Steak Fajita Salad with Avocado Dressing image

A delicious salad using fresh ingredients and topped with perfect avocado dressing.

1 Flank Steak
1 1/2 Cup Rice (cooked (we add a little fajita seasoning in while it's cooking for more flavor))
Lettuce (chopped)
Grilled Corn (sliced off the cob)
Sauteed peppers and onions (sliced)
Tortillas (cooked)
Medium Cheddar Cheese (grated)
1/2 Avocado
Juice of 1 lemon
1 Teaspoon garlic (minced)
2 Tablespoons Mayonnaise
2 Tablespoons Honey
1/4 Teaspoon Cumin

Steps:

  • Heat a grill to medium high heat and sprinkle salt and pepper on each side of the meat. Cook for 6 to 8 minutes per side, remove from the grill and let rest for 2-3 minutes before slicing thin on the diagonal.
  • Meanwhile, in a blender combine all of the dressing ingredients and blend until smooth. Set aside.
  • To assemble: Sprinkle a little cheese on a tortilla and warm in a skillet until the cheese melts. Place the cheese tortilla in a bowl and top with rice, steak, corn, peppers and onions and lettuce. Drizzle with the dressing and enjoy!

1 beef flank steak (1-1/2 pounds)
1 large onion, cut into wedges
1 medium green pepper, julienned
1 can (4 ounces) chopped green chiles
1/2 cup lemon juice
1/2 cup cider vinegar
1/2 cup vegetable oil
4 garlic cloves, minced
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
12 flour tortillas (6 inches), warmed
1 medium avocado, peeled and sliced, optional
Sour cream, optional

Steps:

  • In a shallow dish, add beef. In another shallow dish, add the onion and green pepper. , In a large bowl, combine the chiles, lemon juice, vinegar, oil, garlic, Worcestershire sauce, oregano, salt and pepper. Pour 1-1/2 cups over meat. Pour remaining marinade over vegetables. Cover and refrigerate overnight. , Drain meat and vegetables, discarding marinade. Grill steak, covered, over medium-hot heat for 10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). , Meanwhile, cut 2 pieces of heavy-duty foil into 18x12-in. rectangles. Wrap tortillas in 1 piece and vegetables in the other; seal foil tightly. Grill, covered, over indirect heat for 5-7 minutes, turning occasionally. , Cut steak into 1/8-in. slices across the grain; place on tortillas. Top with vegetables and roll up. Serve with avocado and sour cream if desired.

Beef fajitas are delicious served with a lot of condiments on the side. My favorites are guacamole, extra cilantro, and beans and rice!

1 pound lean steak, cut into strips
½ cup fresh lime juice
½ tablespoon ground black pepper
1 tablespoon chopped fresh cilantro
2 tablespoons vegetable oil
1 large onion, cut into thin strips
1 julienned green bell pepper
2 lemons, quartered
salt and pepper to taste
6 (12 inch) flour tortillas

Steps:

  • Combine the lime juice, ground pepper and cilantro in a shallow dish. Place steak strips into the marinade and refrigerate for two to four hours.
  • Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add steak strips, and fry until cooked to your liking. Remove meat and set aside.
  • Add remaining oil and onions to the skillet. Cook over medium low heat, until translucent, stir in green peppers and steak. Squeeze the juice of 1 lemon over the top and stir. When the green bell peppers are just tender remove the pan from the heat. Season with salt and pepper to taste. Serve the steak fajitas with tortillas and lemon wedges on the side.

2 pounds sirloin steak (cut into bite-sized pieces)
2 Tablespoons olive oil
1 Tablespoon chili powder
2 teaspoons cumin
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 red bell pepper (cut into bite-sized pieces)
1 green bell pepper (cut into bite-sized pieces)
1 yellow bell pepper (cut into bite-sized pieces)
1 onion (cut into bite-sized pieces)
2 avocados (halved and pitted)
1 cup fat-free sour cream
2 teaspoons minced garlic
2 Tablespoons lime juice
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat grill to high heat.
  • Cut steak into bite-sized pieces and place in a medium-sized mixing bowl.
  • Pour olive oil over steak and toss until evenly coated.
