Ingredients

1/2 tablespoon lemon juice
1 1/2 tablespoons sherry vinegar
3/4 teaspoon Dijon mustard
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
4 tablespoons fruity Spanish olive oil
3 oranges, peel and pith removed, cut into segments
3 avocados, preferably Haas
1/2 bunch fresh mint, leaves only

Steps:

In a small bowl, whisk together the lemon juice, vinegar, mustard, pepper, and salt. Drizzle in the olive oil in a slow, thin stream, whisking all the time until the dressing is emulsified.
Peel the avocados and cut them into segments approximately the same size as the oranges. Combine the avocados and oranges in a bowl and toss them gently with just enough dressing to coat. Mound some of the salad on each plate and scatter some mint leaves over the top. Serve immediately.

Pela la jícama con un cuchillo o retira las pieles colocando el cuchillo en la parte superior de la jícama y tirando de las pieles. Elimina cualquier exceso de piel con un pelador de papas. Corta la jícama en pequeños trozos de tamaño mordisco, colócala en un tazón grande y exprima la mitad del jugo de limón sobre ella para evitar que se oscurezca y para agregar sabor. Deja de lado.
Pela las naranjas, córtelas en rodajas y luego corte las rebanadas en cuatro. Agrégalas a la jícama.
Pela las mandarinas con las manos, sepárelas en cascos. Para quitar las semillas, corte a lo largo del borde de la columna lateral de cada casco, como se muestra en la imagen. Una vez que los corte, las semillas saldrán fácilmente. Coloca todos los cascos de mandarina en el tazón con el resto de la fruta.
Ahora, en un recipiente más pequeño, mezcla el jugo de naranja, el jugo de toronja, el resto del jugo de limón, el chile molido, el cilantro y la sal. Mezcla bien y vierta sobre la fruta. Revuelve suavemente todo. Puedes refrigerar esta ensalada por un par de horas para permitir que los sabores se mezclen, o puedes comerla inmediatamente.
