By way of Melissa Clark in the Times, a very simple and delicious Cuban style flank steak. It cooks so quickly you can even use a stove-top grill and your kitchen won't get overheated. Marinate it briefly at room temp or longer in the fridge.

1/4 cup orange juice (from 1 large orange)
2 tablespoons olive oil
2 large garlic cloves
1 tablespoon fresh oregano leaves, packed
1 teaspoon cumin
1 teaspoon kosher salt
1/2 teaspoon orange zest, grated
1/2 teaspoon black pepper, freshly ground
1 1/2 lbs flank steaks

Steps:

  • In a blender, combine orange juice, olive oil, garlic cloves, oregano, cumin, salt, orange zest and pepper; blend until smooth. Pour marinade over flank steak and let sit, uncovered, at room temperature while you light or preheat grill, about 30 minuts. Or you can cover and refrigerate steak for several hours or overnight.
  • When ready to cook, brush off any excess marinade solids from steak and grill over high heat, turning once, until done to taste, about 3 minutes a side for rare.
  • Let meat rest a few minutes; slice in thin slices across the grain to serve.

2 teaspoons ancho chili peppers, ground
1 teaspoon dried oregano

1 1/4 lbs flank steaks, trimmed of fat

Steps:

  • Whisk garlic, vinegar, oil, ground chili, oregano, cumin, and salt in a small bowl.
  • Place steak in shallow bowl or plastic bag and pour marinade over it, turning to coat both sides.
  • Cover and refrigerate for at least 1 hour, turning once, or can be marinated overnight.
  • Oil the grill, preheat grill to high heat,Grill the steak to desired doneness, 5 to 6 minutes per side for medium.

1/4 cup honey
1 tablespoon lime juice
1 tablespoon soy sauce
1 teaspoon minced garlic
1/2 teaspoon coarsely ground pepper
1 tablespoon canola oil
1 teaspoon minced fresh gingerroot
1 beef flank steak (1 pound)

Steps:

  • In a small bowl, combine first six ingredients. Reserve 1/2 cup mixture for serving. Add oil and ginger to remaining orange sauce; pour into a shallow dish. Add flank steak and turn to coat. Cover and refrigerate at least 1 hour or overnight. Cover and refrigerate reserved marinade., Drain and discard marinade from steak. Place steak on a broiler pan. Broil 4 in. from heat 7-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). , Meanwhile, in a small saucepan, warm reserved orange sauce until heated through. 4-1/2 teaspoons soy sauce
2 garlic cloves, minced
1 teaspoon grated orange zest

1 beef flank steak (1 pound)
1 medium orange, sliced

Steps:

  • In a large bowl, combine the first seven ingredients. Add the beef; turn to coat. Cover and refrigerate for 8 hours or overnight. , Broil steak 4-6 in. from the heat or grill, covered, over medium-hot heat for 4-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium well, 145°). A wonderful flank steak on the grill recipe I invented that friends just love! My girls think this is great, and it doesn't take long to grill. This also works great when sliced and used for fajitas.

½ cup vegetable oil
⅓ cup soy sauce
¼ cup red wine vinegar
2 tablespoons fresh lemon juice
1 ½ tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
2 cloves garlic, minced
½ teaspoon ground black pepper
1 ½ pounds flank steak

Steps:

  • In a medium bowl, mix the oil, soy sauce, vinegar, lemon juice, Worcestershire sauce, mustard, garlic, and ground black pepper. Place meat in a shallow glass dish. Pour marinade over the steak, turning meat to coat thoroughly. Cover, and refrigerate for 6 hours.
  • Preheat grill for medium-high heat.
  • Oil the grill grate. Place steaks on the grill, and discard the marinade. Grill meat for 5 minutes per side, or to desired doneness.
