LOCAL FIREMAN CHICKEN BARBECUE SAUCE
I found this recipe off the internet a couple of years ago. I can't remember where except it was posted by a dorothy. Dorothy said "The history of this recipe she got the recipe from her mother-inlaw, and she told her that it is the one that the local fireman use at their chicken dinners. I hope you enjoy it as much as we do! It's really delicious. It contains eggs, so use immediately." My family loves this chicken barbecue sauce. We think it tastes real close to what the firemen do use. We marinate our chicken overnight then inject it the next day to get the sauce through the chicken which we think tastes better that way. In the picture I boiled my chicken and cooled it then marinated it overnight with no need to inject it and it was full of flavor.

- In blender, combine the eggs, oil, vinegar, salt, poultry seasoning and ground black pepper.
- Blend together and baste on the chicken when grilling, or marinate chicken in the sauce in the refrigerator 1-1/2 hours.
FIREMAN CHICKEN
Fireman Chicken, also known as Cornell Chicken BBQ, is a classic BBQ chicken marinade that originated in upstate New York, but is making its way through the states!

- In a medium mixing bowl, combine mayonnaise, vegetable oil, cider vinegar, fine sea salt, poultry seasoning, ground black pepper, garlic powder and paprika. Whisk until smooth.
- Pierce chicken with a fork several times to allow marinade to really sink in.
- Place chicken quarters into a large airtight plastic bag or other tight fitting container. Cover with marinade, reserving a 1/2 cup for basting. Refrigerate for a minimum of 2 hours, maximum of 24 hours.
- Heat grill to medium-high heat. You can use either gas or charcoal, however make sure you have a long burning charcoal if you go that direction. Place chicken on the grill on indirect heat.
- Use reserved marinade, basting the chicken throughout the cooking process. Cook over indirect heat for 35 minutes, turning and basting.
- At 35 minutes, transfer to direct heat to get a crispy and good char marks. At this time, stop basting. If you are using different cuts of chicken, please adjust accordingly.
- Remove from the grill and allow to rest for 5-10 minutes before serving. Discard any unused marinade.

FIREMAN'S CHICKEN
This is a recipe I got from a friend after she served it at a BBQ. Supposedly, this recipe is what is used at those big Fireman chicken BBQ's. The original recipes is supposed to cover 20 split chicken breasts so I cut it down and also I use whatever skin on chicken pieces I have on hand. It's delicious, enjoy!!

MAANGCHI'S CHEESE BULDAK (FIRE CHICKEN)
Cheese buldak is a Korean dish that is incredibly easy to prepare: a marinade of red-pepper paste and red-pepper flakes that becomes a fiery sauce for braised chicken, which is then served beneath a cloak of broiler-melted mozzarella. A child could do it, or an adult who often acts like one. Mine is an adaptation of a recipe that owes its deepest debt to Emily Kim, the Korean web star known as Maangchi, whose video for cheese buldak has been viewed on YouTube more than seven million times. (Omit the rice cakes if you can't find them easily!) Thanks to subtitling by her fans, the video can be read in 24 languages. There are thousands and thousands of comments below it, mostly positive. One reads, "Can you be my mom?"

- Combine the gochugaru, gochujang, brown sugar, garlic, ginger, soy sauce and black pepper in a medium bowl and mix well. Add the chicken and stir until it is well coated.
- If you're using the rice cakes, swirl the oil into a large, oven-safe skillet set over medium-high heat and wait for it to shimmer. Add the rice cakes and cook, turning the cakes often, until they are a little crisp, 3 to 4 minutes. Transfer the rice cakes to a small bowl and set aside. If you're not using rice cakes, simply swirl the oil into the pan and move along to the next step.
- Add the chicken mixture to the pan along with ¼ cup water. Cover and cook over medium-high heat, stirring occasionally, until the chicken is cooked through, 8 to 10 minutes, adding the rice cakes halfway through, if using. Meanwhile, heat the broiler in your oven.
- Remove the chicken from the heat. Cover the pan with the sliced mozzarella, then slide the pan under the broiler. Cook until the cheese has melted and browned in spots, about 2 minutes. Remove from the oven, and sprinkle with scallions. Serve immediately, with rice.

- Preheat oven to 350°. Cook spaghetti according to package directions for al dente; drain. , In a large bowl, combine soups, sour cream, milk, 2 tablespoons butter and seasonings. - Pound chicken Heat large frying pan and add olive oil and garlic. Add spinach salt pepper until wilted Place spinach and cheese on breasts and roll and secure with toothpicks. Mix milk with eggs and dip each piece in egg wash and then in bread crumbs. Pan fry until golden brown, Remove from skillet reserving drippings. Bake in 350 oven. Remove remaining oil from skillet. Melt butter. Sauté mushrooms. Add flour. Add chicken broth and white wine and lemon juice. Remove chicken from oven and pour sauce over top. Top with parsley and serve.

- Preheat oven to 350 degrees Rinse off chicken, pat dry Place the herbs inside the cavity, then " truss " the chicken
- Mix together the sea salt ( all 7 cups ) and red pepper flakes with the egg white until all the salt is moistened Pick a roasting pan or glass dish big enough to hold the chicken, line the pan with a double lining of foil big enough to enclose the chicken for cooking
- Spread a thick layer of sea salt on the bottom of the pan, and place chicken on the sea salt layer Cover the chicken with remaining sea salt and " shape " neatly around the entire chicken making sure the whole chicken is enclosed in the sea salt
- Bring the foil edges up and enclose the chicken and place in oven and cook for 1 1/2 hours Remove from oven and let " rest " for 10 minutes
- Carefully lift the foil package from the pan and open ( being careful of the steam from package ) Break away the " Sea Salt Crust " Brush away any remaining sea salt from the chicken Place on serving platter with the roasted heads of garlic
- As you eat, slip the " skins " off the garlic cloves and take a " bite " of chicken with the garlic Enjoy !!!
