1 cup tightly packed dried dates
1 1/2 cups tightly packed raisins
3/4 cup sweet red wine
1/2 cup chopped walnuts for garnish.

Steps:

  • Preparation Finely chop dates and raisins. Put them in a heavy bottomed pot with enough water to cover and leave them to soak overnight. The next day, bring them to a boil in the same water. Simmer over very low heat, stirring occasionally with a wooden spoon to prevent the fruit from burning, and squashing it to a smooth, thick paste against the sides of the pan. Continue cooking and stirring until all the liquid is dissolved, 10 to 15 minutes. Set aside to cool. Remove to a serving bowl. Stir in the wine and garnish with walnuts just before serving.

  • In a large bowl, toss apples and walnuts with wine. Mix sugar and cinnamon; sprinkle over apple mixture and toss to combine., Refrigerate, covered, 1 hour before serving. If desired, serve with matzo crackers.

1 pear, peeled, cored, and chopped
3 apples, peeled, cored, and chopped
3 bananas, peeled and mashed
2 cups pitted dates (about 1 lb)
2 cups sliced or slivered almonds (about 8 oz)
2 tablespoons ground canela (see Tips, below)
1 cup sweet red wine, such as Manischewitz Extra Heavy Malaga, plus additional if needed
Matzoh or corn tortillas

Steps:

  • Combine all ingredients in food processor and purée. Transfer mixture to large saucepan and simmer over low heat, stirring frequently, until thickened, about 15 to 20 minutes. Cool completely, then chill, covered, until cold. Serve with matzoh or corn tortillas.

160g walnut halves
3 apples, such as Pink Lady or Royal Gala
1½ ground cinnamon
1 tbsp lemon juice
2 tbsp honey or silan
1 tsp grated orange zest
50ml - 60ml sweet red wine, or grape juice

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Toast the walnuts until dark and fragrant, about 7-10 mins, taking care not to burn them. Allow to cool, then chop finely.
  • Peel, core and finely chop the apples. Mix with the cinnamon, lemon juice, silan (date syrup), orange zest, sweet wine or grape juice and salt. Add the cooled nuts and stir again to combine. Transfer it to a closed container and keep chilled.

2 apples, cored and quartered
3 bananas, broken into chunks
1 cup dates, pitted
1 cup chopped walnuts
1 orange, zested and juiced
lemon, zested and juiced
2 teaspoons ground cinnamon
2 teaspoons white sugar
⅓ cup dry red wine
2 tablespoons matzo meal, or as needed

Steps:

  • Blend apples, bananas, dates, walnuts, orange zest and juice, lemon zest and juice, cinnamon, and sugar in a food processor until chunky. Transfer apple mixture to a bowl and stir in wine. Gradually stir matzo meal into apple mixture, adding enough to soak up the wine; chill in refrigerator.

Number Of Ingredients 6

100ml-120ml sweet dessert wine, red wine or grape juice
110g raisins
55g medjool dates, or regular dates, finely chopped
55g dried apricots, finely chopped
large pinch of cinnamon, plus extra to taste (optional)
60g whole almonds, toasted

Steps:

  • Heat 100ml wine or grape juice in a pan. Bring to a simmer and add the dried fruit and cinnamon. Simmer gently until the liquid is syrupy and the fruit tender, about 5-6 mins. If the liquid evaporates before the fruit has softened or starts to dry out, add another 20ml of wine or grape juice. Turn off the heat and leave to cool.
  • Tip the toasted almonds into the small bowl of a food processor and pulse until you have larger and smaller pieces, but no whole nuts. Tip them into a mixing bowl, then spoon the cooled fruit mixture into the food processor and pulse until it starts to form a paste, but still has some bigger lumps of fruit remaining.
  • Scrape the fruit into the mixing bowl with the nuts and stir to combine. Add a pinch of salt and taste, adding more cinnamon and salt to taste, if you like. Will keep for several days in an airtight container.
