BAKED EGGPLANT STICKS

These Baked Eggplant Sticks are breaded with Italian breadcrumbs and Parmesan, baked or air-fried until golden, and served with a quick marinara sauce.

10 oz eggplant (from 1 small or 1/2 large)
1 tsp olive oil
1/2 tsp kosher salt and fresh cracked pepper
1/2 cup Italian seasoned breadcrumbs ((substitute with gluten bread crumbs if GF))
2 tbsp Parmesan cheese
1 large egg white
oil spray
1 cup quick marinara sauce for dipping (optional, extra)

Steps:

  • Preheat the oven to 450°F. Line two baking sheets with parchment paper and lightly spray with oil.
  • Place eggplant strips in a bowl and season with olive oil, salt and pepper. Set aside.
  • Combine breadcrumbs and parmesan cheese in a bowl, and egg whites in another.
  • Dip a few strips of eggplant at a time into the egg whites, then into the breadcrumbs. Using a fork, remove eggplant from crumbs and place on the baking sheets. Spray with more oil and bake 10 minutes in the middle rack.
  • Turn over and bake an additional 5 minutes, or until golden. Serve hot.
  • Cook in batches, putting the sticks in the basket in an even layer, careful not to overcrowd it. Spritz with olive oil spray. Air Fry at 350F for 10 minutes, turning halfway.

1 large eggplant, cut lengthwise into 1/4-inch slices
Kosher salt
1 cup all-purpose flour
Ground black pepper
2 eggs, scrambled
1 tablespoon grated Parmigiano-Reggiano, plus more for garnish
1/4 cup Italian parsley leaves, roughly chopped
1 1/2 cups breadcrumbs
1 cup vegetable oil
3 to 4 medium tomatoes, sliced
Garlic powder
Fresh basil leaves
Extra-virgin olive oil
Balsamic vinegar
1 pound cow mozzarella (not buffalo), sliced
1/2 cup arugula

Steps:

  • Salt the eggplant on each side and let it drain in a colander for about 30 minutes to get the bitterness out. Place something heavy, like a frying pan, on top to get the moisture out.
  • In a medium bowl, place the flour, 1 teaspoon salt and 1 teaspoon pepper. In a second medium bowl, add the eggs, Parmigiano-Reggiano, half of the parsley and some salt and pepper, and whisk together. In a third medium bowl, add the breadcrumbs and the remaining parsley and toss together. Coat the eggplant slices in the flour, then in the egg mixture and then in the breadcrumbs.
  • Heat the vegetable oil in a skillet and fry the eggplant slices until they're crisp and golden brown. Don't crowd the pan. Let them drain on a paper towel to get excess oil off.
  • Top 1 slice of eggplant with 1 slice of tomato, and then season with salt, pepper and garlic powder. Add 3 basil leaves, top with extra-virgin olive oil and balsamic vinegar and a slice of mozzarella. Repeat the process with the remaining ingredients.
  • In a large bowl, toss the arugula with some salt, pepper and extra-virgin olive oil. Add to the top of the stacks and add more Parmigiano-Reggiano on top. Season with salt and pepper.

OVEN-FRIED EGGPLANT STICKS

Try this easy, low-fat version of fried eggplant sticks, breaded and baked, and ready after half an hour in a hot oven.

2 tablespoons plus 1/2 teaspoon fine sea salt ( divided )
2 globe eggplants
2 cups fresh breadcrumbs
1/4 teaspoon freshly ground black pepper
Optional: Pinch of cayenne
2 teaspoons vegetable oil
2 eggs

Steps:

  • Gather the ingredients.
  • In a large bowl dissolve 2 tablespoons of the salt in 1 cup warm water. Add 2 quarts (8 cups) cold water. Set aside.
  • Trim the eggplants and cut them into 1/2-inch-thick, 3- to 4-inch-long sticks. Some people find eggplant skin difficult to digest; you can remove and discard the peel if you like. Put the sticks in the salt water, use a pot lid or an upside-down plate to submerge them and keep them under the water (they will want to float), and let them sit 30 minutes. (Why are you doing this? It's called brining , and it magically helps eggplant hold its shape when you cook it.)
  • Meanwhile, in a medium bowl, combine the breadcrumbs, the remaining 1/2 teaspoon of salt, plus the pepper and cayenne, if you like. Add the oil and use your fingers to work the oil into the breadcrumb mixture. Transfer the mixture to a large plate or shallow bowl. Set aside.
  • Whisk the eggs to break them up completely; seriously whisk them, you don't want any blobs of egg white in there. (When you lift the whisk up it should be as lifting it out of the water.)
  • Preheat an oven to 425 F. Liberally oil a large baking sheet (or use a nonstick one).
  • Drain and thoroughly dry the eggplant sticks by patting them with paper towels or a clean kitchen towel.
  • Keeping one hand dry and one hand wet, dip an eggplant stick in the eggs, lift in out and shake off any excess egg, put the stick in the breadcrumb mixture and coat the eggplant stick completely, lift it out and shake off any excess bread crumbs, transfer the stick to the prepared baking sheet. Repeat with the remaining sticks.
  • Bake the eggplant, turning once, until browned, crispy, and tender to the bite, about 30 minutes. Serve hot.

1 small onion, chopped
1 garlic clove, minced
4 teaspoons canola oil, divided
2 medium tomatoes, peeled and chopped
1 tablespoon lemon juice
1 teaspoon dried basil
1/4 teaspoon salt
1/8 teaspoon ground cinnamon
1/8 teaspoon pepper
1 small eggplant, cut into 1/4-inch slices
1/3 cup shredded Swiss cheese

Steps:

  • In a small skillet, saute onion and garlic in 1 teaspoon oil until tender. Stir in the tomatoes, lemon juice, basil, salt, cinnamon and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes., Meanwhile, brush eggplant slices with remaining oil. Broil 4 in. from the heat for 1-2 minutes on each side or until lightly browned. Spread 2 tablespoons sauce mixture into a greased 3-cup baking dish. Top with half of the eggplant slices. Spread with 1/2 cup sauce mixture. Repeat layers., Cover and bake at 350° for 20 minutes. Uncover; sprinkle with cheese. Bake 5-10 minutes longer or until cheese is melted.

Yield Serves 2 as a main course or 4 as a side dish

Number Of Ingredients 5

1- to 1 1/4-pound eggplant
2 teaspoons coarse salt
4 tablespoons dried-tomato pesto
1/4 pound freshly grated Monterey Jack cheese (about 1 cup)
4 tablespoons freshly grated Parmesan (about 1 ounce)

Steps:

  • Cut eggplant crosswise into twelve 1/3-inch-thick slices, discarding ends, and arrange in one layer on paper towels. Sprinkle both sides of slices evenly with salt and cover with another layer of paper towels. Let eggplant stand 30 minutes. Pat eggplant dry.
  • Preheat oven to 375°F. and oil a shallow baking pan.
  • Arrange 4 eggplant slices in one layer in pan and spread each slice evenly with 1 teaspoon pesto. Sprinkle 2 tablespoons Monterey Jack evenly over pesto on each slice. Continue to layer remaining eggplant slices, pesto, and Monterey Jack in same manner. Sprinkle 1 tablespoon Parmesan evenly over each stack and bake in middle of oven until eggplant is tender, 20 to 25 minutes.
