375g pack puff pastry, preferably all-butter
5 large eating apples - Cox's, russets or Elstar
juice of 1 lemon
25g butter, cut into small pieces
3 tsp vanilla sugar or 1 tsp vanilla extract
1 tbsp caster sugar
3 rounded tbsp apricot conserve

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Roll out the pastry and trim to a round about 35cm across. Transfer to a baking sheet lined with parchment paper.
  • Peel, core and thinly slice the apples and toss in the lemon juice. Spread over the pastry to within 2cm of the edges. Curl up the edges slightly to stop the juices running off.
  • Dot the top with the butter and sprinkle with vanilla and caster sugar. Bake for 15-20 mins until the apples are tender and the pastry crisp.
  • Warm the conserve and brush over the apples and pastry edge. Serve hot with vanilla ice cream or crème fraîche.

5 large apples
1 lemon, juice of
2 teaspoons vanilla extract
25 g butter, cut into small pieces
1 tablespoon caster sugar
3 tablespoons apricot jam or 3 tablespoons preserves

Steps:

  • Preheat oven to 220C/425°F.
  • Roll out the pastry and trim to a round about 35cm (14 inches) across. Transfer to a baking sheet lined with parchment paper.
  • Peel, core and thinly slice the apples, then toss in the lemon juice and vanilla.
  • Spread over the pastry to within 2cm (3/4 inch) of the edge. Curl up the edges slightly to stop the juices running off.
  • Dot with butter and sprinkle with caster sugar.
  • Bake 15-20 minutes until the apples are tender and the pastry crisp.
  • Warm the jam and brush over the apples and pastry edge.
  • Serve warm with vanilla ice cream or creme fraiche.

I replace milk, cream, and water with butter so that once they're baked, they spread out and take on a shape of their own. The unsweetened cream on top, paired with the sweetness of the tart, creates a perfect balance for the palate.

3 cups all-purpose flour, plus more for dusting
1/4 cup sugar
1 1/2 cups unsalted butter, cold and cut into small pieces, 3 sticks
2 tablespoons pure vanilla extract
4 Granny Smith apples, peeled, cored, and cut into 1/4-inch dice
1 vanilla bean
6 tablespoons unsalted butter, ¾ stick
2 tablespoons granulated sugar
1/4 cup packed light brown sugar, plus 2 tablespoons
1 1/2 teaspoons cinnamon
1 tablespoon cornstarch
1/2 cup crème fraîche, or sour cream
1/2 cup unsweetened applesauce, store-bought is fine
1/2 cup all-purpose flour
1/2 cup sugar
1/2 cup unsalted butter, 1 stick, cold and cubed
1 1/4 cups heavy cream, chilled
1/4 cup crème fraîche, plus 1 tablespoon

Steps:

  • Dough: Combine the flour, sugar, and butter in the bowl of a standing mixer fitted with a paddle attachment and mix on low speed until the butter and dry ingredients form a coarse cornmeal consistency, about 2 minutes. Add the vanilla and mix on medium speed until the dough is smooth, 2-3 minutes. Dust a flat work surface with flour and turn the dough out onto it. Knead the dough for a few minutes until it comes together. Bring the dough into a ball, wrap it tightly with plastic wrap, and chill for at least 1 hour and up to 3 days. (The dough can also be frozen for 2 months; when you're ready to use it, defrost overnight in the refrigerator.)
  • Remove the dough from the refrigerator. Dust a flat work surface with flour, cut the dough into chunks, and pound with a rolling pin on the countertop to soften until it is the texture of Play-Doh. Then knead it to make it pliable. Do not overwork the dough. Lightly dust the rolling pin with flour and roll the dough out to an even ¼-inch thickness. With a 5-inch cookie cutter, cut circles from the dough as close together as possible. Carefully place the circles of dough on a lined baking sheet, flouring each one to prevent sticking, and chill. (You can only re-roll the dough once. Discard the remaining scraps.)
  • Apple filling: Put apples in a large mixing bowl. Make the vanilla brown butter: Split and scrape the vanilla pod and combine both pod and its seeds with the butter in a small saucepan over high heat. Swirl as the butter becomes foamy. Pour the browned butter over the apples and stir to coat. Add the granulated sugar, brown sugar, and cinnamon, and stir to combine. Set aside for 30 minutes to bring out the juices in the apples. Stir in the cornstarch, then the crème fraîche.
  • Streusel topping: Combine flour and sugar in a medium bowl and toss in the butter. Using your fingertips, break up the butter in the flour to make pea-size lumps.
  • Preheat oven to 375 degrees F. To assemble the tarts, warm the discs of dough between your fingertips so that they are pliable enough to fold. Spoon 1 tablespoon of applesauce and ¼ cup apple filling into the center of each disc. Pleat the dough to seal, and transfer each tart onto a lined baking sheet, spaced about 2 inches apart. Sprinkle 2 tablespoons of streusel topping onto each tart. Bake the tarts until golden-brown, rotating the baking sheets halfway through, about 30 minutes. Let them cool while you make the whipped cream.
  • Whipped cream: Pour cream into the chilled bowl of an electric mixer fitted with a whisk attachment, and mix on medium until soft peaks form. Add the crème fraîche and beat on medium until mixture is thick and mousse-like. Add more crème fraîche to make it softer and shinier, if you like. Dollop onto the apple tarts, and serve.

1/4 cup sour cream, chilled
1 large egg yolk
1 1/4 cups plus 2 tablespoons all-purpose flour
1/4 teaspoon fine salt
8 tablespoons (1 stick) unsalted butter, cut into pieces, chilled
1/2 cup sugar
Apples
1 1/2 cups apple juice
Juice of 1/2 lemon
1/4 cup granulated sugar
1 tablespoon light brown sugar
1/4 teaspoon ground cinnamon
1 to 2 Granny Smith apples, peeled, cored, and halved
Cinnamon Crème Anglaise (recipe follows), for serving
CINNAMON CRÈME ANGLAISE
1 cup whole milk
1 cup heavy cream
1/2 teaspoon ground cinnamon
1 cinnamon stick
1/2 vanilla bean, split and seeds scraped
6 large egg yolks
1/2 cup sugar
(makes about 2 cups)

Steps:

  • To make the tart dough, whisk together the sour cream and egg yolk in a small bowl.
  • Put the flour and salt in a food processor and pulse a few times to combine. Scatter the butter over the top of the flour and pulse 6 to 8 times, until the butter resembles coarse crumbs. Add the sour cream mixture and pulse until the dough just comes together. Scrape the dough onto a flat surface, flatten into a disk, wrap in plastic wrap, and refrigerate until the dough is cold, at least 1 hour and up to 2 weeks.
  • Spread the sugar over a flat surface. Place the disk of dough on the sugar and turn to coat in the sugar. Roll the dough out to a 14-inch circle that's 1/8 inch thick, flipping the dough once in the sugar during the rolling. Using a 12-inch plate as your guide, cut out the dough into a 12-inch round. Transfer the dough to a baking sheet lined with parchment paper and refrigerate for at least 20 minutes.
  • Preheat the oven to 375°F.
  • To prepare the apples, combine the apple juice, lemon juice, sugars, and cinnamon in a small saucepan and cook, whisking occasionally, over high heat until slightly thickened and reduced to 1/2 cup, about 5 minutes. Cover the glaze and keep warm.
  • Slice the apple halves crosswise into paper-thin (about 1/16-inch) slices. Arrange the slices, overlapping them slightly, on the pastry round. Brush the tops of the apples with some of the warm glaze. Transfer the baking sheet to the oven and bake the tart until the apples are soft and the pastry is golden brown, 35 to 40 minutes.
  • Remove from the oven and immediately brush the tops of the apples with more of the warm apple glaze. Using a large metal spatula, carefully transfer the tart to a wire rack and let cool for 10 minutes before serving.
  • Ladle some of the cinnamon crème anglaise onto large dinner plates and top with a slice of the apple tart.
  • CINNAMON CRÈME ANGLAISE
  • Prepare an ice bath by placing a medium bowl inside a larger bowl filled half full with ice water.
  • Put the milk, cream, cinnamon, cinnamon stick, and vanilla bean and seeds in a medium saucepan and bring to a simmer over low heat. Remove from the heat.
  • Whisk together the egg yolks and sugar in a medium bowl. Gradually whisk in the hot milk mixture. Remove the cinnamon stick and vanilla bean, and return the entire mixture to the saucepan. Cook, stirring constantly with a wooden spoon, over medium-low heat until the custard thickens and leaves a path on the back of the spoon when you draw your finger across, about 2 minutes.
  • Strain the custard into the bowl set in the ice bath and stir until chilled. Cover and refrigerate until cold, 3 hours or overnight.

APPLE-PECAN TART

1 1/3 cups flour, more for rolling
1 tablespoon granulated sugar
1/2 teaspoon salt
10 tablespoons cold unsalted butter
1 large egg yolk plus 3 large eggs
2 medium tart apples, peeled, cored and sliced
2 tablespoons light brown sugar
1 1/2 cups coarsely chopped pecans
1 cup maple syrup
1 teaspoon vanilla extract
1 cup heavy cream, whipped, for serving

Steps:

  • Heat oven to 400 degrees. Place flour, sugar and salt in food processor. Pulse to blend. Dice 8 tablespoons butter, place in food processor and give it about 20 quick pulses, until butter is in tiny lumps. Beat egg yolk with 4 tablespoons ice water. Open cover of machine and sprinkle in egg mixture. Pulse briefly. Ingredients should start to clump together to form a dough; do not allow a ball of dough to form. If dough is too dry to hold together, add another teaspoon or two of water and pulse again.
  • Transfer dough mixture to lightly floured work surface and gather together to form into a flat, smooth disk. Roll to a circle about 13 inches in diameter and fit into a 10-inch fluted tart pan. Line with foil, weight with pastry weights and bake 10 minutes, until dry-looking. Remove foil and weights, prick bottom of pastry in a few places and bake until golden, about 20 minutes more. Remove from oven.
  • While pastry is baking melt remaining 2 tablespoons butter in a skillet. Add apples and sauté over medium-high heat until lightly browned. Stir in brown sugar, then add pecans. Sauté another minute. Remove from heat and spread in baked pastry. Beat eggs, stir in syrup and vanilla and pour over apples and pecans.
  • Bake 15 minutes. Reduce heat to 350 degrees and bake until set and browned on top, about 25 minutes more.

Steps:

1.5 kg apple, preferably Honeycrisp or Granny Smith
3 tablespoons water
½ cup sugar
3 tablespoons unsalted butter

Steps:

  • Using a 9-inch (23 cm) flat-sided cake pan as a template, cut a circle out from the puff pastry. Using a fork, poke holes all over to provide ventilation. Set aside.
  • Peel and quarter the apples, using a spoon or melon baller to remove the cores.
  • Preheat oven to 375°F (190°C).
  • In a large saucepan over medium heat, distribute the water and sugar evenly and cook until light amber in color, stirring to help melt any lumps, 5-7 minutes. Add the butter, stirring constantly until the color is a creamy light brown. Add the apples, stirring until they are coated in a thick layer of caramel.
  • Cook for about 15-20 minutes, turning the apples constantly so that they bathe in the caramel. Remove from the heat when the caramel has reduced and little remains in the bottom of the pan. Be careful not to burn the caramel, tasting it from time to time to ensure it does not taste bitter.

Pinch kosher salt
1/2 cup unsalted butter, chilled and thinly sliced
3 to 4 tablespoons ice water
7 Golden Delicious or Cortland apples
1/3 cup sugar
1/2 cup unsalted butter, thinly sliced
1/4 cup apricot preserves
1 tablespoon dark rum

Steps:

  • To make the crust, in a medium bowl, combine the flour, sugar and salt. Add the butter and cut in with a pastry blender or 2 forks until the mixture resembles small pebbles. Stir in just enough of the ice water so the dough forms a rough ball.
  • Place the dough onto a lightly floured surface and push the dough with the heels of your hands into a 6-by-4-inch rectangle. Fold up the bottom 1/3 of the rectangle, then fold the top 1/3 down, as if folding a letter. Turn dough 90 degrees and repeat, rolling out the dough to a 6-by-4-inch rectangle and refolding. Cover with plastic wrap and chill for 1 hour.
  • Remove the dough from the refrigerator and set aside for 10 minutes to soften slightly, so it is easy to handle. Roll out the dough into a 13-inch circle. Fit the dough into a 10- 1/2-inch tart pan with a removable bottom. Press the dough gently into place, prick the bottom with a fork and cover with plastic wrap. Chill for 1 hour.
  • Preheat the oven to 425 degrees. To make the filling and glaze, take the pastry from the refrigerator. Core, peel and halve the apples. With the flat side of the apple down, cut crosswise into thin slices. Fan them concentrically, reserving about 6 slices for the center of the tart. Sprinkle the apples with sugar and dot with butter. Bake until the crust is brown and the apples lightly caramelized, about 1 hour.
  • Remove the tart from the oven and carefully remove the sides of the pan. Slide the tart onto a rack to cool to room temperature.

6 medium sweet-tart apples (such as Pink Lady, Honeycrisp, or Winesap)
1 lemon, halved
1/2 cup pure maple syrup
1/4 cup brandy, preferably apple
2 tsp. vanilla extract
Pinch of kosher salt
2 Tbsp. raw sugar, divided
1 Tbsp. all-purpose flour, plus more for dusting
1 large egg, beaten to blend
Shortcut Puff Pastry
Vanilla ice cream (for serving)

Steps:

  • Place a rack in middle of oven; preheat to 350°F. Toast almonds on a rimmed baking sheet, tossing once, until golden brown, 6-8 minutes. Let cool.
  • Reduce oven temperature to 275°F. Peel apples; cut in half. Using a melon baller or teaspoon, scoop out cores. Rub cut sides of lemon all over apples, then place apples cut side down in a 13x9" baking dish. Squeeze lemon halves over and add maple syrup, brandy, vanilla, and salt. Cover tightly with foil and bake until juices are bubbling and apples are tender but still intact (poke through foil with a tester or toothpick to check), 60-80 minutes. Uncover and let cool. Increase oven temperature to 400°F.
  • Meanwhile, toss almonds, 1 Tbsp. raw sugar, and 1 Tbsp. flour in a small bowl; set aside. Let puff pastry sit at room temperature about 4 minutes to soften slightly. Roll out on a lightly floured sheet of parchment paper, dusting with more flour as needed to prevent sticking and rotating once or twice, to a 16x12" rectangle. Slide parchment paper with pastry onto a large rimmed baking sheet. Trim around sides to straighten and tidy edges, then cut off a 1" strip from each side (you'll have 4 strips). Brush around edge of rectangle with egg, then place strips on top, aligning with edges. Trim any overhang from corners.
