I have a huge fig tree that produces an abundance of figs. One year I tried drying some and developed this sweet and smoky recipe as a result. Now it's a regular at family gatherings. -Greg Fontenot, The Woodlands, Texas

2 pork tenderloins (about 3/4 pound each), trimmed and silver skin removed
1 tablespoon smoked paprika
1 teaspoon salt
1 teaspoon pepper
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon white pepper
1/4 teaspoon cayenne pepper
1/4 cup balsamic vinegar
3 tablespoons honey
1 tablespoon Dijon mustard
2 teaspoons olive oil
12 dried figs, halved
12 cherry tomatoes
1/2 cup crumbled blue cheese
4 fresh basil leaves, thinly sliced

Steps:

  • Cut pork into 1-in. cubes. Combine next seven ingredients; rub over pork. Refrigerate, covered, until ready to grill. Meanwhile, make a glaze by whisking vinegar, honey, mustard and oil. Set aside., On water-soaked wooden skewers, thread pork cubes and fig halves. Grill, covered, on a greased rack over medium-high direct heat, turning occasionally, until a thermometer reads 145°, 8-10 minutes. During last half of grilling, brush cooked surfaces frequently with glaze., Let skewers stand for 5 minutes; add a tomato to each. Transfer to a serving platter and sprinkle lightly with blue cheese and basil.

Number Of Ingredients 8

4 duck breasts
2 tablespoons olive oil
2 ripe pears, halved, cored, cut into 1/4-inch slices
1 10-ounce bag pearl onions, blanched, peeled, halved
4 medium Yukon Gold potatoes (about 1 1/2 pounds), boiled until just tender, peeled, cut into 1 1/4-inch pieces
2 tablespoons chopped fresh sage
3/4 cup low-salt chicken broth
1/2 cup fig balsamic vinegar

Steps:

  • Using small sharp knife, score duck skin in 1-inch-wide grid pattern. Season duck generously with salt and pepper. Heat oil in large skillet over medium-high heat. Add duck; cook about 6 minutes per side for medium. Transfer to cutting board; tent with foil. Discard all but 1/4 cup drippings from skillet. Heat drippings in skillet over high heat. Add pears, onions, and potatoes; sauté until beginning to brown, 5 minutes. Stir in sage; season with salt and pepper. Transfer hash to bowl; cover to keep warm.
  • Heat same skillet over high heat. Add broth and vinegar; bring to boil, scraping up browned bits. Boil until reduced to glaze, about 5 minutes. Season glaze with salt and pepper.
  • Divide hash among plates. Cut duck into 1/2-inch-thick slices; fan over hash. Drizzle glaze over and serve.

This makes a fantastic side dish to a prime-rib beef roast or a pork roast dinner, or to any beef or pork dish! This will serve about 6 people but can easily be doubled. Use a large package of frozen pearl onions for this recipe, and also fresh pearl onions can be used, just blanch in boiling water, cool then peel.

9 cups frozen pearl onions
2 tablespoons olive oil
1 cup balsamic vinegar
1/2 cup water
1 teaspoon sugar (optional or to taste)
salt and pepper
1 -2 tablespoon butter

Steps:

  • In a large skillet heat oil over medium-high heat, then saute the onions until lightly browned (about 5-6 minutes).
  • Add in balsamic vinegar and water; simmer stirring occasionally until the onions are tender (about 12-15 minutes).
  • Transfer the onions to a bowl using a slotted spoon (reserve the liquid).
  • Simmer the reserved liquid until thick and syrupy and reduced to about 1/2 cup.
  • Season the liquid with salt and pepper and a little sugar if desired.
  • Transfer the onions back to the skillet and coat with the liquid.
  • Add in the butter, stirring and heat slightly until the butter has melted.
  • Transfer to a bowl.
  • Delicious.

1/2 cup dry white wine
3 tablespoons butter
Coarse salt and ground pepper
1/4 cup balsamic vinegar

Steps:

  • In a large skillet, combine onions, wine, butter, and 1 cup water; season with salt and pepper. Bring to a boil, then reduce to a simmer and cook until onions are tender and liquid has evaporated, about 15 minutes (if onions are large, increase cooking time and add more water).
  • Add vinegar and cook until sauce thickens and onions are glazed, about 3 minutes.

¼ cup extra-virgin olive oil
2 teaspoons sugar
Salt and freshly ground black pepper to taste
1 cup balsamic vinegar
2 garlic cloves, minced
2 tablespoons chopped fresh parsley

Steps:

  • Adjust oven rack to low position and heat oven to 425 degrees.
  • Toss onions with oil, sugar, salt and pepper in medium bowl. Transfer to a cookie sheet with rim in a single layer. Roast onions until golden brown, about 30 minutes, stirring at 20 minutes and again at 25 minutes, adding garlic at this point.
  • Meanwhile, bring vinegar to boil; simmer over medium-high heat, about 10 minutes, until reduced to 1/3 cup - it should be a thin syrup. Put onions into a bowl, add reduced vinegar and parsley; toss to coat. Serve hot, warm or at room temperature.
