THE BEST MEATLOAF I'VE EVER MADE
When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
- In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
- Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
- In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

- Preheat oven to 350°F.
- In large bowl, put the bread crumbs, onions, pepper, garlic, the Worcestershire sauce, red hot sauce, make a well in the center break the egg, meat and ketchup. Now is when it gets messy -- you want to mix all the items together.
- Put meatloaf mixture in a greased pan. Smear the topping mixture on top. Place in the preheated oven.
- Bake for 50 minutes. When that is done, take out the meatloaf. If you want to, place 1/2 cup of shredded cheddar cheese on top. Bake till the cheese is melted.

- Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, combine the ketchup, brown sugar, 1 tablespoon lemon juice and mustard powder.
- In a separate large bowl, combine the ground beef, bread, onion, egg, bouillon, remaining lemon juice and 1/3 of the ketchup mixture from the small bowl. Mix this well and place in a 5x9 inch loaf pan.

- Beat egg, vegetable juice, sour cream, Worcestershire sauce, sage, parsley, oregano, salt, black pepper, and hot pepper sauce in a large bowl. Stir in oats and allow to soak.

INDIGO'S FABULOUS MEATLOAF!
This was my first try at making meatloaf, and boy, was I suprised at how good this was! I have been craving it ever since, and it made so much, I froze two extra loaves for later! Yummy yummy yummy! (I also love love garlic, so you can add less if it's too much for you!) It's very moist and flavorful!!! You can soak up some of the grease beforehand if you place slices of bread in the loaf pan before the meat goes in, but I found that it wasn't too bad, and I like the juices!

- Preheat oven to 350°F.
- In a large skillet cook onion, garlic, celery, carrot, and scallion in butter over moderate heat, stirring, 5 minutes. Cook vegetables, covered, stirring occasionally, until carrot it tender, about 3 minutes more.
- Stir in salt and pepper, 4 tsp Worcestershire sauce, and 1/3 cup of ketchup and cook and stir for about one minute.
- In a large bowl mix vegetables, meats, bread crumbs, eggs, and parsley. In a loaf pan or shallow baking pan form mixture into 1 10-by 5-inch oval loaf and spread remaining 1/3 cup ketchup, barbecue sauce, and worcestershire over loaf. (I used 3 smaller loaf pans to easily freeze the two portions I wouldn't be eating that night, it worked perfectly!).
- Bake meat loaf in oven 1 hour, or until a meat thermometer registers 155°F.

OUR FAVORITE MEATLOAF
This ultimate meatloaf recipe took rounds and rounds of testing to get just right. Our final version incorporates an ideal blend of seasoned ground beef and pork, aromatics, and breadcrumbs and bakes in a freeform loaf on a baking sheet instead of in a loaf pan for maximum browning. - Position rack in center of oven; preheat to 350°F. Line a rimmed baking sheet or 13x9" shallow baking dish with foil. Soak breadcrumbs in milk in a large bowl until ready to use.
- Pulse onion, celery, and garlic in a food processor until finely chopped. (Alternatively, you can finely chop by hand.)
- Heat oil in a large skillet over medium. Add onion mixture, 1 tsp. salt, and 1/2 tsp. pepper. Cook, stirring occasionally, until softened, 5-7 minutes. - Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. MEATLOAF - FABULOUS - 30 MINUTE MEAL
Delicious meatloaf! This is now my favorite way of making this dish. My hubby doesn't usually like meatloaf, but "loves" this one. Wonderful texture - great flavor, try it, you will love it. I tried this after a neighbor gave me a recipe, I didn't have 3 of the ingredients so I improvised - the new version is lots better than the original!

- Toast 3 slices of bread, butter and sprinkle with garlic powder, garlic salt and oregano - allow to sit approximately 10 minutes.
- Mix toast with beef broth and seasonings in a medium bowl. After well mixed add ground beef. Mix only until well combined.
- Pat meat mixture into an 8x8x4 glass baking dish.
- Microwave on high for 7 minutes, drain off juices, microwave another 5 minutes on high. Again drain off juices.
- While meatloaf is cooking, combine topping ingredients.
- Frost cooked meatloaf with topping mixture. Microwave an additional 5 minutes on high.
- Allow meatloaf to sit 10 minutes before serving.
- Enjoy!
