Fish Pie en Croute image

A simple twist on two old favourites.

Number Of Ingredients 12

3 medium sized potatoes, peeled and sliced
30g butter, melted
6 sprigs fresh chives
salt and pepper
1tsp lemon zest
3 carrots, diced
50g frozen petit pois
50g frozen sweetcorn
6 sheets filo pastry
500g salmon fillet
olive oil
1 egg, beaten

Steps:

  • Preheat the oven to 220C/fan 200C/gas 7. Bring a pan of salted water to the boil and add the sliced potatoes to it, boil for 15 mins or until soft. Mash the potatoes (using a ricer if you have one) and add the butter, chives, salt and pepper and lemon zest, stir thoroughly. Blanch the carrots and add them in along with the petit pois and sweetcorn.
  • Lay out a sheet of filo pastry on a baking tray, place the salmon fillet in the centre and spoon the mash on top of it. Fold the sides of the pastry over the filling as far as they will go, lightly brush with oil and place another sheet over the top, folding it over as you go to create a wave like pattern. Repeat using all the pastry sheets.
  • Brush the top layer of pastry with the beaten egg and place the en croute in the oven for 20 minutes, turning around halfway through. Serve with green beans and parsley.

6 medium potatoes
½ cup butter, divided
1 medium white Spanish onion, chopped
1 ½ cups grated medium Cheddar cheese
1 ¼ cups light cream, or as needed
2 teaspoons Dijon mustard
1 teaspoon lemon juice
salt and ground black pepper to taste
1 ½ pounds white fish - skinned, boned, and cut into chunks
½ pound fresh shrimp, peeled and deveined
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Cut a small slit in each potato and place onto a baking sheet.
  • Bake in the preheated oven until potatoes are easily pierced with a fork, about 1 hour 10 minutes.
  • While the potatoes are baking, melt 4 tablespoons butter in a skillet over medium heat; stir in onion. Cook and stir until onion has softened and turned translucent, about 5 minutes. Mix in Cheddar cheese, cream, mustard, and lemon juice. Season with salt and pepper. Cook, stirring frequently, until sauce is warm and Cheddar has melted, 3 to 5 minutes. Remove from heat.
  • Place white fish and shrimp in a 3 1/2-quart oven-proof baking dish. Pour cheese sauce over the fish; stir until well combined.
  • Scoop the flesh out of the baked potatoes and place in a large bowl; discard the skins. Add 4 tablespoons butter and season with salt and pepper. Mash with a fork until butter has melted and potatoes are smooth. Spread the mashed potatoes evenly over the top of the fish.
  • Bake until sauce is bubbling and potato topping is golden brown, about 55 minutes.

1 package (17.3 ounces) frozen puff pastry, thawed
4 salmon fillets (6 ounces each)
1/2 pound fresh sea or bay scallops, finely chopped
1/3 cup heavy whipping cream
2 green onions, chopped
1 tablespoon minced fresh parsley
1/2 teaspoon minced fresh dill
1/4 teaspoon salt
1/8 teaspoon pepper
1 large egg white
1 large egg, beaten

Steps:

  • On a lightly floured surface, roll each pastry sheet into a 12x10-in. rectangle. Cut each sheet into four 6x5-in. rectangles. Place a salmon fillet in the center of four rectangles., In a small bowl, combine the scallops, cream, onions, parsley, dill, salt and pepper. In another bowl, beat egg white on medium speed until soft peaks form; fold into scallop mixture. Spoon about 1/2 cup over each salmon fillet. , Top each with a pastry rectangle and crimp to seal. With a small sharp knife, cut several slits in the top. Place in a greased 15x10x1-in. baking pan; brush with egg. Bake at 400° for 20-25 minutes or until a thermometer reads 160°.

A rendering of the classic British fish pie. This is a very tasty fish pie without the 'tweaks' of some newer versions; it was traditionally a relatively simple dish.

2 pounds potatoes, peeled and diced
2 cups milk
1 bay leaf
½ teaspoon ground nutmeg
1 (1 pound) fillet cod
½ cup butter, divided
1 medium leek, white part only, chopped
¼ cup all-purpose flour
4 ounces grated sharp Cheddar cheese, divided
1 cup peas
salt and ground black pepper to taste
2 hard-boiled eggs, quartered

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and let cool.
  • Combine milk, bay leaf, and nutmeg in a large pan and bring to a gentle simmer over medium-low heat. Add cod and poach until flaky, about 5 minutes. Use a slotted spoon to transfer cod onto a plate; reserve poaching liquid. Use a fork to flake fish into bite-sized pieces.
  • Mash potatoes in a large bowl. Mix in 3 tablespoons butter and 2 tablespoons poaching liquid until potatoes are fairly stiff and not too runny.
  • Heat 1 tablespoon butter in a skillet over medium heat and stir in leek. Cook and stir until softened and translucent, about 5 minutes. Set aside.
  • Melt remaining 1/4 cup butter over medium heat in a large, deep skillet until it just stops bubbling. Add flour and stir roux continuously for 1 minute. Slowly pour in remaining poaching liquid, stirring continuously, to make base of sauce. Add 1/2 the sharp Cheddar cheese and stir until melted. Fold in flaked cod, leek, and peas. Season with salt and pepper.
  • Place fish mixture in an oven-proof dish; press boiled eggs gently into the filling across the surface. Cover with a thick layer of mashed potatoes. Sprinkle with remaining Cheddar cheese.
  • Bake in the preheated oven until top is starting to brown, about 30 minutes. Serve immediately.

I like to have a good amount of fish in my diet, but my other half isn't much of a fish eater except for salmon, which he tolerates. I get sick and tired of having the same ol' salmon dish all the time though (grilled with lemon, herbs, chilli, etc.) and as we both love anything with pastry I thought I'd have a go at a salmon pastry pie one day. This is the result...

2 skinless boneless salmon fillets
1/2 white onion
10 button mushrooms (quartered)
100 g fresh spinach
1 pint bechamel sauce (-ish)
200 g puff pastry
lemon juice (to taste)
garlic pepper seasoning (to taste)

Steps:

  • Please note that I use two seperate 1 pint dishes for this recipe, but I can't see why it wouldn't work just as well in one big dish.
  • Pre-heat oven to 190c.
  • Steam the spinach leaves until they wilt and saute off the onion for about 5 minutes or until softened.
  • Make up the white sauce while the spinach and onion are cooking - I make it from scratch as it's so easy. I do it from memory but it's about 1tbsp butter (melted) mixed with the same amount of flour to make a roux, then 1/2pt or so of milk added gradually over the heat, and stir til it thickens nicely. Add the lemon and garlic pepper to the sauce towards the end if you're going to add it.
  • Layer the sauce with the onion, spinach, salmon and mushrooms in your dish(es).
  • If your pastry's not pre-rolled, roll it out and place it on top of the salmon, etc. I like to tuck it in down the sides because I'm too lazy to cut it to size. Either prick the surface with a fork or score out some lines along the top.
  • Brush the pastry with either egg or milk and bake in the oven at 190c for approx 30 minutes.
  • NB. My oven is a bit nuts, so you may well need to adjust the time/setting.
