EVERYDAY FRENCH TOAST RECIPE

- 1. Adjust 1 oven rack to lowest position and second rack 5 to 6 inches from broiler element. Heat oven to 425 degrees. Generously spray bottom and sides of 18 by 13-inch rimmed baking sheet with vegetable oil spray. Whisk eggs, vanilla, sugar, cinnamon, and salt in large bowl until sugar is dissolved and no streaks of egg remain. Whisking constantly, drizzle in melted butter. Whisk in milk. 2. Pour egg mixture into prepared sheet. Arrange bread in single layer in egg mixture, leaving small gaps between slices. Working quickly, use your fingers to flip slices in same order you placed them in sheet. Let sit until slices absorb remaining custard, about 1 minute. Bake on lower rack until bottoms of slices are golden brown, 10 to 15 minutes. Transfer sheet to upper rack and heat broiler. (Leave sheet in oven while broiler heats.) Broil until tops of slices are golden brown, watching carefully and rotating sheet if necessary to prevent burning, 1 to 4 minutes.
EASY FRENCH TOAST
A real treat for Sunday brunch! We garnish the toast with a light sprinkle of confectioners' sugar and serve it with maple syrup. For a special treat you can substitute Amaretto for the vanilla.

- 1. Adjust oven rack to middle position and heat oven to 300. Place bread on wire rack set in rimmed baking sheet. Bake bread until almost dry throughout (center should remain mostly moist), about 16 minutes, flipping slices halfway through cooking. Remove bread from rack and let cool 5 minutes. Return baking sheet with wire rack to oven and reduce temperature to 200 degrees. 2. Whisk milk, yolks, sugar, cinnamon, 2 tablespoons melted butter, salt, and vanilla in large bowl until blended. transfer mixture to 9x13 pan. 3. Soak bread in milk mixture until saturated but not falling apart, 20 seconds per side. Using firm slotted spatula, pick up bread slice and allow excess milk mixture to drip off; repeat with remaining slices. Place soaked bread on another baking sheet or platter. 4. Heat 1/2 tablespoon butter in 12 inch skillet over medium low heat. When foaming subsides, use slotted spatula to transfer 2 slices soaked bread to skillet and cook until golden brown, 3 to 4 minutes. Flip and continue to cook until second side is golden brown, 3 to 4 minutes longer. Transfer to baking sheet in oven. Wipe out skillet with paper towls. Repeat cooking with remaining bread, 2 pieces at a time. Almond-Crusted French Toast Process 1/2 cup slivered almonds and 1 Tablespoon light brown sugar in food processor until coarsely ground, 12 to 15 one-second pulses. Follow recipe above, adding 1 tablespoon triple sec and 2 teaspoon grated orange zest to milk mixture in step 2. Sprinkle 1 tablespoon nut mixture over one side of each soaked bread. Follow cooking directions in step 4, starting with nut mixture side down.

- Preheat a nonstick electric griddle to 300°F (150°C). (Alternatively, heat a large nonstick skillet over medium-low heat.)
- In a large bowl, whisk the eggs until well combined. Add the milk, heavy cream, brown sugar, salt, cinnamon, and vanilla bean paste and whisk until completely combined.
- Working in batches, dip each slice of challah in the custard, letting soak for 20-60 seconds on each side, until fully saturated but not soggy.
- Lightly grease the griddle with butter. Once melted, add the soaked challah on the griddle and cook, without disturbing, until golden brown and crispy, about 2 minutes. Use a flat spatula to flip the bread and continue cooking until the other side is golden brown, 2 minutes more. Wipe the pan clean between batches and add more butter as needed.
