, and stir until oil separates from the paste, about 30 seconds, taking care not to burn the paste.
  • Turn the heat to low. Add eggs and salt and gently stir until the mixture begins to form soft curds, about 1 minute. Increase the heat to high and vigorously stir the mixture, breaking bigger clumps of egg apart. Add 1 teaspoon of butter, and stir until melted. Stir in half of the cilantro. Remove from heat, and serve immediately, garnishing with remaining cilantro and butter. Serve with lightly toasted bread.

1 teaspoon Ginger , grated
1 Onion , finely chopped
1 Green Bell Pepper (Capsicum) , finely chopped
2 Green Chillies , finely chopped
1 Tomato , finely chopped
4 Whole Eggs
2 teaspoons Pav bhaji masala
1 teaspoon Turmeric powder (Haldi)
Salt , to taste
1 tablespoon Butter (Salted)
Oil , for cooking
2 sprig Coriander (Dhania) Leaves , finely chopped

Steps:

  • To begin making the Mumbai Style Egg Bhurji Recipe; in a large bowl break one egg at a time and whisk the egg yolks and whites together until light and fluffy.
  • To the egg mixture, add the salt, a teaspoon of pav bhaji masala and a teaspoon turmeric powder. Whisk well until all the ingredients are well combined
  • Preheat a wok on medium heat. To this add in a teaspoon of oil, the grated ginger, the chopped onions, the finely chopped bell peppers and the green chillies. Saute the ingredients until the onions and peppers are soft and tender.
  • Once soft and tender, we will add the chopped tomatoes. The saute the ingredients until the tomatoes are lightly softened. Next add in egg mixture to make the Bhurji.
  • Keep stirring the mixture continuously until you begin to see the eggs coming together and forming a crumbly texture. Continue to stir until the egg is cooked well.
  • Once cooked completely, add another teaspoon of pav bhaji masala and stir well. Finally add a dollop of butter and stir.
  • Transfer the egg Bhurji to the bowl and garnish with freshly chopped coriander leaves
  • Serve the Mumbai Style Egg Bhurji Recipe along with toasted Whole Wheat Pav and Masala Chai Recipe for a delicious Breakfast meal.

Steps:

  • In a bowl whisk the four eggs with salt and red chilli pepper gently and keep this aside.
  • Take 2 tbsp of oil and heat it in cast iron or thick bottomed pan. Add chopped onion, green chillies, cook them on slow heat for 2 -3 minutes
  • Add whipped eggs and keep the whole mix stirring gently till egg starts to set, increase the heat to the medium and cook them for 2 minutes.
  • Add sliced tomatoes, green chilli and some coriander leaves and serve hot with buttered toast, Pav bun or paratha.
