- Calienta el horno a 425°F.
- Desenrolla 1 corteza para tarta (pay) sobre la superficie de trabajo; recorta 11 círculos utilizando un cortapastas (molde para cortar panecillos) de 3-1/2 pulgs. y volviendo a enrollar los recortes que sobren según haga falta. Repite el procedimiento con la otra corteza.
- Mezcla bien la piña, las fresas y el polvo seco del pudín; pon esta preparación en el centro de los círculos, agregando aproximadamente 1-1/2 cda. a cada uno. Pincela los bordes con un poco de agua; dobla los círculos para envolver el relleno. Sella los bordes con un tenedor.
- Coloca las empanadas en una charola (bandeja) para hornear que hayas forrado con papel para hornear (parchment paper); barnícelas con el huevo. Hazles cortes por arriba para que se ventilen; espolvoréalas con el azúcar.
- Hornéalas de 12 a 13 min. o hasta que estén bien doraditas.

Steps:
- In a large saute pan, heat the olive oil. Saute beef and pork until cooked. Strain the meat from the fat and reserve. In the same pan, saute the onions until soft, about 5 to 8 minutes. Add the cooked meat to the onions, and saute 5 minutes. Add the curry powder, cilantro, and spinach and saute for 5 minutes. Remove the mixture from the stove and mix in the goat cheese until completely incorporated. Season with salt and pepper and cool to room temperature.
- Preheat the oven to 350 degrees F.
- Lay out the chilled cut dough on a cutting board. Spoon a small amount of the stuffing into the center of the dough. Fold the top over the bottom and crimp all the way around with a fork. Lay the empanadas on a sheet pan. See Chef's Note. Bake for 15 minutes or until dough appears crispy.
- Chef's Note: At this point the empanadas can be refrozen for future use.

- Mix all ingredients except preserves.
- Knead into dough, roll out and cut with biscuit cutter, making a round circle.
- Place slightly less than a teaspoon of preserves in each cut shape.
- Fold and crimp edges together with fork.
- Bake on a cookie sheet at 350 degrees F until light beige, about 12 minutes.
- After baking, roll in confectioners' sugar.

- Preheat oven to 325 degrees F (165 degrees C). Place sugar in a bowl.
- Place flour in a large mixing bowl. Begin working butter into flour slowly until fully incorporated. Repeat process gradually with cream cheese, kneading dough until uniform and no longer crumbly. Form into 1 inch balls, then flatten with a rolling pin to a thickness of 1/8 inch. (This may also be done by rolling out the entire amount of dough and cutting rounds with a biscuit cutter.)
- Place 1 tablespoon preserves on each dough center. Fold over, and seal with fingers or press to seal with a fork. Place cookies on a parchment paper-lined cookie sheet.
- Bake in the preheated oven for approximately 12 to 15 minutes. Cookie will remain white and should not be browned, and it is normal for some filling to leak from the cookie. When cookies are cool enough to handle, roll in sugar until evenly coated. Transfer to a platter to cool completely.

- DAY BEFORE: Cream butter and cream cheese together until smoothly blended. Beat in the flour. Shape dough into a smooth ball, wrap in foil or cling wrap, and refrigerate overnight or up to a week.
- AT BAKING TIME: Remove dough from refrigerator 30 minutes before using. Start heating oven to 375 degrees F (190 degrees C).
- Roll chilled dough thin. Cut with 3 or 4 inch round cookie cutter. Place small spoonful of jam in center of each round, moisten edges with water.
- Fold round over and press edges together. Bake on ungreased cookie sheet 15 to 20 minutes. Immediately roll in sugar mixed with cinnamon (traditional) OR in confectioners' sugar if preferred.
