4-INGREDIENT HOLIDAY TRUFFLES RECIPE BY TASTY
Here's what you need: full-fat coconut milk, dark chocolate, vanilla extract, kosher salt, cocoa powder, pistachio, unsweetened coconut flake, hazelnut, freeze-dried strawberry, matcha powder

Steps:
- Make the truffles: In a small saucepan over medium heat, bring the coconut milk to a simmer. Pour the warm coconut milk over the chopped chocolate in a heatproof bowl and stir until melted and smooth. Add the vanilla and salt and use a rubber spatula to combine.
- Cover and cool in the refrigerator for 2 hours, until set. When you press the mixture with your fingertip, it should create create an indentation. Do not chill for too long--the mixture will be extremely difficult to scoop if it hardens too much.
- Using a 1 tablespoon measuring spoon, portion out the truffle mixture and place onto the baking sheet.
- Roll each truffle between your palms to create a sphere. Your hands will get messy during the process. The outside should be slightly tacky from the heat of your palms. This will help the topping stick best. If they get too soft, place in the fridge for 10 minutes. Roll the truffles in your toppings of choice.
- Serve immediately or refrigerate for 1 hour for firmer truffles. The uncoated truffle balls will keep in the fridge for up 10 days. Coat in the toppings just before serving.

Just as cream comes to a boil, strain over chocolate and butter. Discard beans. Whisk chocolate until smooth and shiny. 3. Scrape chocolate mixture into loaf pan. Fold over plastic wrap to cover. Refrigerate until firm, 3 hours. 4. Sift half the cocoa powder onto a cutting board. Unwrap truffle block onto cocoa. Sift remaining cocoa powder over the top. Cut block into 36 1-inch cubes. Toss to dust all sides with cocoa powder. Refrigerate or freeze.

- In a small saucepan, bring cream, butter, and corn syrup to a full boil overmedium heat. Turn off heat. Add 1 poundchocolate; gently swirl pan to coverchocolate with cream, but do not stir. Let stand, undisturbed, 5 minutes.
- Slowly whisk until combined. Transfer mixture to a large bowl; refrigerate,stirring every 15 minutes.
- After 45 minutes, mixture will thickenquickly, so stir every 3 to 5 minutes untilthick enough to scoop, 10 to 20 minutesmore. Using two spoons or a small ice-cream scoop, form into 1-inch balls; transfer to a parchment-lined baking sheet.
- Chill until firm, but not hard, about 10minutes. Remove from refrigerator; rollin palms to form a ball, and press gentlywith fingers to create irregular shapes.Chill until ready to dip, up to 1 week.Place remaining 12 ounces chocolate ina heatproof bowl over a pan of simmeringwater; stir occasionally until chocolatemelts. Remove from heat; cool slightly.
- Place cocoa in a small bowl. Removecenters from refrigerator. Using onehand, dip one center into melted chocolate, then roll around in your hand tocoat evenly, letting excess drip back intopan. Place truffle in cocoa. With yourclean hand, cover truffle with cocoa. Letsit in bowl 20 seconds.
- Lift out, and set on a parchment-linedbaking sheet. Repeat with remainingtruffles. If your kitchen is warm, refrigerate 5 minutes to set. You can storetruffles in airtight containers up to 1week at a cool room temperature.

- Line a loaf pan with a long piece of plastic wrap.
- Finely chop chocolate and place in a mixing bowl with butter, cut into small pieces.
- Heat espresso beans and cream in a pan. When cream comes to a boil, strain over chocolate and butter. Discard beans.
- Whisk chocolate mixture until smooth and shiny.
- Place chocolate mixture into prepared loaf pan. Cover with the overlap of plastic wrap. Chill for 3 hours.
- Sift half of the cocoa powder onto a clean, dry cutting board.
- Unwrap truffle block onto cocoa.
- Sift remaining cocoa powder over the top of the truffle block.
- Cut into 36 one-inch cubes.
- Toss to dust all sides with cocoa powder.
- Take two and hide the rest from the children.
