HERB-STUFFED GRILLED FLANK STEAK

Marinated, stuffed and grilled, this steak is a special dinner for six.

3 tablespoons dry red wine
3 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon beef-flavor instant bouillon
1 large clove garlic, minced
1 beef flank steak (2 lb)
3 tablespoons olive oil
1/4 cup finely chopped onion (1/2 medium)
3 cloves garlic, thinly sliced
2 tablespoons chopped fresh parsley
2 tablespoons Progresso™ plain bread crumbs
1 teaspoon grated lemon peel

Steps:

  • In large, shallow nonmetal dish or resealable food-storage plastic bag, mix all marinade ingredients. Make pocket in side of flank steak by cutting lengthwise almost but not completely through opposite side. Add steak to marinade; turn to coat. Cover dish or seal bag; refrigerate at least 4 hours or overnight to marinate.
  • In 8-inch skillet, heat oil over medium heat. Add onion; cook 2 minutes, stirring occasionally, until tender. Stir in garlic and parsley; cook and stir 1 minute. Add bread crumbs and lemon peel; cook and stir 1 minute. Remove from heat.
  • Heat grill. Remove steak from marinade; discard marinade. Fill pocket in steak with stuffing. Secure opening with toothpicks.
  • Place steak on gas grill over medium heat; cover grill. Cook 12 to 20 minutes, turning once, until steak is desired doneness. Cut steak across grain into 1/2-inch-thick slices.

1/2 to 3/4 teaspoon poultry seasoning

1 cup reduced-sodium beef broth

Steps:

  • Preheat oven to 350°. In a small nonstick skillet, saute onion in butter until tender. In a large bowl, combine the bread crumbs, poultry seasoning, salt, 1/8 teaspoon pepper and onion., Flatten steak to 1/2-in. thickness; spread with stuffing to within 1 in. of edges. Roll up jelly-roll style, starting with a long side; tie with kitchen string. Rub with remaining pepper. , Place in an 11x7-in. baking dish coated with cooking spray. This is a delicious flank steak. The stuffing makes it much more filling, but there's never any left over! Can also be cooked in the microwave. Just cover and cook at medium setting (50 per cent) in a microwave-safe dish for 30 minutes, rotating dish halfway through cooking. Serve with sauce from the pan.

1 cup boiling water
2 tablespoons butter or margarine
1 ½ pounds flank steak, pounded thin for easy rolling
2 green onions, chopped
1 red bell pepper, chopped
1 (10.5 ounce) can mushroom gravy
¼ cup red wine
1 clove garlic, minced
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine the stuffing mix, water and butter or margarine. Mix well and let stand for 5 minutes. Spoon the stuffing onto the steak, leaving a 1 inch border. Add the green onions and the red bell pepper.
  • Roll from the long edge of the steak and secure with wooden toothpicks. Place steak seam side down in a 9x13 inch baking dish.
  • In a separate small bowl, combine the gravy, wine OR apple juice, garlic and cheese. Mix well and pour over the steak.

  • Score steak on both sides; place in large resealable food-storage plastic bag or ungreased 13x9-inch (3-quart) glass baking dish.
  • In medium bowl, mix remaining ingredients; spoon over steak. Seal bag or cover baking dish with plastic wrap. Let stand at room temperature 15 minutes.

1 package (8 ounces) crushed corn bread stuffing
1 cup chopped onion
1 cup chopped celery
1/4 cup minced fresh parsley
1/2 cup egg substitute
1-1/4 cups beef broth
1/3 cup butter, melted
1/2 teaspoon seasoned salt

1 beef flank steak (1-1/2 pounds)

Steps:

  • In a large bowl, combine the stuffing, onion, celery and parsley. In a small bowl, beat the egg substitute; stir in broth and butter. Pour over stuffing mixture. Sprinkle with seasoned salt and pepper; stir well., Pound steak to 1/2-in. thickness. Spread 1-1/2 cups stuffing mixture over steak. Roll up, starting with a short side; tie with string. ½ large onion, chopped
1 clove garlic
½ cup chopped mushrooms
¼ cup pistachio nuts, coarsely chopped
¼ cup chopped parsley
11/2 cups soft bread cubes
¾ tsp poultry seasoning (or a mixture of oregano and basil)
½ tsp salt
Freshly ground pepper, to taste
1 egg, slightly beaten
½ cup water, dry table wine or bouillon
Kitchen string for tying roast.

Steps:

  • Preheat oven to 350 degrees. 1. Pound the steak or score it lightly on both sides. 2. In a skillet, heat the butter, add the onion and garlic and cook until lightly browned. Add the mushrooms and cook 3 minutes. Add the nuts, parsley, bread cubes, poultry seasoning, salt, pepper and egg and mix. 3. Spread the mixture on the steak. Roll lengthwise, as for jelly roll, and tie with string at 2 inch intervals. 4. Brown the meat on both sides in a little fat in a skillet or heavy Dutch oven. Add the liquid, cover and bake two hours. To serve, cut into one-inch slices and serve with the pan drippings.

1 to 11/2 pounds flank steak
1/2 cup chopped scallions, light green and white parts only (about 5 scallions)
1/4 cup fresh chopped chives (from 1 bunch)
1/4 cup extra-virgin olive oil plus more for cooking the steak
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh flat-leaf parsley
1 tablespoon lemon zest and 2 tablespoons lemon juice (from 1 to 2 lemons)
1 tablespoon lime zest and 1 tablespoon lime juice (from 1 to 2 limes)
2 teaspoons whole grain mustard
1/4 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper

Steps:

  • Remove the flank steak from the refrigerator 30 minutes prior to cooking to bring it to room temperature.
  • In a medium bowl, add the scallions, chives, olive oil, basil, parsley, lemon zest, lemon juice, lime zest, lime juice, mustard, red pepper flakes and 1/2 teaspoon kosher salt. Stir to combine and set aside.
  • Heat a grill pan over medium-high heat. Drizzle a small amount of olive oil onto one side of the steak and use a silicone brush to spread it all over the steak. Sprinkle with a nice pinch of kosher salt and pepper. Transfer the meat to the grill pan, seasoning side down. Drizzle the other side of the steak with a small amount of olive oil and once again brush it to cover and sprinkle with salt and pepper. For medium-rare, cook the steak until the internal temperature is 135 degrees F, 4 to 5 minutes per side. Remove the steak to a plate and let it rest for 10 minutes before slicing.
  • Slice the steak against the grain. Add the slices to a platter and spoon on the lemon-lime herb sauce. Serve extra sauce on the side.

1 (1 1/2-to 2-pound) flank steak
Salt and pepper
1 cup grated queso asadero
1/2 cup chopped fresh oregano
4 cloves garlic, minced

Steps:

  • Start the coals or heat a gas grill for medium-high direct cooking. Make sure the grates are clean. Cut at least ten 8-inch pieces of kitchen twine.
  • With a very sharp knife, slice the steak lengthwise into two pieces. With a meat mallet, rolling pin, or the bottom of a cast-iron skillet, pound the two thin steaks evenly to no more than 1/2-inch thick. Pat them dry with paper towels and sprinkle with salt and pepper on both sides.
  • Combine the cheese, oregano, and garlic in a small bowl. Divide the mixture between the steaks and spread it out almost to the edges. Roll the steaks up so that the grain of the meat runs the length of the roll, so you'll be slicing them across the grain. Tie the steaks closed with the twine every 2 inches or so. (You can prepare the recipe to this point up to several hours in advance and refrigerate.)
  • Put the stuffed steaks on the grill directly over the fire. Close the lid and cook, turning the rolls every 2 to 3 minutes for even browning, until 5 to 10°F shy of the desired doneness; start checking them with an instant-read thermometer after 10 minutes. Depending on the thickness of the rolls, they should take 15 to 20 minutes total for medium-rare.
  • Transfer to a cutting board and let rest 5 to 10 minutes, checking the internal temperature. (Or nick with a small knife and peek inside.) Cut the rolls into 1-inch slices, transfer them spiral side up to a platter, pour over any accumulated juices, and serve.
  • Variations
  • Stuffed Flank Steak with Mozzarella and Basil: Substitute shredded mozzarella for the queso asadero and omit the oregano. Top the cheese with a layer of fresh basil leaves before rolling; you'll need 1 cup or more.
  • Stuffed Flank Steak with Prosciutto and Rosemary: Substitute Parmesan cheese for the queso asadero and 2 tablespoons chopped rosemary for the oregano. In Step 3, layer 4 ounces thinly sliced prosciutto over the cheese before rolling.
  • Stuffed Flank Steak with Peppery Greens and Goat Cheese: Replace the cheese, oregano, and garlic with 8 ounces goat cheese, 1 tablespoon minced garlic, the grated zest of 1 lemon, 1 tablespoon fresh lemon juice (or more to taste), and lots of black pepper, mashed together in a small bowl. Spread the mixture over one side of each of the steaks. Layer 2 cups roughly chopped watercress or arugula over the top before rolling.

1 1/2 cups diced mixed mushrooms (shiitake, cremini and oyster)
1/2 onion, finely diced
1 celery rib, finely diced
2 cloves garlic, minced
1 tablespoon mixed herbs (rosemary, thyme and parsley)
1 bunch arugula, cleaned
2 tablespoons pine nuts
1 cup brioche bread, ½ inch cubed (or any egg bread)
1 egg
1/4 cup white wine
coarse salt
cracked black pepper, to taste
1 lb skirt steak
1 1/2 tablespoons olive oil
1 -2 stalk fennel, chopped
1 carrot, chopped
2 sprigs thyme
1 bay leaf
1 tablespoon whole black peppercorn
1 head of garlic, halved
1/4 cup red wine
3/4 cup beef broth
coarse salt
cracked black pepper, to taste
1/4 cup beef broth
1 tablespoon red wine
1 teaspoon grainy mustard
2 tablespoons butter

Steps:

  • STUFFING: Heat the olive oil in a medium sauté pan over high heat.
  • Add the onion, celery, garlic and mushrooms.
  • Sauté vegetables until soft and liquid from the mushrooms has evaporated, about 6 minutes.
  • Add the mixed herbs, arugula, pine nuts and brioche cubes.
  • Cook for an additional 3 minutes.
  • Add the white wine and continue to cook until the liquid has evaporated.
  • Remove from heat and cool completely.
  • Fold in the egg.
  • BRAISE: Preheat oven to 375 degrees F.
  • Lay out the skirt steak, vertically, and season with salt and pepper.
  • Add the cooled stuffing to the bottom third of the steak and roll up, width-wise.
  • Secure with butcher’s twine.
  • Heat a medium sauté pan over high heat and add the olive oil.
  • Brown the stuffed skirt steak on all sides.
  • Transfer steak to an 8 x 8-inch roasting pan.
  • Add the fennel, carrot, thyme, bay leaf, black peppercorns and garlic to the sauté pan and cook for 2 minutes.
  • Deglaze with the red wine and beef broth.
  • Scrape the brown bits off the bottom of the pan with a wooden spoon and transfer entire contents of the pan to the roasting pan.
  • Cover with aluminum foil and place in preheated oven.
  • Braise until meat is tender, about 1½ hours.
  • Remove skirt steak from roasting pan and place on cutting board.
  • Cover with aluminum foil and let rest for 10 minutes.
  • SAUCE: Strain the pan juices from the roasting pan into a small saucepan.
  • Discard the solids.
  • Add the beef broth and red wine to the saucepan.
  • Bring to a boil.
  • Whisk in the grainy mustard and butter.
  • Slice the skirt steak into ½-inch slices.
  • Spoon the sauce over the steak and serve immediately.
