FILET MIGNON WITH BRANDY CREAM SAUCE

Steps:
- Melt 2 tablespoons of the butter in a small saucepan over medium heat. Add the shallots and cook until they're tender and translucent, about 5 minutes.
- Add the brandy and cook until the brandy has almost completely evaporated.
- Add the thyme, diluted Glace de Viande Gold®, and cream. Bring the mixture to a simmer, and cook until it coats a spoon, about 10-15 minutes.
- Remove the thyme sprig and season the sauce to taste with salt and pepper. Set aside, covered.
- Season the filets with salt and pepper. Heat a small skillet over medium-high heat. When the pan is hot, add the remaining tablespoon of the butter. As soon as it is melted, add the steaks and sauté them, turning once, until they're cooked to your liking, about 4 minutes per side for medium-rare. Transfer the steaks to warm plates.
- Pour the sauce into the skillet in which the steaks were cooked. Over low heat warm the sauce, stirring to scrape any browned bits from the pan into the sauce and incorporate any pan juices. To serve, ladle the sauce over the steaks and garnish them with chopped fresh thyme.

- DO NOT SUBSTITUTE INGREDIENTS!
- Heat the olive oil in a large skillet over medium heat. Season both sides of the steaks with the salt and pepper as desired. Add the steaks to the hot skillet and sear two minuntes on each side until lightly browned. Transfer to an oven proof baking dish and bake uncovered in a 400* preheated oven 10-13 minutes for medium-medium rare doneness.
- Cook mushrooms and green onions in the same skillet over medium heat until just tender. Remove from heat and add the brandy, return to heat and simmer for 4 minutes. Add the whipping cream and bring just to boiling. Boil gently about 8 minutes or until reduced to about 1 cup. Season with additional salt and pepper if desired, finish sauce by adding butter and stir till blended.
- To serve, place steaks on a warm platter and spoon the sauce over the meat.

- In a large skillet, saute mushrooms and shallot in butter until tender. Add garlic; cook 1 minute longer. Remove from the heat. - Heat skillet in medium high setting.
- Add olive oil and heat for about 30 seconds.
- Sprinkle steaks with salt and pepper on both sides.
- Add the steaks and the garlic to the skillet and pan sear each side for about 3-4 minutes.

- Place the peppercorns into a shallow bowl. Sprinkle the beef tenderloin filets with salt on both sides, and coat both sides with crushed peppercorns.
- Melt the butter with the olive oil over high heat in a heavy skillet (not nonstick) until the foam disappears from the butter. Gently place the steaks in the pan, and cook until they start to become firm and are reddish-pink and juicy in the center, about 3 1/2 minutes per side. - Pour heavy cream into a saucepan and bring to a boil over medium heat. Reduce heat and simmer until the cream has reduced by half, stirring occasionally, about an hour. Remove from heat and whisk in the Gorgonzola cheese and Parmesan cheese, salt, pepper, and nutmeg, until the cheese has melted.
